6 scallions, sliced lenghtwise
4 slices bacon, chopped
4 eggs
3 ounces cream cheese
2 tablespoons finely chopped parsley
salt and pepper
1 shortcrust pastry (1 sheet or 1 recipe)

Steps:

  • Preheat oven to 400°F.
  • Roll out the pasty and line a 9 inch buttered quiche dish. Press buttered foil over the pastry and bake 10 minutes until pastry is firm.
  • Reduce heat to 350F, remove foil, and bake pastry for an additional 10 minutes until crisp (but not brown). Remove from oven and cool.
  • Heat heavy frying pan, add bacon and cook over medium heat for 5 minutes. Remove bacon pieces from pan with a slotted spoon and drain on paper towels. Arrange the bacon in the pie shell.
  • Add scallions to the bacon drippings in the pan, and cook over low heat until soft and transparent. Remove scallions from the pan and arrange over the bacon.
  • Beat eggs with cream cheese until smooth. Mix in parsley and season well with salt and pepper. Pour mixture over the bacon and scallions.
  • Place pie in the oven and bake at 350 for 20 - 30 minutes, until the eggs are just set. (Cover the edges with foil if they're getting too brown.).
  • Serve warm.

The original version of this recipe was found at Traditional Welsh Recipes. The coastal town of Oystermouth, in Swansea Bay, is not far from The Mumbles, sometimes known as the Gateway to the Gower Peninsular. This fish pie was originally made from salt cod and is traditionally served with parsnips. I wanted to include a Welsh recipe or two since one line of my family ancestry is Welsh. 1 lb potato (peeled)
1 tablespoon milk
1 medium onion (chopped)
1 lb cod fish fillet (cooked, flaked)
1 ounce butter 1 egg (hard-boiled & chopped)
1 pinch mustard powder
2 teaspoons parsley (chopped)
1 pinch nutmeg or 1 pinch mace
salt and pepper
1 little milk

Steps:

  • Boil the potatoes in lightly salted water.
  • Drain well and mash them with the milk, a quarter of the butter and the seasoning and spices.
  • Melt half the remaining butter in a frying pan and sautee' the onion until soft.
  • Mix together with the potatoes and cod, then add the onion, hard-boiled egg and parsley.
  • Turn into a buttered pie dish, roughing up the top with a fork.
  • Sprinkle with a little milk and dot with the remaining butter.
  • Bake at 375 degrees for about 30 minutes until golden brown and serve.

1 unbaked deep dish pie shell
3 medium tomatoes, cut into 1/4 inch slices
10 slices bacon, strips cooked and crumbled
1 cup shredded cheddar cheese
1 cup mayonnaise

Steps:

  • Bake pastry shell according to package directions; cool.
  • Place tomatoes in the crust; sprinkle with bacon. In a bowl cmobine the mayonnaise and cheese. Spoon over bacon in the center of pie, leaving 1 inch around edge. Bake at 350 for 30-40 minutes or until golden brown. Cover edges with foil if necessary to prevent over browning.

225 g plain flour
100 g butter, unsalted
pinch salt
2-3 Tbsp water
3 lb potatoes, mashed roughly
6 white onions
3 lb smoked bacon, thick slices
1 1/2 lb cheese, shredded (strong)
8 sausage (spicy)
2 leeks
1 egg, beaten

Steps:

  • 1. To make the pastry...sift the flour into a large bowl, add the butter and rub in with your fingertips until the mixture resembles fine breadcrumbs
  • 2. Stir in the salt, then add 2-3 tbsp. water and mix to a firm dough. Knead the dough briefly and gently on a floured surface. wrap in cling film and chill while preparing the filling
  • 3. Pie filling.... Fry the smoked bacon and spicy sausage in virgin olive oil, until golden brown. Leave to cool. Then add to the roughly mashed potato
  • 4. Grate cheese and put to one side
  • 5. Peel and slice 1 leek and 4 onions into bite size pieces, peel potatoes, slice into quarters. Boil together with a pinch of salt, until soft. Drain once cooked, add 1lb of cheese, leave to cool then mash roughly
  • 6. Wash and cut up remaining leek and onions, set aside.
  • 7. Roll out pastry to fit your selected pie dish(es). Then add the cooled potato mix, before adding the pastry to the pie top, add raw onions, remaining leek and rest of cheese. place pastry topping to pie mix, cut two small slits in pastry top
  • 8. Egg wash to pastry top
  • 9. cook 180C, 350F. Cook for 35-40 minutes, or until golden brown. Use 4" or 6" pie cases or 1 large pie dish

2 cups left over mashed potatoes
1 tablespoon olive oil
1/2 cup butter (divided)
1/2 lb bacon, cut in 1 inch pieces
3 medium leeks, white part halved and thinly sliced
1/2 teaspoon sugar
salt & pepper
1/4 teaspoon smoked paprika

Steps:

  • Rewarm your mashed potatoes, set aside and keep warm.
  • Melt half the butter in the olive oil in a large saute pan over medium heat add bacon and saute until just beginning to crisp and brown.
  • Remove bacon from pan with a slotted spoon and set aside , keep warm.
  • Add leek to pan with sugar and salt and pepper.
  • Preheat boiler while leeks gently saute until soft and caramelized. Careful not to burn.
  • Return bacon to pan and mix evenly.
  • Pour mixture into pie 9" plate and spread evenly.
  • Melt remaining butter and add to potatoes, season with salt and pepper and mix well.
  • Spoon potatoes evenly over leeks and bacon and smooth top.
  • Sprinkle with paprika.
  • Place pie under broiler until top is nicely brown. Rotate if necessary to brown evenly.
  • Serve in a wedge with pie server with a side of pickled beets or ligonberry sauce on the plate.

2 sheets ready rolled puff pastry
8 eggs
4 slices diced bacon
1 onion, finely diced
1 -2 tomatoes, sliced
1/2 cup peas
3/4 cup grated tasty cheese

Steps:

  • Preheat oven to 180oC.
  • Line a baking dish with one sheet of pastry.
  • Layer the ingredients.
  • First the onion and bacon on the bottom, then sprinkle peas, lay the sliced tomatoes.
  • Crack the eggs into the pie one at a time (do not beat beforehand).
  • And sprinkle with grated cheese.
  • Cover with second sheet of pastry.
  • Brush with milk and spike some holes in the pastry top.
  • Bake in a moderate oven for 40 minutes.
