1 seedless watermelon, small and ripe
4 ounces feta cheese (or more to taste)
1 cup of fresh mint
1/4 cup olive oil
3 tablespoons balsamic vinegar (the best quality you can find really makes a difference!)
fresh ground black pepper

Steps:

  • Cut watermelon in half and remove watermelon from rind; the easiest way to do this is with a melon baller. Place melon balls into a large mixing bowl. Save the rind to use as the salad bowls for a pretty presentation, scraping out to the same depth all over and cutting a small slice from the bottoms of the outside rinds so that each half will sit evenly on a table.
  • Crumble feta cheese over the watermelon, chiffonade the mint (roll leaves into a cigar and slice thinly across the 'cigar' to get ribbons of mint) and sprinkle over watermelon. Grind pepper to taste over all.
  • To make the dressing, blend or shake the olive oil and vinegar in a jar until emulsified. Pour over watermelon and toss gently. Chill for 30 minutes, spoon carefully into reserved watermelon rind 'bowls' and serve.

The combination of flavors in this salad is about as classic a pairing as mozzarella, tomato, and basil but we've topped ours with Cloud 9 Blackberry Balsamic Vinegar which adds the perfect fruity tang to this sweet and savory dish. This also makes the perfect picnic or BBQ side dish as it keeps well and is a guaranteed crowd-pleaser-and did we mention ridiculously easy to throw together?

1 medium seedless Watermelon
1 Vidalia or Maya Onion, chopped
12 oz crumbled Feta Cheese
1 Medium bunch of mint, minced
1/3 cup Balsamic Vinegar
Juice of 1/2 Lemon
2 TB Olive Oil
Salt and Pepper
1/2 cup toasted slivered almonds (optional)

Steps:

  • Chop watermelon into 1 inch cubes and drain in colander for 1/2 hour. While the watermelon drains mix the balsamic, olive oil, and lemon juice in a small bowl. Mix the watermelon, feta, onion, and mint in a large bowl. Dress and toss to mix. Salt and pepper to taste. Salad does well if the flavors have time to marry and it may be chilled for several hours. It is not as good the second day. A last minute garnish of toasted slivered almonds is nice, but completely optional in case non-nut eaters prefer the salad without.

3 large heirloom tomatoes (about 1 1/2 pounds), cored and cut into chunks, or 2 cups cherry tomatoes, halved
4 cups cubed watermelon
1/2 cup fresh mint, roughly chopped
1/2 cup fresh basil, roughly chopped
2 tablespoons extra-virgin olive oil
2 tablespoons sherry vinegar
Juice of 1 lime
Sea salt and freshly ground black pepper
1/2 cup (about 2 ounces) shaved fresh feta (preferably French)
1 lime, cut into wedges

Steps:

  • Combine the tomatoes, watermelon, mint, basil, olive oil, vinegar, lime juice, and salt and pepper to taste in a large bowl and toss to mix. Cover and refrigerate for several hours. Just before serving, sprinkle the feta over the salad and serve with lime wedges and sea salt for squeezing and sprinkling on top.

16 ounces grape tomatoes (2 cartons ~ cut cherry tomatoes in quarters or grape tomatoes in half lengthwise)
table salt (see directions below for amounts)
1/2 teaspoon sugar
1 medium shallot (minced ~ about 3 tablespoons)
1 tablespoon white wine vinegar
2 tablespoons vegetable oil (or light olive oil)
ground black pepper
1 cup watermelon (cut in 1/2-inch cubes)
4 ounces feta cheese (about 1 cup crumbled)
3 tablespoons fresh mint leaves (rough chopped)

Steps:

  • Toss tomatoes, 1/4 teaspoon salt, and sugar in medium bowl; let stand for 30 minutes.
  • Transfer tomatoes to salad spinner and spin until seeds and excess liquid have been removed, 45 to 60 seconds, stirring to redistribute tomatoes several times during spinning.
  • NOTE 1: If you don't have a salad spinner, after the salted tomatoes stand for 30 minutes, wrap the bowl tightly with plastic wrap and gently shake to remove seeds and excess liquid. Strain the liquid and proceed with the recipe as directed. The amount of liquid given off by the tomatoes will depend on their ripeness. --------.
  • Strain tomato liquid through fine-mesh strainer into liquid measuring cup, pressing on solids to extract as much liquid as possible.

1 cup pomegranate juice
1/2 cup sugar
1 tablespoon pomegranate seeds
6 (1 1/2-by-1 1/2-by-1/4-inch) pieces peeled watermelon
1/2 cup 1/4-inch cubes feta cheese
Coarse salt
Mint Sorbet
1 tablespoon alfalfa sprouts, for garnish

Steps:

  • In a small saucepan, heat pomegranate juice, sugar, and pomegranate seeds over medium-low heat. Simmer, stirring, until sugar has dissolved and mixture has thickened. Strain and discard solids. Let cool to room temperature.
  • Place three pieces of watermelon on each plate; drizzle with pomegranate mixture and sprinkle with a pinch of salt. Divide feta evenly between each plate. Place a small scoop of sorbet on each piece of watermelon. Garnish with alfalfa sprouts; serve immediately.

1/4 cup rice vinegar

  • Now, this salad is incredibly delicious and very unusual. There are three ways we can liberate this watermelon from the rind. There's what's know as the spooners. They don't mess around with any fancy tools; they just scoop it out. There are the cubers - you might be a cuber. They cut off the rind and cut it into squares. It's kind of cool. So, scoop out your watermelon and put it in a bowl, and you're going to add your dressing, which is so simple, it's unbelievably easy. Add your oil, your vinegar, and a couple grinds of black pepper. Yes pepper - this is a savory dish. What about salt? No salt, the feta is salty enough. Mix this all together and chill for 15 minutes, which will give you time to prep your mint and final plate. Were going to chiffanade the mint, which means cut it into fine ribbons. Now we line our plate with light, crispy butter lettuce. Using a slotted spoon arrange the watermelon nicely on the plate. Then crumble over that delicious creamy sheep's milk feta cheese. The salty contrast with the sweet melon is unbelievable. To finish were going with that aromatic fresh mint, which brings it all together. And a little more black pepper at the end so there's a little on the feta.
