SUMMERTIME WATERMELON PUNCH FOR A CROWD

I attended a patio party years ago where the hostess had a clever watermelon "bowl" with a scalloped edge and filled with this punch. It was the hit of the party, and she was kind enough to share the delicious punch recipe with me. -Joan Hallford, North Richland Hills, Texas

30 cups cubed seedless watermelon (about 10 pounds)
1 can (12 ounces) frozen orange juice concentrate, thawed
1/2 cup lemon juice
1 bottle (750 milliliters) sweet white wine, chilled
3 cups chilled ginger ale

Steps:

  • Process watermelon in batches in a food processor until smooth. Press through a fine-mesh strainer into a bowl; discard pulp. Pour juice into a large pitcher or punch bowl. Stir in juice concentrate and lemon juice. Refrigerate until chilled., Stir in wine and ginger ale before serving. Serve over ice with additional watermelon.

1 cup lemonade, from frozen concentrate (12oz)
1 quart cold water
1/2 cup orange juice, from frozen concentrate
1 1/2 quarts lemon-pineapple sherbet
2 cups vanilla ice cream

Steps:

  • Combine juice concentrates and water.
  • Chill.
  • Place sherbet and ice cream in punch bowl.
  • Add juice mix. Stir until sherbet and ice cream partially melts.

WATERMELON CHAMPAGNE PUNCH

1 orange, halved and thinly sliced
1 (48 ounce) bottle cranberry juice or 1 (48 ounce) bottle cranberry-raspberry juice
1/2 small seedless watermelon
1/4 cup confectioners' sugar, more to taste
1/2 lime, juice of
1/2 lime, thinly sliced
4 (750 ml) bottles dry champagne or 4 (750 ml) bottles sparkling wine

Steps:

  • For ice mold, place orange sliced in the bottom of a bundt pan or other decorative mold; pour juice over slices; freeze until solid, at least 8 hours.
  • Scoop 3 cups of melon balls from watermelon, using the small end of a melon baller.
  • Place melon balls in a plastic bag; refrigerate until serving time; cut remaining watermelon flesh into chunks; place in a blender, add sugar and lime juice; process in blender or food processor until smooth; press through a fine mesh strainer; refrigerate in an airtight container until ready to serve.
  • Remove ice ring just before serving by dipping the bottom of the mold in a sinkful of hot water for about 12 seconds; invert over a plate to unmold, gently slide the mold into punch bowl.
  • Pour in half of the chilled puree; pour in champagne from 2 bottles; garnish with melon balls, reserving some for individual punch glasses; replenish the punch with remaining puree and champagne as needed.

1/2 watermelon
2 cups orange juice
1/4 cup lemon juice
1/2 cup sugar
mint leaf (to garnish)

Steps:

  • Scoop out the pulp of the watermelon and remove the seeds. Liquefy the pulp in an electric blender or force through a sieve. You should have 4 cups of juice. Combine with all the remaining ingredients but the mint and pour over ice into a punch bowl or serve from the watermelon shell. Garnish with the mint.
  • NOTE: Rum or cognac may be added.

1 can (12 ounces) frozen lemonade concentrate, thawed

2 liters Mello Yello soda, chilled
2 liters 50/50 or lemon-lime soda, chilled
Ice cubes

Steps:

  • In a large punch bowl, combine the concentrates. Gradually stir in sodas. Add ice.

6 cups watermelon, seedless, cubed
1/3 cup simple syrup
1 (12 ounce) can lemonade concentrate, thawed
2 cups pineapple juice, unsweetened
1 cup water
1/2 cup sugar

Steps:

  • Combine simple syrup and watermelon in a blender; process until smooth. Push mixture through a fine mesh sieve; discarding solids.
  • Return watermelon liquid to blender and add lemonade and pineapple juice. Blend well and serve over crushed ice.
  • To make simple syrup: In a saucepan, combine water and sugar - cook over low heat until sugar dissolves. Bring to a boil; reduce heat and simmer one minute. Remove from heat and cool.
