WHISKEY COLLINS
This riff on a Tom Collins calls for Japanese whisky, which is known for being exceptionally balanced and smooth. Your favorite Scotch whisky is a good substitute.

Steps:
- Combine sugar and 1/3 cup water in a jar. Cover; shake until sugar dissolves. Combine syrup, whisky, lemon juice, and club soda in a large pitcher. Add 8 cups ice; stir until ice begins to melt, about 1 minute. Serve over ice, garnished with lemon twists, if desired.
- DO AHEAD: Syrup can be made 3 months ahead; cover and chill.

- Put the lemon juice and sugar in a collins glass and stir to dissolve the sugar. Add the whiskey and ice cubes and fill with club soda. Stir quickly. Garnish the drink with fruit slices and cherry.
