Sesame Bites image

Crispy and nutty on the outside and melt in your mouth on the inside.

1/4 c sugar
2 Tbsp coconut milk, unsweetened
2 eggs,lightly beaten
2 Tbsp coconut butter,melted
1 3/4 c all purpose flour
4 tsp shredded unsweetened coconut
1/4 tsp baking powder
pinch of salt
4 Tbsp sesame seeds
corn oil for deep frying

Steps:

  • 1. Combine the sugar, coconut milk, eggs, and coconut butter in a bowl. Combine the flour, shredded coconut,baking powder, and salt in a separate bowl, then stir the flour mixture into the egg mixture. Knead lightly until smooth.
  • 2. Form the mixture into small balls with your hands, or with 2 tsps. Spread out the sesame seeds on a plate and roll the balls in them to coat.
  • 3. Half fill a wok or deep heavy bottomed skillet with oil and heat to 350-375 or until a cube of bread browns on 30 seconds. Remove with a perforated spoon and drain on paper towels. Serve warm.
