1 1/8 ounces fat-free sugar-free instant vanilla pudding mix
2 cups water
1/3 ounce sugar-free strawberry gelatin
2 cups strawberries, sliced

Steps:

  • In a medium saucepan, stir together water and pudding to a boil.
  • Remove from heat and immediately add the jello until dissolved.
  • Set the pan aside and let the mixture come to room temperature. Place strawberries in the bottom of a deep dish pie plate.
  • Add cooled pudding mixture over the strawberries. Refrigerate until chilled. Let it set in well before slicing.

2 lbs strawberries
3/4 cup sugar, granulated
1/2 cup cranberry juice cocktail
1/4 cup cornstarch
6 ounces graham cracker ready pie crusts
1 cup non-fat vanilla yogurt, Greek-style
1 teaspoon lemon zest, finely grated

Steps:

  • Combine 3 cups sliced strawberries, sugar and juice in a medium saucepan.
  • Mash berries in pan with a potato masher; stir in cornstarch and bring mixture to a boil over medium-high heat. Reduce heat to medium-low and cook, stirring often, until very thick, about 1 minute.
  • Remove from heat; let cool slightly and then stir in remaining sliced strawberries. Scrape into pie crust.
  • Let cool slightly; cover loosely with plastic lid from pie crust. Refrigerate until set, at least 4 hours (you can then freeze the pie for a little while if desired, to make it easier to slice).
  • To serve, in a medium bowl, stir together vanilla yogurt and lemon zest until blended. Spread on top of pie, leaving a border around edges so strawberry filling shows. Slice reserved strawberries and use them to garnish pie. Slice pie into 10 pieces and serve. Yields 1 piece per serving.

My sister-in-law just gave me this recipe from a friend of hers. She does Weight Watchers and I have just joined myself. Her friend told her she made eight pies one week! I am told that a whole pie is 4 points. I have made it crustless and also put it into a reduced fat graham cracker crust. You must adjust points for the latter. This is so easy and so tasty. I hope you enjoy! Don't forget the fat free, sugar free Cool Whip. I am also diabetic, so I added that to the title as well.

2 cups water
1 (7/8 ounce) package cook and serve fat-free sugar-free vanilla pudding mix
1 (1/3 ounce) package sugar-free strawberry gelatin
4 cups sliced fresh strawberries (I use a quart clamshell)
whipped topping

Steps:

  • Place sliced berries on bottom of a pie plate.
  • In a saucepan mix the water with the pudding with a wisk, bring to a boil.
  • Remove from heat, add the jello, let cool briefly.
  • Pour over berries.
  • Refrigerate until set. It does not take too long.
  • Enjoy with some whipped topping if you like. Delicious!
