APPLE-BRAISED CHICKEN
Juicy chicken meets a tart apple, and they fall for each other in a skillet. It's an autumnal love story. Serve on a bed of couscous or brown rice (microwaved is just fine). Apples will last a week (tops) if you leave them out on a countertop. But in your fridge's crisper drawer? They'll stay fresh and delicious for about a month.

Steps:
- In a large nonstick skillet, heat the oil over medium-high. Sprinkle the chicken on both sides with the flour; cook, turning once, until browned, 3 to 5 minutes per side. Transfer to a plate.
- Add the onions, salt, and black pepper to the same pan. Reduce heat to medium-low and cook, stirring frequently, until the onions are softened, 8 to 10 minutes.
- Add the cider, stock, and mustard and stir to combine. Return the chicken to the pan. Increase heat to medium-high and bring to a boil. Cook, uncovered, for 15 minutes.
- Add the apples and sage to the pan. Turn the chicken over and stir the apples and onions. Cook, uncovered, until the chicken is cooked through, 10 to 12 minutes. Sprinkle with the parsley.
- Serving size: 1 chicken breast and ¾ cup apple mixture

- Preheat the oven to 180°C / 160°C Fan / 350°F.
- Use 5 pumps of calorie controlled spray oil to grease a loaf tin (approx 9 inches by 5 inches)
- Place the ground beef, breadcrumbs, eggs, Worcestershire sauce, grated onion, minced garlic, black pepper, crumbled stock cubes/bouillon, milk and 2 tablespoons of the tomato ketchup into a large bowl.
- Mix with a wooden spoon (or your hands if you prefer) to combine all of the ingredients.
- Stir in the chopped parsley if using.
- The mixture will be wet but this leads to a moist, succulent meatloaf that is less inclined to crumble once cooked.
- Place the meat loaf mixture into the pre greased loaf tin and smooth the top.
- Mix the remaining 4 tablespoons of ketchup with the sugar, white wine vinegar and mustard to make a glaze.
- Spread half of the glaze on top of the meatloaf and set aside the rest for later.
- Place the meatloaf on the middle shelf of the preheated oven and cook for 50 minutes.
- Remove the meatloaf from the oven and spread over the remaining glaze.
- Place back in the oven for a further 25 minutes.
- Remove from the oven and let the loaf stand for 10 minutes or so before slicing it into 8 generous slices.

This is a healthy yummy weight wathers recipe adapted from "Everyone loves chicken" each serving is 5 pints and is quite filling. My whole family loves this on or off a diet, kids loves it too. Great leftover as well.

- Spray a large skilet with cooking spray. On medium heat, add onions and celery cook until they begin to soften about 2 minutes. Add apples and continue to cook until the apples are softened and onions are slightly browned, about 8 minutes. Take off the heat or transfer to a bowl to cool for about 15 minutes.
- In another bowl, mix together ground chicken, egg whites, dill, bread crumbs, sat, pepper, nutmeg, and lemon zest.
- Add apple mixtues and combine well.
- Coat a loaf pan with cooking spray. Put mixture into loaf pan pressing meat into corners and even out the top. Drizzle honey mustard dressing over the top.
- Bake at 375 degrees for 1 hour and 15 minutes or until center is at 165 degrees. Let cool for 5 minutes begore slicing into six servings,.

MY VERSION OF WEIGHT WATCHERS MEATLOAF
This recipe is my verison I made different from regular recipe I found. Just a bit more taste to it and fat intake in mine. Serve with mash potatoes of choice and a green vegetable dish and your choice of bread. Of course you can use less fat products for those watching the calories. This meal is really good. 5 Points per serving
