A little different from the other Morning Glory Muffins because it uses apple butter. This is a weight watchers recipe. Each muffin is 3 points.

2 1/2 cups all-purpose flour
1 cup firmly packed brown sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
2 cups shredded carrots
1 cup shredded apple
3/4 cup raisins
1/3 cup chopped pecans
1/4 cup sweetened flaked coconut
1 (8 ounce) can crushed pineapple, drained
1/3 cup vegetable oil
1/3 cup apple butter
2 teaspoons vanilla extract
2 large eggs
2 large egg whites
cooking spray

Steps:

  • Preheat oven to 350.
  • Combine flour, brown sugar, baking soda, cinnamon, and salt in large bowl.
  • Stir in carrot and next 5 ingredients. Make a well in center of mixture.
  • Combine oil and next 4 ingredients; stir with a whisk.
  • Add oil mixture to flour mixture, stirring just until moist.
  • Spoon batter evenly into muffin cups coated with cooking spray.
  • Bake at 350 for 25 - 30 minutes or until muffins spring back when touched lightly in center.
  • Remove muffins from pan immediately; let cool on a wire rack.

2-1/2 cups all-purpose flour
1-1/4 cups sugar
3 teaspoons ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
3 eggs
3/4 cup applesauce
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 cups grated carrots
1 medium tart apple, peeled and grated
1 can (8 ounces) crushed pineapple, drained
1/2 cup sweetened shredded coconut
1/2 cup raisins
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine the first five ingredients. In another bowl, combine the eggs, applesauce, oil and vanilla. Stir in carrots, apple, pineapple, coconut, raisins and nuts., Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

Morning Glory muffins are notoriously a lot of work to make. Not these! One bowl, fast, easy, scratch-made muffins with healthier ingredients than the traditional, sugar- and fat-laden recipes. But these are SO GOOD!!

2 cups grated carrots
2 cups white whole wheat flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1 cup honey
1 cup drained crushed pineapple
1/2 cup raisins
1/2 cup coconut
2 eggs
1 cup coconut oil
2 teaspoons vanilla

Steps:

  • Grate carrots into food processor with grating disk.
  • Replace grating disk with chopping blade.
  • Add dry ingredients (flour--you can use all-purpose flour, baking soda, cinnamon and salt) and pulse twice.
  • Add remaining ingredients (raisins, coconut, pineapple, eggs, oil and vanilla). Note: You can use whatever oil you like. Coconut oil is healthy and tastes great in these!
  • Pulse three times.
  • Scoop into paper-lined muffin tins.
  • Bake at 350 degrees for 20 minutes.

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
  • In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. Stir in the carrot, raisins, nuts, coconut, and apple.
  • In a separate bowl, beat together eggs, oil, and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.
  • Bake in preheated oven for 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
