5 large eggs, beaten
2 cups shredded sharp Cheddar cheese
1 cup small-curd cottage cheese
¼ cup all-purpose flour
4 tablespoons salted butter, melted
½ teaspoon baking powder
⅛ teaspoon salt
⅛ teaspoon hot sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees. Coat an 8-inch square baking pan with cooking spray.
  • Combine eggs, Cheddar cheese, cottage cheese, flour, butter, baking powder, and salt in a large bowl. Stir to mix well. Pour into the prepared baking dish.
  • Bake in the preheated oven until golden brown and a knife inserted into the center comes out clean, about 25 minutes. Let cool for 5 minutes. Top with hot sauce before serving.

This came from a Bob Evans little grocery store cookbook - its quick to make unlike some casseroles takes minutes to cook up!

Number Of Ingredients 7

1 lb Bob Evans sausage (original brand)
1 (8 ounce) can refrigerated crescent dinner rolls (can use low fat version also)
2 cups shredded sharp cheddar cheese (can use other cheeses)
5 eggs (beaten)
1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Preheat oven 425 F.
  • Crumble and cook sausage* in skillet. Cook over medium heat til browned, stirring occasionally. (this can be done a day ahead and stored in a zip lock bag to make assembly faster the next day)
  • Drain off sausage fat and drippings.
  • Line bottom of greased 13 x 9 inch baking pan/dish with crescent roll dough, pinching together the perforated seams and pushing the dough so you get a nice seamless bottom that goes from edge to edge of the pan.
  • Crumble sausage over dough, then sprinkle cheese over the sausage.
  • Combine eggs, milk and salt and pepper and pour over sausage and cheese making sure the egg mixture gets even distributed.
  • Bake 15 minutes or until set. Let stand 5 min before cutting into squares. Best served hot.
  • *Experiment with precooked veggies or even ham whatever goes into an omelette will work in this recipe.

This is recipe originally from Jimmy Dean. It is similar to the Rise and Shine casserole listed on this site but is seasoned and includes the bread too. Perfect for a weekend breakfast or brunch or for a holiday or birthday morning. It is somewhat labor intensive in that you have to remember to refridgerate it but not too long and take it out before baking for an hour but not longer than 2 and you have to let it sit when you really just want to eat it right away. But it takes a lot of the prep out of chopping etc. So check it out.Thus preparation time includes refrigeration time, prep and letting it sit after baking. Serve this to family and friends. Enjoy. 2 cups light cream (substitute Half & Half if light cream is unavailable)
6 large eggs, lightly beaten
1/4 teaspoon paprika
1/4 teaspoon black pepper
1/8 teaspoon red pepper
1/2 teaspoon dry mustard
1/2-3/4 teaspoon Worcestershire sauce
18 ounces jimmy dean skillets- sausage (this is a frozen item)
6 slices white bread, crusts off
1/2 lb cheese, and grated recommended (yellow cheese (Sharp)

Steps:

  • Preheat oven to 350°. Using about 1 tablespoon butter or margarine, grease the bottom and sides of a 3-quart casserole dish. Layer bottom only of casserole dish with white bread; bread should touch but not overlap. Pour package of Jimmy Dean Skillets on top of bread, evenly distribute from side to side. Cover with 1 1/2 cup cheese.
  • Mix eggs, cream, paprika, black pepper, red pepper, dry mustard and Worcestershire Sauce together. Pour on top of Skillet mixture. Top with remaining cheese.
  • Cover and refrigerate 8 hours (overnight is okay). Take out of the refrigerator at least 1 hour prior to cooking. (no more than 2). Bake 1 hour at 350°. Let casserole should stand 15 - 20 minutes before serving.

1 (16 ounce) package bulk pork sausage
3 red potatoes, diced
½ onion, diced
½ green bell pepper, diced
2 cups shredded Cheddar cheese, divided
8 eggs
¼ cup milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a casserole dish with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Place sausage in the bottom of the prepared dish.
  • Saute potatoes, onion, and green bell pepper in the same skillet until tender, about 6 minutes. Place mixture over the sausage. Sprinkle 1 cup Cheddar cheese on top.
  • Beat eggs and milk together in a bowl and pour into the casserole dish. Add the rest of the Cheddar cheese on top.
  • Bake in the preheated oven until cheese is melted and slightly browned, 15 to 20 minutes.

How to make Weekend Company Breakfast Casserole

1 1/2 - tablespoons vegetable oil
1 - lb smoked sausage, sliced
1/4 - cup chopped green, white or yellow onion
1/4 - cup chopped red or green bell pepper
6 - 7 English Muffins torn into 1 - inch pieces
1 - cup shredded monterey jack cheese w/peppers or regular Monterey jack
1/2 - cup shredded sharp cheddar cheese
6 - large eggs
1 - cups half and half
1/4 cup whole milk
1/2 - teaspoon dried minced garlic, optional

Steps:

  • In large skillet heat oil over medium heat-high heat. Add sausage cook for 5 minutes, stirring frequently.
  • Add green onions and bell pepper cook for 4 minutes or until vegetables are tender.
  • Using a 9 x 13 in baking dish arrange English muffin pieces in a single layer.
  • Top with sausage mixture and both of the cheeses. In a large bowl whisk together, eggs, half and half and milk and garlic if using.
  • Slowly pour egg mixture over over cheeses in baking dish. Cover and chill for at least 8 hours.
  • In the morning:
  • uncover casserole and let stand at room temperature for 30 minutes.
  • Preheat oven to 350 degrees.
  • Bake casserole 45-50 or until casserole is set. Cover with aluminum foil to prevent over browning if necessary.
  • Let stand for 10 minutes before serving.
  • Cook's Note: Always check egg and cheese bakes 15 minutes before they are done and cover them to prevent over browning. If using a glass baking dish lower the temperature to 325 degrees.
