Gazpacho:
1 pound seedless watermelon, rind removed, coarsely chopped (about 3 cups)
1 large beefsteak tomato, coarsely chopped
1 English hothouse cucumber, peeled, coarsely chopped
1 jalapeño, seeds removed, sliced
2 tablespoons olive oil
2 tablespoons Sherry vinegar or red wine vinegar
Kosher salt, freshly ground pepper
Crema and assembly:
1/4 cup almonds
2 ounces feta, preferably French sheep's milk, crumbled (about 1/2 cup)
1/4 cup sour cream
3 tablespoons whole milk
3/4 pound seedless watermelon, rind removed, cut into 1/2" pieces (about 2 cups)
1/2 English hothouse cucumber, peeled, cut into 1/2" pieces
Olive oil (for serving)
Flaky sea salt (such as Maldon)
Freshly ground black pepper

Steps:

  • Gazpacho:
  • Purée watermelon, tomato, cucumber, jalapeño, oil, and vinegar in a blender until smooth.
  • Transfer gazpacho to a large bowl; season with kosher salt and pepper. Cover and chill at least 1 hour before serving.
  • Do ahead: Gazpacho can be made 1 day ahead. Keep chilled.
  • Crema and assembly:
  • Preheat oven to 350°. Toast almonds on a rimmed baking sheet, tossing occasionally, until golden brown, about 8-10 minutes. (Alternatively, you can do this step in a dry small skillet over medium heat.) Let almonds cool, then coarsely chop.
  • Mash feta into sour cream in a small bowl until mostly smooth, then whisk in milk.
  • Divide watermelon and cucumber among bowls and pour gazpacho over. Top with crema and almonds, drizzle with oil, and season with sea salt and pepper.
  • Do ahead: Crema can be made 1 day ahead. Cover and chill.

1 large tomato, pureed
1/2 serrano chile
2 cups cubed fresh watermelon
1 teaspoon red wine vinegar
1/4 cup extra-virgin olive oil
2 tablespoons minced red onion
1/2 cucumber, seeded and minced
2 tablespoons minced fresh dill, plus more for garnish
Kosher salt and freshly ground black pepper
1/4 cup crumbled feta cheese

Steps:

  • In a blender, puree the tomatoes, chile, and 1/2 of the watermelon. Pour in the red wine vinegar and olive oil and pulse. Add the onion, cucumber and dill and season with salt and pepper. Puree until smooth. Pour into chilled bowls and sprinkle with dill, feta, and remaining watermelon. Serve.

This super refreshing watermelon gazpacho hits the spot on hot summer days. This recipe makes a big batch, so store the leftovers in the fridge for easy lunches all week long.

4 heaping cups cubed seedless watermelon
1 English cucumber, diced, reserve half
3 medium tomatoes, diced, reserve half
1 small red bell pepper, diced, reserve half
⅓ cup chopped green onions, diced, reserve half
1 garlic clove
small handful basil
3 to 4 tablespoons red wine vinegar
3 tablespoons olive oil, plus more for drizzling
1 to 2 teaspoons sea salt, or to taste
½ teaspoon freshly ground black pepper
½ jalapeño pepper, optional
diced avocado, optional
micro greens, optional for garnish

Steps:

  • Set aside the reserved half of the chopped cucumber, tomatoes, red pepper and green onions and place the remaining half in a blender. Add the watermelon, garlic, basil, vinegar, olive oil, salt, pepper and jalapeño pepper, if using. Blend until smooth. Taste and adjust seasonings.
  • Pour into a large bowl (or small individual jars, as pictured) and stir in the reserved chopped vegetables.
  • Chill for 3 to 4 hours or overnight.
  • Drizzle with olive oil and garnish with diced avocado and/or micro greens, if desired, before serving.

2 tablespoons lime juice
1 tablespoon grated lime zest

Tomato and watermelon are an unexpected match, their respective acidity and sweetness mingling to great effect. This soup, adapted from Anya von Bremzen's book "The New Spanish Table," integrates the melon into a bare-bones gazpacho, one of the sovereigns of the high summer table. There are so few ingredients here that the ones you use will really stand out, so try to get the freshest, juiciest tomatoes and sweetest watermelon you can. The chopped celery brings the flavor combination together, so don't leave it out.

4 cups cubed seedless watermelon, about 1 1/4 pounds
1 pound ripe tomatoes, quartered or cut into sixths
2 to 3 tablespoons fresh lemon juice, to taste
2 tablespoons extra virgin olive oil
Generous 1/2 cup chopped celery (2 ounces)

Freshly ground pepper
Thin celery slices or sticks for garnish

  • Working in batches, purée all of the ingredients except the garnish in a blender for two minutes or longer until frothy and smooth.
