⅔ cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon ground nutmeg, or more to taste
⅛ teaspoon salt
¼ cup milk
½ teaspoon vanilla extract
5 tablespoons softened butter
⅓ cup white sugar
1 egg
⅓ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease miniature muffin cups or line with paper liners.
  • Whisk flour, baking powder, nutmeg, and salt together in a bowl. Stir milk and vanilla extract together in a separate bowl. Beat butter and 1/3 cup white sugar together in a third bowl using an electric mixer until smooth and creamy; beat in egg.
  • Stir flour mixture, alternating with milk mixture, into butter mixture until batter is smooth. Spoon batter into a piping bag and pipe into muffin cups, about 2/3-full.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 10 to 12 minutes.
  • Mix 1/3 cup white sugar and cinnamon together in a bowl; add warm doughnuts and gently toss with hands until coated.

1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground cinnamon or allspice
Rounded 1/4 teaspoon salt
1/2 cup packed light brown sugar
1/2 cup well-shaken buttermilk
2 tablespoons unsalted butter, melted
1 large egg
About 6 cups vegetable oil for frying
Confectioners sugar for coating (optional)
a deep-fat thermometer

Steps:

  • Sift together flour, baking powder, baking soda, spices, and salt into a bowl. Whisk in brown sugar, breaking up any lumps. Whisk together buttermilk, butter, and egg in a small bowl, then add to flour mixture, whisking until just combined.
  • Heat 2 inches oil in a deep 3-quart heavy saucepan until it registers 375°F on thermometer. Working in batches of 6, scoop out a rounded teaspoon (not a measuring spoon) of batter per doughnut and scrape batter from spoon into oil with another spoon, keeping ball as round as possible. Once 6 balls are in oil, turn them over with a slotted spoon and continue to cook, turning occasionally, until deep brown and cooked through, 1 1/2 to 2 minutes. Transfer doughnuts as fried with slotted spoon to paper towels to drain and return oil to 375°F between batches. Cool doughnuts to warm, at least 10 minutes.
  • If desired, coat with confectioners sugar just before serving: Put sugar in a small sealed plastic bag and shake doughnuts, a few at a time, to coat.
