Red and Black Pepper Crusted Filet Mignon with Honey-Mustard, Horseradish, Mint Sauce and Frisee Salad with Warm Vinaigrette and Poached Egg image

Number Of Ingredients 19

3 tablespoons olive oil
3 slices country bread, crusts removed and cut into 1/8-inch dice
Salt and freshly ground pepper
1/2 pound slab bacon cut into 1/2-inch lardons
2 shallots, thinly sliced
2 cloves garlic, finely sliced
1/4 cup white wine vinegar
8 cups frisee, washed, dried and cut into bite sized pieces
4 poached eggs
4 (3 to 4-ounce) filet mignon
Kosher salt
2 teaspoons ancho chile powder
2 teaspoons coarsely ground black pepper
1 tablespoon plus 1 teaspoon olive oil
2 tablespoons Dijon mustard
2 tablespoons honey
1 tablespoon freshly grated horseradish or prepared (drained)
1 tablespoon finely chopped fresh mint

Steps:

  • Heat oil in a large saute pan over medium high heat. Add the bread cubes and season with salt and pepper. Cook until golden brown and place on a plate lined with paper towels. Heat a medium saute pan over high heat. Add the bacon and cook until golden brown. Remove bacon with a slotted spoon to a plate lined with paper towels. Add the shallots and garlic to the pan and cook until soft. Add the vinegar and cook for 30 seconds. Season with salt and pepper to taste. Place the frisee, croutons, and bacon in a bowl add the vinaigrette and toss to coat. Divide the salad onto 4 plates and top with a poached egg.
  • Season filet with salt on both sides. Sprinkle 1 side of each filet with 1/2 teaspoon of the ancho chile powder and 1/2 teaspoon of the coarsely ground black pepper. Heat the olive oil in a large saute pan over high heat until almost smoking. Place the filet, pepper-side down in the pan and saute for 2 to 3 minutes or until a crust forms. Turn the filet over, reduce heat to medium and continue cooking until desired doneness, 2 to 3 minutes for medium-rare. Let rest 2 to 3 minutes before serving, spoon 1 tablespoon of the sauce over each steak.
  • Combine all ingredients in a small bowl and season with salt to taste.

1 tablespoon olive oil
3 tablespoons Dijon mustard
2 tablespoons maple syrup
1 tablespoon minced fresh sage leaves
1/4 teaspoon salt
1/8 teaspoon pepper
2 small sweet potatoes, peeled, cut into 1/4-inch thick disks
Cooking spray
1/4 cup Mexican mint marigold (or tarragon), packed
2 cloves minced garlic
1 tablespoon grated Parmesan
2 tablespoons chopped pecans
1/4 cup chicken stock or water
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
6 tablespoons chevre (goat cheese)
4 tablespoons fat-free half-and-half
4 (5 to 6-ounce) lamb loin chops
Salt
Pepper

Steps:

  • Sweet Potatoes:
  • Preheat the oven to 365 degrees F.
  • Combine the first 6 ingredients. Toss with the sweet potatoes. Place the sweet potatoes in a single layer on a sprayed baking sheet. Roast for 20 to 25 minutes until beginning to brown.
  • Pesto:
  • Combine all ingredients in a food processor or blender and puree.
  • Goat Cheese Sauce:
  • Combine the goat cheese and half-and-half in a small saucepan and heat over low heat until goat cheese is melted and sauce is warm.
  • Lamb:
  • Preheat a grill or grill pan over high heat.
  • Season the lamb with the salt and pepper. Grill to desired doneness, about 3 minutes per side for medium rare.
  • To serve, divide the sweet potatoes onto 4 plates, loosely stacking them towards the center. Position a lamb chop on each stack. Drizzle pesto around the potatoes. Spoon goat cheese sauce over lamb.

3 tablespoons Dijon mustard
2 tablespoons white wine vinegar
2 teaspoons sugar
3 tablespoons (packed) chopped fresh dill
3 tablespoons olive oil
2 tablespoons whipping cream
16 bay beets, stems trimmed to 2 inches
12 pickled herring fillets, halved lengthwise
Fresh dill sprigs

Steps:

  • Whisk mustard, vinegar and sugar in medium bowl to blend. Mix in chopped dill. Gradually whisk in oil, then cream. Season sauce with salt and pepper. (Can be made 1 day ahead. Cover and chill. Bring to room temperature before using.)
  • Preheat oven to 400°F. Wrap beets in foil. Bake until tender, about 1 hour. Cool to room temperature in foil. Peel beets and halve lengthwise.
  • Pour some of sauce into center of each of 4 plates. Arrange roasted beets and herring around sauce. Garnish with fresh dill sprigs. Serve, passing remaining sauce separately.

1 1/2 tablespoons vegetable oil
1 medium onion, minced
1 medium green bell pepper, seeded and minced
1 teaspoon garlic, minced
1/4 teaspoon celery seed
1/2 cup Dijon mustard

Steps:

  • Heat the oil in a saucepan.
  • Add the onion and pepper.
  • Cook until just soft (do not brown).
  • Add the garlic, celery seed and Dijon.
  • Heat for 1 minute, stirring constantly.
  • Remove from the heat and allow the sauce to sit for 15 minutes.

1 cup dry white wine
1/2 cup champagne vinegar, or other mild-flavored vinegar such as rice-wine vinegar
2 large egg yolks
1/2 cup extra-virgin olive oil
1 tablespoon Dijon mustard
Coarse salt and freshly ground pepper

Steps:

  • Combine wine and vinegar in a small saucepan. Bring to a simmer over medium-high heat. Reduce heat to medium, and simmer until liquid is reduced by three-quarters, about 12 minutes.
  • Set a heat-proof bowl, or the top of a double boiler, over a pan of simmering water. Transfer the liquid to the bowl. Lightly beat egg yolks, and whisk them into the wine reduction, whisking constantly until the mixture is thick enough to form ribbons, about 3 minutes.
  • Remove from heat, and slowly add olive oil, pouring in a steady stream and whisking constantly until all the olive oil is incorporated. Whisk in mustard, and season with salt and pepper. Serve immediately.
