Number Of Ingredients 12

4 jalapeños
750 ml blanco tequila (I prefer tequila from the Tequila valley, such as Siembra Valles, Fortaleza, Arette, etc.)
2 cups cubed seedless watermelon
¾ cup superfine sugar
1 oz jalapeño-infused Siembra Valles Blanco Tequila (see below)
½ oz Novo Fogo Silver Cachaça
½ oz Aperol
1 oz Watermelon Syrup (see below)
¾ oz lime juice
5 to 7 mint leaves
Lime wheel for garnish
Salt for garnish

Steps:

  • Remove the stems from the jalapeños. Cut the jalapeños in half and scrape the core (seeds and membranes) of two into a food-safe container. Dice the remaining jalapeños and place into the food-safe container. Add the tequila and allow to infuse for 12 to 20 minutes, depending on spice level desired. Rebottle.
  • Note: The recipe for the jalapeño tequila will vary because not all jalapeños are equally spicy. You need to taste it frequently to make sure it's right. Ensure your tequila is not cold, as cold tequila will not infuse properly.
  • Blend the watermelon in a blender to yield about 12 ounces of juice. Add the sugar and blend again until fully dissolved. Transfer to an airtight container. Store in the refrigerator for up to 2 weeks.
  • Add all the ingredients, except for 1 mint leaf, the lime wheel, and salt, to a cocktail shaker with ice. Wet the outside of a coupe glass with the lime wheel and roll the glass in salt for a salted rim. Shake and fine-strain into the glass. Garnish with the mint leaf-first pressed lightly to express its oils-by floating it on top of the drink.

6 cups seedless watermelon chunks
1/4 cup simple syrup, see Cook's Notes
2 limes, cut into chunks
1 1/2 cups fresh blueberries
1/2 cup lightly packed fresh mint leaves, plus sprigs for garnish
1 cup plata (silver) tequila
Crushed ice

Steps:

  • Puree the watermelon in a food processor until smooth. Strain the juice into a bowl pressing on the pulp, then discard the solids.
  • Put the simple syrup, lime chunks, berries and mint in a pitcher and muddle until the berries are slightly crushed. Add the tequila and watermelon juice and stir to combine. Refrigerate until cold, at least 1 hour. Serve over crushed ice, garnished with mint sprigs.

1 large seedless watermelon
One 750-milliliter bottle tequila
6 to 7 limes, cut into wedges
Kosher salt

Steps:

  • Cut a hole in the watermelon large enough for the tequila bottle's neck. Insert the tequila bottle upside down. Refrigerate and let the liquor soak into the watermelon's flesh overnight.
  • Cube the melon, and skewer each cube with a wedge of lime sprinkled with salt.

TEQUILA-SOAKED WATERMELON WEDGES

This grown-up fruit dessert borrows flavors from margaritas. Tequila and Triple Sec infuse the watermelon slices, which also get a spray of lime juice and a sprinkling of coarse salt. The longer the watermelon soaks, the more flavorful it becomes -- one more reason to save any leftover slices.

1 small seedless watermelon, red or yellow, quartered and cut into 1-inch-thick wedges
1 cup sugar
3/4 cup water
1/2 cup tequila
1/4 cup Triple Sec
2 limes, halved or cut into wedges
Flaked sea salt or coarse salt

Steps:

  • Arrange watermelon in a single layer in two 9-by-13-inch baking dishes. Bring sugar, water, tequila, and Triple Sec to a boil in a small saucepan. Cook, stirring, until sugar dissolves, about 1 minute. Let cool slightly. Pour syrup over watermelon wedges, and refrigerate for at least 45 minutes.
  • Remove watermelon from syrup, and arrange on a platter. Squeeze limes over melon, and season with salt.
