I found this recipe in the July/August 2008 issue of Weight Watchers magazine. It was submitted by Wendy L. from Missouri and here is what she said: "For an instant summer sweet, I keep a stash of these bars in the fridge up to 1 week ahead." 2 bars = 4 points

3/4 cup reduced-fat creamy peanut butter
1/2 cup brown sugar, packed
1/4 cup honey
3 tablespoons light butter, stick
1 teaspoon vanilla extract
2 cups crispy rice cereal
2 cups bran buds (Kellogg's All Bran preferred)

Steps:

  • Spray a 9 x 13 inch baking pan with non-stick spray.
  • Combine the peanut butter, brown sugar, honey and butter in a large saucepan.
  • Cook over medium-low heat, stirring occasionally until smooth, about 3-4 minutes.
  • Remove from heat and stir in the vanilla.
  • Add the cereals and stir well to coat.
  • Spoon the cereal mixture into the baking pan.
  • Cover with wax paper or plastic wrap and gently press to form an even layer.
  • Let cool completely.
  • Refrigerate, covered, until firm (at least 1 hour).
  • Uncover and cut into 24 bars.

Wonderful sweet crunchy peanuts. My sister used to make these for us for Christmas gifts. Yummy and very addictive!!! Great to mail as gifts.

Number Of Ingredients 6

1/2 cup water
1 cup sugar
1 dash vanilla
1 dash cinnamon
3 cups raw peanuts, Nut House Virginia Raw Peanuts
salt, to taste

Steps:

  • Preheat oven to 325-350 degrees.
  • In a large black (iron) skillet, over medium heat, pour in water and sugar. Stir to mix.
  • Add in vanilla and cinnamon.
  • Pour in peanuts and mix together in the sugar water mixture.
  • Make sure all the peanuts are wet and coated in the mixture.
  • Bring water mixture to a boil stirring occasionally.
  • As water begins to evaporate watch the nuts carefully.
  • CRITICAL: As water is evaporating stir nuts and once there is no more water left and the nuts are dry pour onto a cookie sheet.
  • Sprinkle with salt over the top and bake for approximately 10 minutes.
  • Stir nuts then bake 10 more minutes.
  • Pour onto cool tray and let the nuts cool down.
  • Enjoy.
  • These store really well in ziploc bags and are good to ship as gifts.
