Try this vegan tart for a show-stopping centrepiece. The bold red of beetroot against the vibrant green salad also makes it ideal for a meat-free celebration.

400g beetroot, cut into wedges
1 red onion, cut into wedges
3 tbsp olive oil
2 tbsp rice wine vinegar
2 tbsp soft brown sugar
2 star anise
flour, for rolling
500g block puff pastry (we used vegan Jus-Rol)
1 orange, zested
peppery green salad, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a bowl, toss the beetroot and onion in 2 tbsp of the oil, the vinegar and sugar. Add the star anise and season well. Heat the rest of the oil in a large, ovenproof non-stick frying pan, then nestle in the veg so that they cover the surface of the pan. Cover with foil and cook in the oven for 45 mins.
  • On a well-floured surface, roll the pastry to a thickness of 0.5cm and cut out a circle the same size as your frying pan. Carefully take the pan out of the oven, remove the foil and wiggle the beets and onion around in the pan to make a compact layer. Put the pastry on top, tucking it in all around the edges, then return the pan to the oven and bake for 35 mins or until the pastry has puffed up and is a deep golden brown.
  • Slide a palate knife around the edge of the tart, then put a plate on top of the pastry, serving side down. Flip the pan over to turn the tart out onto the plate - be careful not to burn yourself with the handle. Top with the orange zest and a sprinkle of sea salt, then serve with a peppery salad on the side.

Red, Gold, White, and Candy-Striped Beets with Beet Juice Reduction image

If you don't have fun with this dish, you're not doing it right! Go wild with the many different beets out there. I took all I could find at a local farmer's market and made an extraordinary and colorful salad, which I later pared down for an amuse, using colorful beets supplied by Ton Cornille and Sons, my produce vendor, with whom I have worked for more than a dozen years. I serve this in a small paper cup, like the ones you might find at a fast food restaurant for ketchup or relish, and arrange the beets according to color and shape: This amuse is very much about visual appeal. The beet juice reduction provides a little extra kick. Because this holds well, you can make it ahead of time, or you can increase the amounts and take it along on your next picnic.

2 cups red beet juice (see note)
Kosher salt
3 baby red beets
3 baby gold beets
3 baby white beets
3 baby candy-striped beets
1/2 cup olive oil
Freshly ground black pepper
Fresh thyme leaves, for garnishing

Steps:

  • Put the beet juice in a small, heavy-bottomed saucepan and bring to a boil over medium-high heat. Reduce the heat to maintain a simmer and simmer for about 25 minutes or until the juice is reduced to a syrup. Remove from the heat.
  • Strain the reduction through a chinois or fine-mesh sieve into a small bowl. Cover and refrigerate until needed.
  • Preheat the oven to 375 degrees F. Lay out a large piece of aluminum foil. Make a 1/2-inch thick bed of kosher salt on a jellyroll pan.
  • Rinse and dry the beets. Remove all but 1 inch of the stems (leaving the roots and part of the stems prevents the beets from bleeding). Coat the beets with 1 tablespoon of the olive oil and place them on the jelly-roll pan. Wrap the beets with the foil to form a package and set it on the bed of salt.
  • Roast the beets for 30 to 40 minutes or until tender. To test for tenderness, insert a skewer or paring knife into 1 of the beets. If the skewer meets with no resistance, the beets are done.
  • When the beets are cool enough to handle, cut off the roots and stems. If you wish, keep the stems on a few beets for presentation. Slip the skins off the beets with your fingers.
  • Cut the beets into quarters and put them in a medium-sized bowl. Toss with the remaining olive oil and season, to taste, with salt and pepper.
  • To serve, place a few assorted beet quarters inside a small cup, positioning the ones with stems near the top. Drizzle with the red beet juice reduction and garnish with thyme leaves. Repeat to make 5 more servings.

1 medium Yukon Gold potato, peeled, sliced into 1/2" rounds
1 medium sweet potato, peeled sliced into 1/2" rounds
2 medium carrots, peeled, sliced into 1/2" rounds
1 medium parsnip, peeled, sliced into 1/2" rounds
1 small red onion, sliced into 1/2" rounds
1/4 cup olive oil
Kosher salt, freshly ground pepper
1/3 cup sugar
1 tablespoon white wine vinegar
1 1/2 teaspoons chopped fresh rosemary
1 1/2 teaspoons chopped fresh sage
4 ounces fresh goat cheese
1 disk All-Butter Pie Dough
All-purpose flour (for surface)

Steps:

  • Place a rack in lower third of oven; preheat to 400°. Toss potato, sweet potato, carrots, parsnip, and onion with oil on a rimmed baking sheet; season with salt and pepper and arrange vegetables in a single layer. Roast until golden around the edges and tender, 30-35 minutes. Let cool.
  • Meanwhile, cook sugar and 2 tablespoons water in a small saucepan over mediumhigh heat, swirling pan occasionally, until mixture is amber-colored, 5-7 minutes. Remove from heat and add vinegar and a pinch of salt, swirling pan to combine. Quickly pour caramel into a 9"-diameter pie pan; tilt and rotate pan to evenly coat bottom with caramel. Scatter rosemary and sage over top.
  • Arrange potatoes, carrots, and parsnips snugly in a single layer on top of caramel, using smaller carrot and parsnip pieces to fill in any holes. Scatter onion rings and crumble goat cheese over vegetables.
  • Roll out dough on a lightly floured surface to a 12" round. Drape over vegetables, tucking edges into pan. Prick dough all over with a fork. Bake until crust looks dry, about 20 minutes; reduce heat to 350° and bake until crust is golden brown, 15-20 minutes.
  • Let tart cool 5 minutes before inverting carefully onto a large plate.
  • Do ahead: Vegetables can be roasted 4 hours ahead. Keep at room temperature.

8 fresh beets
Cooking spray
1-1/2 cups orange juice
1 shallot, chopped
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/2 teaspoon grated orange zest
1/8 teaspoon salt
1/8 teaspoon pepper
6 cups fresh arugula or baby spinach
3 tablespoons crumbled blue cheese
3 tablespoons chopped hazelnuts, toasted

Steps:

  • Scrub and peel beets. Cut into wedges; place on a baking sheet coated with cooking spray. Spritz beets with additional cooking spray until coated. Bake at 350° for 40-50 minutes or until tender, turning occasionally., Meanwhile, for dressing, heat orange juice over medium heat in a small saucepan. Bring to a boil. Reduce heat; simmer, uncovered, until liquid is syrupy and reduced to about 1/3 cup. Remove from heat. Whisk in next 7 ingredients. Set aside to cool., Just before serving, place arugula in a large bowl. Drizzle with 1/4 cup dressing; toss to coat. Divide mixture among 6 salad plates. Place beets in the same bowl; add remaining dressing and toss to coat. Arrange on plates. Sprinkle salads with blue cheese and hazelnuts.

All-purpose flour, for dusting
Pate Brisee
1 1/2 pounds beets (without greens), preferably a combination of red, golden, and Chioggia
2 tablespoons extra-virgin olive oil, plus more for drizzling
Coarse salt and freshly ground pepper
1 pound fresh goat cheese, room temperature
Scant 1/2 cup ricotta cheese (4 ounces)
2 teaspoon finely chopped fresh thyme, plus about 1 teaspoon whole leaves
1/2 cup grated fontina cheese (about 2 ounces)

Steps:

  • Preheat oven to 375 degrees. On a lightly floured surface, roll out dough 1/8 inch thick. Press firmly into a 13-by-9-inch rimmed baking sheet, leaving a 1-inch overhang on all sides. Tuck overhang under to create a double thickness; press firmly against pan. Pierce bottom of shell all over with a fork. Refrigerate or freeze until firm, about 30 minutes.
  • Line shell with parchment; fill with pie weights or dried beans. Bake until golden brown, about 30 minutes. Remove weights and parchment. Transfer to a wire rack to cool completely. (Keep oven on.)
  • Trim all but 1/2 inch of stems from beets; rinse well. Toss with oil and 1 teaspoon salt. Transfer to a rimmed baking sheet; cover with parchment, then tightly with foil. Roast until beets are tender, 45 minutes to 1 hour. When cool enough to handle, peel beets with a paring knife. Cut into thin rounds. Raise heat to 425 degrees.
  • Stir together goat cheese, ricotta, and chopped thyme until well combined; season with pepper. Spread mixture over tart shell, filling all the way to edges.
  • Arrange beets over cheese mixture, overlapping slices slightly and alternating colors, if possible. Lightly season with salt. Sprinkle fontina and whole thyme leaves on top. Lightly drizzle with oil, and season with pepper. Bake until golden brown, about 25 minutes. Serve warm.

ENDIVE TARTE TATIN WITH BURRATA



Endive Tarte Tatin With Burrata image

A savory take on the classic apple tarte tatin, this version features unexpected bitter endive, which mellows and sweetens as it cooks. The tart slices are served topped with milky burrata to complement the caramelized endive and buttery pastry, but they're equally as lovely without it. The tart can be enjoyed warm or at room temperature, making it a perfect make-ahead entree or side for entertaining.

All-purpose flour, for surfaces
1 (14-ounce) package frozen puff pastry, thawed
6 tablespoons unsalted butter
3 tablespoons turbinado sugar, or granulated sugar
6 large endive (1 ½ pounds), halved lengthwise through the core
Salt and black pepper
2 tablespoons lemon juice
1/4 cup chopped chives, plus more for garnish
2 (8-ounce) balls burrata cheese

Steps:

  • Heat oven to 425 degrees. On a lightly floured work surface and using a floured rolling pin, roll out pastry to a 12-inch square about 1/8-inch thick. Transfer to a sheet tray and keep refrigerated until ready to use.
  • In a 12-inch high-sided ovenproof skillet, melt butter over medium-low. Add 2 tablespoons of the sugar and stir until mostly dissolved. Add endive, season with salt and pepper, and cook, turning occasionally, until coated in the butter and wilted along the edges, 5 minutes. Arrange endive cut side down, cover and cook until softened and golden, 10 minutes longer. Carefully flip over endive, sprinkle the cut side with the remaining 1 tablespoon sugar, then turn over again so they are cut side down in a single layer. Drizzle over lemon juice, scatter over chives, and season with salt and pepper. Top endive with the pastry, tucking the edges into the sides of the skillet. Prick pastry all over with a fork.
  • Bake until pastry is puffed and deeply golden, about 30 minutes. Remove from oven and let stand for 5 minutes. Run a knife along the edge of the pastry to loosen it from the pan. Place a serving plate over the pan. Using oven mitts, grip the plate and pan tightly together and swiftly flip over. Gently lift away the skillet and replace any endive that may have moved out of place.
  • Cut tart into wedges and transfer to plates. Top each piece with some burrata, and garnish with chives and black pepper. Serve warm or at room temperature.
