1 pound thin asparagus spears
1 tablespoon extra virgin olive oil
1 ounce shaved Parmesan cheese
freshly ground black pepper to taste
ΒΌ cup balsamic vinegar, or to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Place asparagus on a baking sheet. Drizzle with olive oil, and toss to coat. Arrange asparagus spears in a single layer. Spread Parmesan cheese over asparagus, and season with freshly ground black pepper.
  • Bake 12 to 15 minutes in the preheated oven, until cheese is melted and asparagus is tender but crisp. Serve immediately on warm plates, sprinkling with balsamic vinegar to taste.

Flour
1/4 cup panko (Japanese breadcrumbs)
2 tablespoons olive oil
Simply Steamed Asparagus
Salt
Lemon wedges

Steps:

  • Slice a 5-ounce fresh goat cheeselog into 4 disks; dredge in flour,then in 1/4 cup panko (Japanese breadcrumbs).Freeze for 15 minutes.

1 1/2 pounds fresh asparagus
Salt to taste if desired
1/4 cup freshly grated Parmesan cheese
1/4 cup melted butter

Steps:

  • Cut off and discard about 2 inches of the stem ends of the asparagus. The remaining spears should be about 6 inches long.
  • Bring about 2 quarts of water to a boil in a saucepan and add salt.
  • Preheat the broiler to high.
  • Add the asparagus to the water. When the water returns to a boil, let cook 3 minutes or to the desired degree of doneness. Cooking time will depend on the size of the asparagus. Drain quickly.
  • Arrange the asparagus in overlapping layers on a baking dish. Sprinkle evenly with cheese and butter. Place under the broiler for about 2 1/2 minutes or until the cheese is glazed.

We had this simple, delicious starter in a Bali restaurant recently. I've since made it at home to rave reviews.

2 bunches asparagus, trimmed of woody ends (thick spears)
125 g butter (no substitute)
4 garlic cloves, crushed (I actually grate mine on my microplane grater)
salt and pepper
40 g parmesan cheese, grated (finely)

Steps:

  • Bring a pan of water to the boil, drop the asparagus in and cook for about 2 minutes or until just, just tender crisp. Plunge into iced water to stop them cooking, then drain.
  • Melt the butter in a large frying pan over medium heat, add the garlic and cook for a minute until fragrant.
  • Season with salt and pepper, the add the asparagus to the pan, tossing and turning gently in the butter until hot.
  • Divide amongst 4 plates, then sprinkle each serve with the cheese.
  • We liked crusty bread to mop up the rest of the garlic butter, but it's up to you!

1 lb fresh tender asparagus
2 tablespoons butter
2 tablespoons flour
1 cup warm milk
1 cup shredded cheddar cheese
1/2 teaspoon salt (or to taste)

Steps:

  • In a large micro-wave safe glass bowl, heat butter about 50 seconds on high, or until melted.
  • Whisk in the 2 tablespoons of flour and 1 cup of heated milk.
  • Add 1 cup shredded cheddar cheese.
  • Place in microwave and cook on high for 2 minutes, pausing to whisk thoroughly every 30 seconds.
  • Season to taste with salt and whisk again.
  • Set cheese sauce aside.
  • Bend asparagus until they break at a natural point; discard ends.
  • Place asparagus spears in a microwavable glass covered dish, with half the spears going one way, and half the spears going the other way.
  • Add 1/4 cup water to the dish.
  • Cook, covered, for 6-7 minutes on high, pausing to turn dish every 2 minutes and checking asparagus for doneness.
  • Reheat sauce for 1 minute on high before adding to asparagus, if necessary (you may not need all the sauce).

Warm Asparagus, Melted Cheese image

I have used Taleggio, Camembert, and English Tunworth from Hampshire as an impromptu "sauce" for warm asparagus with great success. A very soft blue would work as well.

thick, juicy asparagus spears - 24
a little olive oil or melted butter
soft, ripe cheeses such as St. Marcellin or any of the above - 2

Steps:

  • Bring a deep pan of lightly salted water to a boil. Trim any woody ends from the asparagus and lower the spears gently into the water as soon as it is boiling. Cook for four or five minutes, until tender enough to bend. Lift the spears out with a slotted spoon and lower them into a shallow baking dish. Brush them lightly with olive oil or melted butter.
  • Preheat the broiler. Slice the cheese thickly-smaller whole cheeses can simply be sliced in half horizontally-and lay them over the top of the spears. Place under a hot broiler for four or five minutes till the cheese melts. Eat immediately, while the cheese is still runny.

1/2 cup freshly grated Parmesan (about 1 1/2 ounces)
1/4 cup mayonnaise
1 pound thin asparagus
4 slices Italian or other white bread
2 teaspoons unsalted butter, softened
1/4 pound sliced cooked ham

Steps:

  • Preheat broiler.
  • In a small bowl stir together Parmesan and mayonnaise. Trim asparagus to fit bread and arrange asparagus in a skillet just large enough to hold it in one layer. Add 1/2 inch salted cold water and cook asparagus, covered, over moderately high heat 5 minutes, or until just tender. In a colander drain asparagus well.
  • Arrange bread on a baking sheet and butter top of each slice. Broil bread about 6 inches from heat until golden, about 2 minutes. Turn bread over and arrange ham on each slice, folding or trimming to fit if necessary. Arrange asparagus on ham and spread with Parmesan mixture. Broil sandwiches about 3 inches from heat until golden, 1 to 2 minutes.
