4 ears of corn
2 tablespoons olive oil
Salt
3 tablespoons unsalted butter
Juice of 1 lime
1 tablespoon coarsely cracked black pepper

Steps:

  • Brush corn with olive oil, season with salt, place on the grill and grill until lightly golden on all sides. Heat the butter in a medium skillet and add the lime juice. Add the corn niblets and cook for one minute. Add the black pepper.

20 ears sweet corn on the cob, shucked and silks removed
1 tablespoon salt
1/2 cup sugar (mixed in at the end of the process)
water

Steps:

  • Using an electic knife or a serrated knife remove the corn kernels from the cob (I use an electric knife for this, it takes less time).
  • Place the corn kernels in a large pot; add in water to cover the corn then add in 1 tablespoon salt (add in more water to cover the kernels if needed).
  • Bring to a full boil, the reduce heat and boil ONLY until the kernels turn a darker yellow (about 2 minutes, this will not take long).
  • Place in a large strainer and rinse under very cold water or plunge into a bowl of ice water.
  • Shaking the strainer strain out as much water as possible.
  • Mix in 1/2 cup sugar using a wooden spoon until combined with the niblets (this creates a sugar-pac and helps preserve the corn and keeps the corn crisp while freezing).
  • Spread the sugar-coated kernels onto a large 15 x 10-inch baking sheet then freeze until completely frozen.
  • Place in freezer bags or vacum pac.

I had to come up with this quick. Every Thanksgiving my mom serves Green Giant Niblets corn in butter sauce and I promised I would pick it up for her and bring it on Thanksgiving day. When I went to the store, they were sold out! I made this recipe and brought it already prepared to Thanksgiving dinner. Nobody was the wiser! I saved some money too, because I used store brand corn! This recipe makes a lot...you may want to half it.

2 (16 ounce) bags frozen corn (yellow "or" shoepeg white, any brand)
2 teaspoons salt
1/2 cup butter, cut up
1 teaspoon sugar
1 cup water
1 1/2 teaspoons cornstarch

Steps:

  • Add corn to large sauce pan along with all ingredients except water and cornstarch.
  • Stir corn mixture over medium heat until butter is melted.
  • Combine water and cornstarch and stir until cornstarch is disolved.
  • Slowly add water to corn in sauce pan, stirring constantly.
  • Reduce heat to simmer and stir until sauce thickens.
  • Let simmer, stirring occasionally, until corn is tender, about 10 minutes.

3/4 cup butter
1/3 cup finely chopped onion
1/3 cup finely chopped fresh cilantro or parsley
1/3 cup finely chopped red bell pepper
1/4 cup fresh lime juice, if desired
1/2 teaspoon garlic salt
1 package (12 count) frozen corn-on-the-cob
1 tablespoon chopped fresh cilantro or parsley, if desired for garnish

Steps:

  • Heat gas or charcoal grill. Cut 12 (10x10-inch) sheets of heavy-duty foil. In 1-quart saucepan, melt butter over medium heat. Add onion; cook, stirring frequently, until onion is tender. Stir in 1/3 cup cilantro and the bell pepper; cook 3 minutes, stirring constantly. Stir in lime juice and garlic salt.
  • Place frozen ear of corn in center of each sheet of foil. Drizzle butter mixture evenly over corn. Fold foil over corn so edges meet. Seal edges, making tight 1/2-inch fold; fold again.
  • Place corn on grill over medium heat. Cover grill; cook 25 to 35 minutes, turning occasionally, until thoroughly heated. Cut large X across top of each packet; fold back foil. Sprinkle with 1 tablespoon cilantro.
