10 Point Weight Watchers Friendly Spaghetti & Meatballs image

I came up with this recipe when my husband and I had a craving for meatballs when we were doing weight watchers. I've included the brand names of the ingredients for those of you counting points so you can get the exact same thing. Enjoy!

1 lb ground turkey
1/2 cup breadcrumbs (Progresso Italian Style)
1/4 cup Egg Beaters egg substitute (Original)
8 ounces angel hair pasta (I used Kroger brand)
1 cup pasta sauce (I used Healthy Choice Garlic & Herb)

Steps:

  • Pre-heat the oven to 400 degrees.
  • In a mixing bowl combine the ground turkey, bread crumbs, and egg.
  • Separate the meat mixture into 20 individual meatballs - it will be sticky.
  • Before putting the meatballs on the pan, spray the baking pan with your favorite non-stick spray.
  • Put the meatballs in the oven and set the timer for 15 minutes.
  • Turn the meatballs over after 10 minutes so they brown on both sides.
  • Heat pasta sauce in a sauce pan over low heat,.
  • Boil the angel hair pasta in salted water for 2-4 minutes.
  • Drain the pasta.
  • For those of you counting points - for 10 points you get 5 meatballs, 2 oz(1/4 the amount cooked) of pasta and 1/4 cup pasta sauce.
  • If you have points left over then top with a little bit of freshly grated Parmesan cheese and add a salad!
  • Enjoy!

I adapted this from a Light & Tasty cookbook. It was so delicious that I had to put it in the fridge before it was cool just to stop myself from eating it all! For WWers, this works to 6 points per serving. I use Ragu No Sugar Added Tomato & Basil sauce to keep the calorie/fat content as low as possible. Note: WW has changed their points system several times since this is posted, and you should recalculate the points by the current system.

12 ounces whole wheat spaghetti
1 lb 96% lean ground beef
1 large onion, chopped
2 garlic cloves, minced
4 cups no-sugar-added spaghetti sauce
4 cups 1% cottage cheese
2 1/2 cups part-skim mozzarella cheese
1/2 cup grated parmesan cheese

Steps:

  • Cook spaghetti according to package directions.
  • In a large skillet, brown beef, onion, and garlic. Drain fat. Add spaghetti sauce and heat through.
  • Meanwhile, combine cottage cheese, 2 cups mozzarella, and 1/4 cup parmesan.
  • In a 9x13 casserole dish sprayed with nonstick cooking spray, layer 1 cup of meat mixture, half the spaghetti, half the cheese, and half the remaining meat mixture. Repeat layers. Dish will be very full.
  • Cover with foil and bake at 375°F for 45 minutes. Uncover and add remaining cheeses. Bake an addition 10 minutes.
  • Allow to stand 10 minutes before serving.
