ITALIAN BOWTIE PASTRY (WANDAS)

Steps:
- In one bowl, mix flour, salt and sugar.
- In a separate bowl, blend egg, butter and vanilla.
- Make a well in the dry ingredients and add the egg mixture, mix until a stiff dough forms.
- Add sherry a tablespoon at a time until the dough becomes smooth and pliable.
- Cover and chill 2 hours.
- Roll out chilled dough on a floured surface to 1/8 inch.
- Cut narrow strips and twist into loose knots.
- Fill deep fryer or heavy pot with 1-1/2 to 2 inches of oil.
- Heat to 375 degrees F.
- Fry cookies until they puff and turn golden brown (about 2 minutes).
- Drain on paper towels or brown bags.
- Dust with sugar while still warm.
WANDA'S CAKE
This was my mother Wanda's Cake It came from a old cookbook my mother had and mom would alway's make this for Homecoming. Everyone has their own copy of the recipe now and mom has since passed away and when making our church cookbook we added this recipe to the cookbook and called it Wanda's cake.

- Pre-Heat oven 350* Cake; Mix together flour,sugar,milk,oil,eggs.and vanilla and bake in two greased round layer pans at 350*. Until done- about 25-30 minutes. Cool cakes.
- Frosting; Mix together sugar, evaporated milk,butter and bring to a boil and boil slowly for 10 minutes. Remove from heat and add 1 cup miniture marshmallows and whip with spoon until cool.
- Remove cakes from pans, place one layer on cake plate. Frost top of first layer of cake then place second layer on top and continue to frost top and sides of cake. Frost cake when icing is thick enough to spread on cake layers.
WANDA'S BUTTER CAKE
This is a fantastic dessert given to me by our granddaughter, Jamie's other grandmom! It is a treasure! So is Wanda!

- Mix butter, cake mix and egg.
- Press into bottom of 9 x 13 pan.
- Mix cream cheese, sugar and eggs; beat well.
- Pour over crust.
- Bake at 325°F degrees for 25 minutes.
- Center will be soft.

BANANA CUPCAKES

- In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla and bananas. Combine the flour, baking powder, baking soda and salt; add to banana mixture alternately with buttermilk, beating well after each addition., Fill 18 paper-lined muffin cups two-thirds full. Bake at 350° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Remove to wire racks to cool completely. , In a small bowl, cream butter and confectioners' sugar until light and fluffy; add enough milk to achieve desired spreading consistency. Frost cupcakes. Garnish with sprinkles if desired.
