TGIF STRAWBERRY BASIL MOJITO image

Strawberry Infused Rum
2 750ml bottles white rum
1 pint local strawberries, topped and sliced
Basil Simple Syrup
1.5 cups water
1 cup sugar
10 basil leaves
Strawberry Basil Mojito ~ serves 12
6 cups strawberry infused rum
2 cups basil simple syrup, strained
1 cup fresh lemon juice
1 liter Soda Water
Fresh Strawberries

Steps:

  • For rum: Mix rum & strawberries in a large pitcher. Place in a refrigerator to infuse for 2 days. Then strain. For syrup: Bring to a simmer until sugar dissolves, cool, and store in refrigerator. For mojito: Mix first 3 ingredients in a large pitcher. Place ice in high ball glasses, fill glass with rum mix up to 3/4 full, top with soda water, stir. Garnish with a fresh strawberry and serve immediately.
