6 tablespoons sultanas
8 tablespoons butter, plus additional
butter, for greasing
1 lb white bread, sliced
1 cup milk
1 cup cream
1 vanilla bean
3/4 cup sugar
3 eggs, beaten
1 cup milk, cold
3 tablespoons sugar
2 egg yolks
1/4 cup whiskey

Steps:

  • Preheat oven to 350°F.
  • Soak sultanas in hot water for 10 minutes, then drain.
  • Butter the bread.
  • Remove crusts and cut into triangles.
  • Arrange in a greased deep casserole dish along with raisins.
  • In a saucepan, bring the milk, cream, vanilla bean and sugar to just below a boil.
  • Remove the vanilla bean.
  • Add milk mixture to the eggs.
  • Through a strainer, pour the egg-and-milk mixture onto the bread.
  • Leave to soak.
  • Cover with aluminum foil and cook in a water bath in preheated oven, approximately 55 minutes. Remove foil and bake 5 more minutes to allow top to crisp.
  • To make the whiskey sauce: Boil the milk, then remove from heat.
  • In a separate saucepan, mix the sugar and egg yolks.
  • Add egg mixture to milk and return to heat.
  • Cook gently over low heat, stirring constantly, until sauce thickens slightly.
  • Stir in whiskey.
  • Serve warm.

Pie Crust
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup butter (1 stick)
3 to 4 tablespoons cold water
Pumpkin Filling
1 cup cooked pumpkin purée
1/4 cup firmly packed light brown sugar
2 tablespoons sugar
1 large egg, beaten until frothy
1 tablespoon heavy cream
1 tablespoon unsalted butter, softened
1 tablespoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
Pinch of ground allspice
Pinch of ground nutmeg
Pecan Syrup
3/4 cup sugar
3/4 cup dark corn syrup
2 small eggs
1 1/2 tablespoons unsalted butter, melted
2 teaspoons vanilla extract
1 pinch salt
1 pinch ground cinnamon
3/4 cup pecan pieces
Whiskey Butter Sauce
4 tablespoons unsalted butter (1/2 stick)
1/3 cup sugar
1 large egg
1/2 tablespoon very hot water
1/4 cup heavy cream
1/4 cup bourbon whiskey

Steps:

  • Pie Crust
  • Combine the flour and salt in a mixing bowl. Add the butter and incorporate with your fingertips until the mixture resembles very coarse cornmeal. Sprinkle the water over the flour mixture in tablespoon increments, stirring continuously with a fork. Form the dough into a ball and chill in the refrigerator for 1 hour.
  • Pumpkin Filling
  • Combine all the ingredients thoroughly in a medium bowl; set aside.
  • Pecan Syrup

  • Assembly
  • Preheat the oven to 325°F. Grease an 8-inch springform cake pan.
  • Roll out the dough on a lightly floured work surface to 3/16 inch. Very lightly flour the top of the dough and fold it into quarters. Carefully place the dough in the greased cake pan. Press firmly in place and trim the edges. Chill for 15 minutes.
  • Spoon the Pumpkin Filling into the pan, spreading evenly to distribute. Gently pour the Pecan Syrup on top. Bake until a knife inserted in the center comes out clean, about 1 hour and 45 minutes. Cool and serve with Whiskey Butter Sauce.

  • Melt the butter in the top of a double boiler set over gently simmering water.
  • Beat the sugar and egg in a small bowl until blended. Stir the egg mixture into the butter. Add the hot water and stir until the mixture coats the back of a spoon, about 7 minutes. Remove from the double boiler and let cool to room temperature. Stir in the cream and whiskey.

This is easy, fast, and melts in your mouth. Be sure to use the freshest salmon you can find. Other blackening seasonings will work, but Emeril's really does give the best flavor. Also don't substitute Scotch or Irish whiskey; while they're great to drink, they don't give the right flavor in this dish. Lastly, and most importantly, be VERY careful when adding the alcohol to the frying pan--you don't want singed eyelashes or worse!

12 -16 ounces salmon fillets, 2 total
Emeril's Original Essence, original seasoning mix
1 1/2 tablespoons olive oil
1 1/2 tablespoons butter
1/2 cup whiskey or 1/2 cup brandy (I use Windsor.)
1/4 cup finely minced shallot
6 tablespoons butter

Steps:

  • Generously sprinkle both sides of each salmon fillet with the seasoning mix (you want a good coating).
  • Rub into the fillet and add more if you end up with bare spots.
  • Set aside.
  • With temperature on high, heat the olive oil in a saute pan large enough to hold both fillets.
  • When it starts to smoke and shimmer, add the butter and swirl just until melted.
  • Add the fillets and cook over high heat, 1-2 minutes per side until blackened, but not burnt (watch carefully).
  • Remove from the heat; standing back from the pan, add the whiskey.
  • Cover the saute pan, return to the burner over med-low, and cook for another 2-4 minutes, depending on the thickness.
  • When the fish is done through, remove to a plate and keep warm.
  • Bring the remaining whiskey in the pan to a simmer, add the minced shallot, and whisk in the remaining butter, one tablespoon at a time.
  • Let each addition melt before adding another.
  • Whisk constantly.
  • Pour over salmon and serve.

1/2 cup Irish whiskey
5 eggs
2 cups whipping cream
1 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

8 1-inch slices firm white bread, crusts left on
3/4 cup unsalted butter, at room temperature
SALTED CARAMEL WHISKEY BUTTER SAUCE
1/4 cup unsalted butter, cubed
1/2 cup sugar
1/2 teaspoon sea salt
1 1/4 cups whipping cream

Steps:

  • In a medium mixing bowl, combine the raisins and whiskey; let soak for 1 hour. Butter a 2-quart rectangular baking dish; set aside. In a large bowl whisk together the eggs, cream, sugar, cinnamon, nutmeg, and vanilla. Generously spread one side of each slice of bread with the 3/4 cup butter. Cut the slices in half diagonally and arrange the bread in the bottom of the prepared baking dish, overlapping the slices. Drain the raisins, reserving the whiskey. Sprinkle raisins over the bread, tucking some between the bread slices. Pour the custard over the bread; cover and let it soak in the refrigerator for 30 minutes. Preheat the oven to 375 degrees F. Place the baking dish in a large roasting pan. Add enough hot water to come halfway up the sides of the dish. Bake for 45 minutes or until the pudding is set and the top is golden (there will be a layer of melted butter over the pudding). Carefully remove the baking dish from the water bath and let cool slightly on a wire rack (the butter will soak back into the bread as it cools). CHOCOLATE BREAD PUDDING Omit raisins, whiskey, and steps 1 and 4. Use 4 ounces semisweet and/or milk chocolate, chopped (1 cup) in place of raisins. Serve with Ganache: In a medium saucepan bring 1 cup whipping cream just to boiling over medium heat. Remove from heat. Add 12 ounces semisweet chocolate, chopped (do not stir). Let stand 5 minutes. Stir until smooth. Cool for 15 minutes.

1/4 cup Irish whiskey

  • TO MAKE THE PUDDING: In a small bowl, combine the raisins and whiskey and let soak for one hour. Butter a 9-inch square nonreactive baking dish. In a large bowl, whisk together the eggs, cream, sugar, cinnamon, nutmeg and vanilla. Spread one side of each slice of bread with butter. Cut the slices in half diagonally and arrange half the bread in the bottom of the baking dish, overlapping the slices. Drain the raisins and sprinkle half over the bread. 1 qt. milk

1/2 C butter

2 T whiskey (I prefer Jameson)

Steps:

  • For Bread Pudding In a large bowl break bread into small chunks. Add milk and soak about ten minutes. Crush with hands until blended. Add eggs, sugar, vanilla and raisins and mix until combined. Pour batter into 9x13 pan. Bake at 325 for 1 hour to 1 hour and 15 minutes, until firm. Whiskey Butter Sauce Combine ingredients in a medium saucepan and cook over medium heat until dissolved. Bring to a boil and reduce heat. Simmer 5 minutes.

They hosted the reception themselves and my prepared gift was a filet mignon served with this whiskey butter sauce. No one remembers the temperature that day being cold and cloudy, but everyone remembers this sauce!

1 small onion, minced
2 cloves garlic, minced
1/2 cup whiskey
1 tablespoon whiskey
1/4 cup Worcestershire sauce
1 1/2 teaspoons dry mustard
1/4 teaspoon hot pepper sauce
1/4 cup white wine vinegar
1/2 teaspoon salt
1 tablespoon ground black pepper
1 1/2-3 cups unsalted butter (cold - cut up in pieces)

Steps:

  • Combine onion, garlic, 1/2 cup whiskey, worcestershire, hot pepper sauce, vinegar in a saucepan and bring to a boil.
  • Reduce for 8 to 10 minutes.
  • Over a low heat, whisk in butter, a few pieces at a time.
  • Add last Tbsp whiskey.
  • Sauce consistancy is thin and perfect for a filet mignon or flank steak.
