1 banana
1 cup frozen diced watermelon
½ cup frozen mango chunks
¼ cup frozen strawberries
¼ cup almonds
1 teaspoon hemp seeds, or to taste

Yield about 8-1/2 dozen.

1 cup butter, softened
1-1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
1 can (12 ounces) whipped vanilla frosting
Red and green food coloring
Miniature chocolate chips

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking soda and salt; gradually add to the creamed mixture alternately with the sour cream, beating well after each addition. Cover and refrigerate for 2 hours or overnight. , On a heavily floured surface, roll out half of the dough to 1/8-in. thickness. Cut with a 3-in. round cookie cutter; cut circles in half. Repeat with remaining dough. , Place on ungreased baking sheets. Bake at 375° for 9-10 minutes or until bottoms are lightly browned and cookies are set. Cool on wire racks. , Place two-thirds of the frosting in bowl; add red food coloring. Add green food coloring to the remaining frosting. Spread pink frosting on tops of cookies. Frost the edges with green frosting, using a pastry bag with a small star tip if desired. Place chocolate chips randomly over the pink frosting for seeds.

1 teaspoon kosher salt
1 teaspoon superfine sugar
1/4 teaspoon cayenne
2 inch-wide cubes watermelon
3/4 ounce simple syrup
3/4 ounce fresh lime juice
1/2 ounce joven mezcal (see note)
1 1/2 ounce blanco tequila

Steps:

  • On a small plate, mix salt, sugar and cayenne with a fork. Lightly wet rim of a medium cocktail glass with water or lime juice, and dip glass on plate, coating rim, then tap to shake off excess.
  • In a cocktail shaker, crush watermelon with a muddler or long-handled spoon. Half fill the shaker with ice and vigorously shake the watermelon, syrup, lime juice, mezcal and tequila. Strain into glass and serve.

WATERMELON, LIME AND MINT SUGAR PAVLOVA

Try a twist on pavlova with a watermelon, lime and mint topping. With crunchy meringue and a marshmallowy centre, this is a dessert that's sure to impress

½ lemon , juiced (reserve the other half)
6 large egg whites
350g caster sugar
2 tsp cornflour
1 tsp vanilla extract
handful of mint leaves , plus extra to serve
50g caster sugar
400ml double cream
200g natural yogurt
1 lime , zested
small watermelon , cut into wedges and rind removed

Steps:

  • Line a large baking sheet with baking parchment. Using an 18cm round cake tin or plate as a guide, draw a circle on the parchment, then flip it over. Heat the oven to 130C/110C fan/gas ½.
  • Rub the reserved lemon half around the inside of a large bowl or stand mixer, then wipe with kitchen paper to remove any butter or oil. Tip in the egg whites and whisk with an electric whisk or the mixer on a low speed until the whites form small, foamy bubbles, about 1-2 mins. Keep going until the mix looks like shaving foam, then add the sugar, 1 tbsp at a time, until it's a thick, glossy meringue. Rub some between your fingers - if you can feel any grains of sugar, keep whisking for a few minutes. Add the cornflour, lemon juice and vanilla, and whisk for another 30 seconds.
  • Spoon the meringue onto the prepared baking sheet, into the centre of the circle, and spread it out to the edges with a palette knife. Swipe the knife around the edge, then smooth the top.
  • Bake for 1 hr 15 mins, then turn the oven down to 100C/80C fan/gas ¼ and bake for 1 hr. Turn the oven off and leave the pavlova inside to cool for at least 2 hrs, or overnight.
  • Carefully invert the pavlova and peel away the parchment. Don't worry if it cracks a little - it will be covered by the topping.
  • To make the topping, blitz the mint with the caster sugar. Whisk the double cream and natural yogurt with an electric whisk until just holding its shape. Sprinkle over the lime zest and mint sugar, then fold into the cream mix with a large metal spoon to ripple. Spoon over the pavlova. Top with the rest of the mint sugar, the watermelon and more mint. Serve with lime wedges to squeeze over. Best served straightaway but leftovers will keep in the fridge for two days.

WATERMELON SUGAR COCKTAIL

If you're a Margarita fan, you'll love this drink, which is made with mezcal, tequila's smoky cousin.

Yield Makes 8 servings

Number Of Ingredients 6

1 jalapeño, halved lengthwise
3/4 cup tequila blanco
2 cups 3/4" cubes seedless watermelon
6 tablespoons fresh lime juice
6 tablespoons Simple Syrup
1/4 cup mezcal or reposado tequila

Steps:

  • Scrape stems, seeds, and veins from jalapeño into a small jar (reserve green flesh for another use). Add tequila; cover and let infuse for 15 minutes. Set a strainer over a small bowl. Pour tequila through strainer and discard solids.
  • Place watermelon cubes in a large pitcher. Using a muddler or potato masher, coarsely crush watermelon. Stir in lime juice, Simple Syrup, mezcal, and jalapeño tequila. Stir in 2 cups ice. Cover and refrigerate until chilled, about 2 hours.
  • Fill Old Fashioned glasses with ice. Divide cocktail among glasses and serve.
