6 green onions, chopped

Steps:

  • In a large bowl, combine watermelon, cucumbers, green onions and mint. In a small bowl, whisk remaining ingredients. Pour over salad and toss to coat. Serve immediately or refrigerate, covered, up to 2 hours before serving.

1/4 cup freshly squeezed orange juice
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 cup minced shallots (1 large)
1 tablespoon honey
1/2 cup good olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
6 cups baby arugula, washed and spun dry
1/8th seedless watermelon, rind removed, and cut in 1-inch cubes
12 ounces good feta cheese, 1/2-inch diced
1 cup (4 ounces) whole fresh mint leaves, julienned

Steps:

  • Whisk together the orange juice, lemon juice, shallots, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, store the vinaigrette covered in the refrigerator.
  • Place the arugula, watermelon, feta, and mint in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well. Taste for seasonings and serve immediately.

  • Chop 180g watermelon and ½ cucumber into chunks and tip into a bowl with the leaves from ½ bunch mint (reserving a few for garnish) and drizzle with 1 tbsp olive oil. Season and pile on to a serving plate. Crumble over 100g feta, the remaining mint leaves, then drizzle with 1 tbsp balsamic glaze just before serving.

1 watermelon (seedless is so much easier)
1 honeydew melon
1 cantaloupe
1 fresh pineapple
2 cups strawberries
2 cups blueberries
2 cups raspberries
2 teaspoons lemon juice
2 tablespoons lime juice
2 tablespoons orange juice
1/3 cup water
2/3 cup sugar

Steps:

  • Slice the watermelon lengthwise about 1/3 of the way from the top.
  • This will be your bowl so you may have to slice a small portion off the bottom in order for it to sit flat.
  • Either ball or chunk the watermelon flesh.
  • Hollow out the watermelon shell completely.
  • Ball or chunk the remaining melons.
  • Chunk the pineapple.
  • Mix all the fruits in the melon bowl.
  • Combine the juices, water and sugar together.
  • Pour over the fruits and toss lightly.
  • Chill if desired or serve immediately.

1 clove garlic, minced or grated
1 small Fresno chile or jalapeno pepper, seeded and minced
6 to 9 tablespoons extra-virgin olive oil (depending on how acidic you like your salad dressings)
3 tablespoons red wine vinegar
Kosher salt and freshly ground black pepper
1/4 cup finely torn or finely chopped fresh mint
3 cups large diced red seedless watermelon
1/2 cup diced English cucumber
1/4 cup finely sliced scallions
1/2 cup Greek feta cheese, crumbled

Steps:

  • Add the garlic, Fresno, olive oil and vinegar to a glass jar with a lid. Season with salt and pepper, then add the mint. Place the lid on and shake vigorously to combine. Set aside.

4 ounces feta cheese (or more to taste)
1 cup of fresh mint
1/4 cup olive oil
3 tablespoons balsamic vinegar (the best quality you can find really makes a difference!)
fresh ground black pepper

Steps:

  • Cut watermelon in half and remove watermelon from rind; the easiest way to do this is with a melon baller. Place melon balls into a large mixing bowl. Save the rind to use as the salad bowls for a pretty presentation, scraping out to the same depth all over and cutting a small slice from the bottoms of the outside rinds so that each half will sit evenly on a table.
  • Crumble feta cheese over the watermelon, chiffonade the mint (roll leaves into a cigar and slice thinly across the 'cigar' to get ribbons of mint) and sprinkle over watermelon. Grind pepper to taste over all.
  • To make the dressing, blend or shake the olive oil and vinegar in a jar until emulsified. Pour over watermelon and toss gently. Chill for 30 minutes, spoon carefully into reserved watermelon rind 'bowls' and serve.

If you need a new summertime salad, you need to add this no-bake watermelon one to your menu. It's cool, creamy and refreshing with chunks of watermelon and pineapple in every bite. Just fantastic! We loved the crunchy texture that the pecans add to the salad. This will be a big hit at summer cookouts or potlucks.

1 box strawberry gelatin, 6 oz.
1 c boiling water
1 c cold water
3 c chopped watermelon in small pieces, remove seeds
1 can(s) crushed pineapple in juice, not drained, 8 oz.
1 c coarsely chopped pecans (some nuts can be added to the gelatin, if desired, but I prefer to add them all to the top of the finished dish)
1 pkg cream cheese, softened, 8 oz.
1/4 c sugar
1/4 c whole milk
1 pkg Cool Whip topping, 8 oz.

Steps:

  • 1. Combine gelatin and boiling water in a medium heatproof bowl. Stir until gelatin is dissolved, about 2 minutes. Add cold water & mix well. Chill in refrigerator until partially set, about 55 minutes.
  • 2. Add chopped watermelon and un-drained pineapple to gelatin mixture. Mix well. If you wish, some nuts can be added also. I prefer to put all the nuts on top of the finished dish. Spoon into 13x9 inch dish. Chill until set, about 1 hr.
  • 3. Place softened cream cheese in a medium bowl. Beat with an electric mixer until light and fluffy.
  • 4. Add milk and sugar to cream cheese. Beat until the mixture is smooth.
  • 5. Fold whipped topping into cream cheese mixture. Spread evenly over gelatin mixture.
  • 6. Sprinkle with pecans. Chill covered until serving time. Can be made the day before.
