This moist, sweetly spiced pumpkin bread serves up all the flavors of fall! Topped with a layer of crumbly streusel, it makes a delicious treat served with coffee at breakfast, or a sweet dessert.

½ cup Finlandia Perfectly Salted Butter, softened
½ cup sugar
¼ cup light brown sugar, packed
1 teaspoon vanilla extract
2 eggs
1 cup pumpkin puree (plain)
¼ cup whole milk
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon nutmeg
¼ teaspoon ground ginger
¼ cup cold Finlandia Perfectly Salted Butter, cubed
¼ cup light brown sugar
¼ cup quick cooking oats
¼ cup flour
½ cup walnuts, chopped

Steps:

  • Preheat oven to 350 degrees F.
  • Assemble topping by mixing butter, light brown sugar, oats, flour, and walnuts together in a bowl, and cream together using a fork to form large crumbles. Set aside.
  • In a large bowl, cream together the butter and white sugar with a hand mixer. Add light brown sugar, vanilla, eggs, and pumpkin puree. Mix until incorporated.
  • In a separate bowl, sift together flour, baking soda, baking powder, salt, and spices.
  • With mixer on low speed, add half of the dry mix to the wet ingredients and mix until incorporated. Continue by adding the remainder of the dry ingredients and the milk to the batter, mix together until the batter is smooth (be careful not to over mix).
  • Pour batter into a greased loaf pan and sprinkle with streusel topping.
  • Place on middle rack of oven and bake for 65 minutes or until a toothpick comes out clean. Remove bread from oven and allow to cool completely before serving.

1/2 cup all-purpose flour
1/4 cup packed light brown sugar
1/4 teaspoon ground cinnamon
Pinch of Kosher salt
4 tablespoons cold butter
Bread
8 tablespoons (1 stick) melted butter
1 1/2 cups granulated sugar
1 cup pumpkin purée
1/3 cup milk
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon Kosher salt
1 teaspoon ginger
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon baking powder
1/2 cup chopped toasted walnuts
12 whole walnut halves for decorating the top of the loaf

Steps:

  • Preheat the oven to 350 F with the rack positioned in the bottom third of the oven. Butter a 9" x 5" loaf pan. To make the streusel: Stir together the flour, brown sugar, cinnamon and salt in a small mixing bowl. Using a pastry blender or 2 forks, cut in the butter until it creates pea-sized crumbs. Set aside. To make the bread:In a medium sized mixing bowl, whisk together the melted butter, sugar, pumpkin, milk, eggs and vanilla until combined. In another mixing bowl, sift together the flour, cinnamon, baking soda, salt, ginger, nutmeg and baking powder. Add the flour mixture to the pumpkin mixture and mix with a rubber spatula just until combined. Do not overmix. Spoon half the batter into the prepared loaf pan. Spread the streusel over the batter and cover with the remaining batter. Place the walnut halves over the surface of the bread. Bake until the top is golden brown and a toothpick inserted into the center comes out clean, 65 to 70 minutes. Transfer the pan to a wire cooling rack and let cool for 15 minutes. Using a thin knife or spatula, release the bread from the pan and let cool to room temperature.

Bread:
9 ounces all-purpose flour (about 2 cups)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
5 tablespoons butter, softened
2/3 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup fat-free buttermilk
Baking spray with flour (such as Baker's Joy)

Steps:

  • 1. Preheat oven to 350°. 2. To prepare streusel, combine first 5 ingredients in a medium bowl. Add 2 tablespoons melted butter, stirring until well combined. Stir in nuts. Set aside. 3. To prepare bread, weigh or lightly spoon 9 ounces flour into dry measuring cups; level with a knife. Combine flour, baking soda, baking powder, and 1/2 teaspoon salt in a bowl, stirring well with a whisk. Combine 5 tablespoons butter and granulated sugar in a large bowl; beat with a mixer at medium-high speed until well blended. Add eggs, 1 at a time, beating well after each addition; beat in vanilla. Beating at low speed, add flour mixture and buttermilk alternately to sugar mixture, beginning and ending with flour mixture; beat just until combined. Scrape half of batter into a 9 x 5-inch loaf pan coated with baking spray; sprinkle with half of streusel mixture. Spread remaining batter over streusel; swirl. Sprinkle remaining streusel on top of batter. Bake at 350° for 50 minutes or until a wooden pick inserted in center comes out with moist crumbs clinging. Cool 10 minutes in pan on a wire rack. Remove from pan; cool completely on wire rack.
