I'm not sure where this recipe originated, but it is a family favorite. Don't let the "healthy name" keep you from trying it -- it's delicious...and it freezes well, too! We like it with cream cheese frosting or a light dusting of powdered sugar. I haven't timed this exactly, so the prep and cooking times are approximate.

1 1/2 cups wheat germ
2 cups flour
2 cups sugar
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
3 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
2 (8 1/4 ounce) cans crushed pineapple
4 eggs, slightly beaten
1 cup vegetable oil
2 teaspoons vanilla
2 1/2 cups carrots, grated
1 cup walnuts, chopped

Steps:

  • Mix wheat germ, flour, sugar, baking soda, baking powder, salt, and spices in a large bowl.
  • Add undrained pineapple, eggs, vegetable oil, and vanilla.
  • Mix together to form batter.
  • Stir in carrots and walnuts.
  • Pour batter into a greased and floured bundt pan.
  • Bake at 350 degrees until toothpick inserted into the center of the cake comes out dry.
  • Cool 10 to 15 minutes in pan, then invert to release the cake and cool on wire rack.

One of my all time favorite southern classic desserts, that is excellent during the holidays, and even better everyday!

3 cups cake flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 cups granulated sugar
1 cup butter, softened
4 large eggs, room temperature
1/4 cup sour cream
1 cup buttermilk
2 teaspoons pure vanilla extract
1/4 cup granulated sugar
1/4 cup sweetened flaked coconut

Steps:

  • 1. Preheat oven to 350 Degrees Fahrenheit.
  • 2. Sift together cake flour, salt, baking powder and soda. Set aside.
  • 3. In a large separate bowl, beat butter until very fluffy (approx. 5 minuets) then add 2 cups of sugar. Continue to beat until light and fluffy (approx. 2 more minutes).
  • 4. Beat in eggs, one at a time, making sure that each egg is thoroughly blended before adding the next egg.
  • 5. Mix in sour cream and vanilla extract.
  • 6. Blend in some of the dry ingredients followed by some of the buttermilk in alternates. This is a way to ensure that the ingredients are being thoroughly blended together -- For example; add dry mixture followed by buttermilk, dry mixture, buttermilk dry mixture -- so on and so forth -- DO NOT OVER BEAT OTHERWISE CAKE WILL BECOME HARD AS A BRICK ONCE FINISHED BAKING!
  • 7. Grease a bundt cake pan. I used a non stick angle food spring formed tube pan. If you do not have a non stick pan, be sure to grease your pan and dust with flour! Add in 1/4 cup of sugar to the bottom of pan and about 3 inches up the sides, tapping the pan to ensure even distribution. Leave excess sugar in pan. Sprinkle coconut flakes to the bottom of the pan. Scrape batter into the bundt pan and spread evenly.
  • 8. Bake for about 50 minutes to an hour or until a wooden skewer inserted comes out clean (if it comes out wet, bake another 10 minutes or so, if it comes out crumbly, you over baked the cake).
  • 9. Let cake cool for about 10 minutes, then carefully remove from pan, making sure that the sugary coconut side is faced upward. Use a knife to scrape the sides if cake becomes stuck. (this step is very important otherwise your cake will continue to bake and will become very dry and completely stuck in the pan).
  • 10. Drizzle glaze over the crunchy top portion of cake. Please use my Vanilla Almond Glaze recipe to complete this cake!

Holy Colon-Blow, Batman! Please don't let the uber-healthy, fiber filled name of this recipe turn you off. (Because in reality, these are quite good, and good for you too!) My sweet girl, Lauren's folks gave us a 5 lb ricotta cheese container filled with WHEAT GERM, which they had bought in bulk. My frantic search for "wheat germ" recipes led me to this one--and I'm sticking with it! They came out nice and fluffy. Can be served with maple syrup, but I think fruit jam, jelly or even honey would be nice as well.

2 eggs, lightly beaten
1/4 cup canola oil
2 cups buttermilk
2 teaspoons baking soda
1/2 cup wheat germ
1/2 cup whole wheat pastry flour
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 tablespoons sugar (optional)

Steps:

  • Whisk together the dry ingredients in a large bowl (whole wheat flour, wheat germ, baking soda, salt, cinnamon and nutmeg) until well blended.
  • In a bowl, gently mix the wet ingredients (eggs, oil and buttermilk).
  • Slowly add dry to wet and mix until blended.
  • Heat stove top griddle or frying pan on medium-high heat.
  • Pour about 1/4 cup batter for each cake onto the griddle.
  • Cook until bubbles appear, and begin to gently break, then flip pancakes.
  • Cook another minute or so on the other side.
  • Serve with butter and maple syrup.

1 cup packed brown sugar
1 cup butter, cubed
1 cup honey
1/2 cup canola oil
2 tablespoons molasses
3 teaspoons vanilla extract
1/2 teaspoon salt
3 cups raisins

Steps:

  • In a very large bowl, combine the first eight ingredients. In a large saucepan over medium heat, cook the brown sugar, butter, honey, oil and molasses for 2-3 minutes or until sugar is dissolved. Remove from the heat; stir in vanilla and salt. Pour over oat mixture and toss to coat. , Transfer to two greased 15x10x1-in. baking pans. Bake at 350° for 20-25 minutes or until golden brown, stirring twice. Cool, stirring occasionally. Stir in raisins. Store in airtight containers.

1 1/2 cups Arrowhead Mills multigrain pancake mix
1 1/4 cups water
1 large egg, lightly beaten
1/4 cup rolled oats
1/4 cup toasted wheat germ
1 tablespoon grated peeled ginger
1 teaspoon ground cinnamon
1 teaspoon pure vanilla extract
1 teaspoon canola oil
1 ripe banana, mashed
2 tablespoons unsalted butter, plus more for serving
Pure maple syrup, for serving

Steps:

  • In a medium bowl, whisk together pancake mix, water, egg, oats, wheat germ, ginger, cinnamon, vanilla, and oil, until well combined. Stir in banana.
  • Melt 1 tablespoon butter in a nonstick skillet over medium heat. Pour batter 1/2 cup at a time into pan, cook until golden brown and set, 3 to 4 minutes. Flip pancake and cook 3 to 4 minutes more. Repeat with remaining batter. Top with butter and syrup and serve immediately.

1/2 cup margarine, softened
2/3 cup chopped peanuts
1/3 cup creamy peanut butter or 1/3 cup crunchy peanut butter
1 (8 ounce) package cream cheese, room temperature
1 cup confectioners' sugar
1 cup Cool Whip (out of an 8 oz. container, save rest for layer 4)
1 (4 ounce) package instant chocolate pudding mix
1 (3 1/2 ounce) package instant vanilla pudding
2 3/4 cups milk
rest Cool Whip
chocolate shavings (optional)
chopped peanuts (optional)

Steps:

  • First Layer: Combine flour, margarine and peanuts and blend like pie crust.
  • Press into bottom of 9 x 13 pan and bake 20 minutes at 350°F (Note: It takes a little work to make the crust cover the whole bottom, but it does and its worth it!).
  • Cool.
  • Second Layer: Blend all second layer ingredients together and pour carefully on top of first layer.
  • Spread to even it out.
  • Third Layer: Blend third layer ingredients and pour on top of second layer.
  • Let pudding set up a little before putting fourth layer on.
  • Fourth Layer: Put remainder of Cool Whip on top and garnish with the shaved chocolate and peanuts.

1/2 cup egg yolk
1/4 cup water
1 tablespoon lemon juice
1 teaspoon vanilla

1/4 cup brewed coffee
1/4 cup Karo light corn syrup (golden syrup may be used)
3 teaspoons sieved baking soda
2 cups whipping cream
2 tablespoons sugar

Steps:

  • Preheat oven to 350F.
  • Mix cake flour and sugar together; add egg yolks, water, lemon juice and vanilla and beat until smooth.
  • In a large bowl beat egg whites, cream of tartar and salt until a fine foam forms through.
  • Gradually add sugar and continue beating until meringue is firm and stands in peaks.
  • Fold batter gently into meringue until just blended; do not stir.
  • Gently spoon batter into ungreased tube pan.
  • Cut through batter with a knife to break up bubbles and level mixture.
  • Bake in preheated oven for 50-55 minutes or until top springs back when touched.
  • Remove from oven; immediately turn over and place tube over neck of funnel or bottle to cool.
  • Let stand until cool, then loosen with spatula and place on plate.
  • Split cake into four layers.
  • While cake is baking, combine sugar, coffee and syrup in a deep saucepan; stir and bring to a boil and cook until hard crack stage or 310 degrees on a candy thermometer.
  • Remove from heat and immediately add soda and stir vigorously just until topping thickens and pulls away from sides of pan.
  • Immediately pour into ungreased shallow metal pan.
  • Do not stir or spread; let cool without moving.
  • Knock out of pan and crush into coarse crumbs between sheets of waxed paper with rolling pin.
  • Whip cream, sugar and vanilla until stiff.
  • Spread half of cream between layers and remainder on top and sides.
  • Refrigerate until ready to serve.
  • Just before serving, cover cake with crushed caramel candy.

In a separate bowl, combine the oats, wheat germ, flour, baking powder, baking soda and salt. Stir the dry ingredients into the creamed mixture. Finally, mix in the coconut, pecans and dates.
