THAI-STYLE RICE CRACKERS WITH PERSIMMON SAMBAL



Thai-Style Rice Crackers with Persimmon Sambal image

2 cups boiled white rice (still hot)
3 firm fuyu persimmons
2 tablespoons dried shrimp, soaked in warm water and chopped
1/2 lime, minced (flesh, peel and all)
2 tablespoons fish sauce
2 tablespoons fresh lime juice
1 tablespoon sugar
1 small jalapeno pepper, minced with seeds
1/2 bundle Vietnamese mint or cilantro leaves

Steps:

  • Spread the hot leftover rice in a thin layer on a sheet pan and place in a 200 degree F oven overnight or until dry and crispy. Let the rice continue to dry at room temperature for another day for best results.
  • Break the rice into large chunks and deep fry at 375 degrees F until they puff up and float, approximately 1 minute. Drain on paper towels and set aside.
  • Grate the persimmons on the large hole of a cheese grater, add the remaining ingredients, and adjust seasoning.
  • Let sit for 5 minutes before serving to let flavors blend. Serve the rice crackers with the dip. Best if eaten within 4 hours.

8 oz cream cheese, softened
3 to 4 teaspoons wasabi paste (Japanese horseradish paste)
30 (2-inch) thin rice crackers
30 peeled cooked medium shrimp (about 1 lb), halved lengthwise
1 scallion green, thinly sliced

Steps:

  • Purée cream cheese with wasabi to taste in a food processor until smooth. Mound 1 teaspoon cream cheese mixture on each cracker and top with 2 shrimp halves. Sprinkle with scallion. Serve immediately.

8 cups vegetable oil
1 cup all-purpose flour
1 tablespoon baking powder
1 tablespoon cornstarch
1 teaspoon salt
1 large egg
1/2 cup soda water
1 teaspoon rice wine vinegar
1/2 cup mayo
3 tablespoons wasabi, prepared or powdered mix made to instructions
1 pound 21/25 count shrimp, peeled and deveined
1 lemon, juiced

Steps:

  • For the tempura: To begin, preheat the oil to 375 degrees F, and then begin the batter. In mixing bowl, mix the flour, baking powder, cornstarch and salt together, blending well. Next, add the egg and again mix. Then stir in the soda water and vinegar, and mix for final time. Keep cold until use and stir again before each use.
  • For the sauce: In a bowl, blend the mayo and wasabi, whisking together well to form a smooth sauce. Hold cold until dressing the cooked shrimp.
  • For the shrimp: Slice the shrimp from head to tail, forming 2 even pieces; this will yield 46 total pieces. Next, dip and evenly coat 12 shrimp at a time with the tempura batter, and then place in the hot oil. Cook until fluffy and golden brown, 2 to 3 minutes. Remove and repeat the process with the remaining shrimp.
  • Once all the shrimp are cooked, toss them with the prepared sauce. Remove from the sauce without excess, and finish with lemon juice. Serve.

1 lb shrimp, cooked
chopped scallion
1 (4 ounce) package rice crackers

Steps:

  • Mix the cream cheese and wasabi into a paste-- I did this in a food processor (I added quite a bit more wasabi too).
  • Spread a bit of the cream cheese mixture on a rice cracker.
  • Top with one shrimp and garnish the top with a little chopped scallion.

GINGER TUNA ON RICE CRACKERS WITH WASABI AIOLI



Ginger Tuna on Rice Crackers with Wasabi Aioli image

3/4 pound fresh tuna steak
1-inch-long knob fresh ginger, peeled
2 cloves garlic, 1 sliced and 1 minced
1 teaspoon soy sauce
1/4 cup soy or vegetable oil
1 teaspoon wasabi powder
1/4 cup mayonnaise
1/4 salt and freshly ground black pepper
1 drop green food coloring (optional)
30 tamari-flavored rice crackers
1 teaspoon black sesame seeds
1 small red bell pepper, finely diced
2 tablespoons unsalted butter
2 cups finely diced fresh wild mushrooms; you can use dried mushrooms also
1 small shallot finely chopped
2 cloves finely chopped garlic
1 heaping tablespoon of Boursin Cheese
2 heaping tablespoons grated Asiago Cheese
Salt & pepper to taste
1/2 stick unsalted butter
1 box Phyllo pastry defrosted

Steps:

  • Using a sharp knife, slice the tuna into 1/2-inch strips with the grain, then cut the strips into triangular pieces and place them in a mixing bowl. Puree the ginger with the sliced garlic in the bowl of a food processor. Scrape the sides of the bowl, add the soy sauce, and slowly pour the oil in with the machine running. Drizzle this mixture over the fish and gently toss to cool. Marinate the tuna for a minimum of 4 hours or overnight in the refrigerator. Preheat the oven to 400 degrees. In a bowl, combine the wasabi with a few drops of water, then add the minced garlic and mayonnaise. Add salt and pepper to taste and the green food coloring (if desired) to intensify the color of wasabi. Place the wasabi mayonnaise in a squeeze bottle if available. Remove the tuna from the marinade, place on a greased baking sheet, and bake it for 3 to 4 minutes, until the inside is pink. Or pan-sear in a hot skillet over medium heat for 2 to 3 minutes. Place the pieces of tuna on rice crackers, and top each with a little wasabi aioli. Sprinkle with black sesame seeds and diced red pepper.
  • In a large skillet, melt 2 tablespoons of butter and saute the mushrooms for 15 to 20 minutes until all the moisture is gone. Add the shallots and garlic and saute 2 minutes longer. Remove the skillet from the heat and add in the Boursin, Asiago, salt and pepper. Mix thoroughly and allow it to cool in an uncovered bowl. While the mushroom mixture is cooling prepare the Phyllo. Layer 3 sheets of Phyllo pastry, lightly brushing each layer with melted butter using a pastry brush. Cut the layered Phyllo into 4-inch squares using a pastry wheel or sharp knife. Keep pastry covered with a lightly damp towel until ready to fill. Using a spoon, place a small amount of the mushroom duxelle into the center of each Phyllo square and draw the corners of the squares up to the center and twist. Lightly brush with melted butter and place in a lined baking sheet. Bake for 7 to 10 minutes at 350 degrees.
