CREAMY RICE PUDDING
This is my mom's recipe for Rice Pudding. It's the best I've ever tasted and it gets rave reviews from everyone I serve it to. Sprinkle with nutmeg or cinnamon, if desired. For creamier pudding, use short or medium grain rice.

Steps:
- Bring 1 1/2 cups water to a boil in a saucepan; stir rice into boiling water. Reduce heat to low, cover, and simmer for 20 minutes.
- In a clean saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg, and raisins; cook 2 minutes more, stirring constantly. Remove from heat and stir in butter and vanilla.

MUM'S CUSTARD RAISIN RICE PUDDING
This was my mum's recipe. Whenever I make this, it brings me right back to my childhood. So comforting and tasty! I LOVE it! :)

Steps:
- Beat eggs slightly. Add sugar, nutmeg, salt and vanilla; beat until blended.
- Add hot milk gradually, stirring constantly.
- Stir in rice and raisins.
- Pour into buttered 1 1/2 quart casserole or baking dish; set dish in larger pan filled with 2 inches of boiling hot water.
- Sprinkle top of pudding with a little nutmeg.
- Bake in moderate oven, 350 F for 1 hour or until set.
- NOTE: 1 1/2 hours cooking time includes both prep and bake time.
WALNUT RAISIN BROWN RICE PUDDING
I'm always cutting out recipes to try, but always changing them to suit my own taste. I like recipes that use ingredients that you usually have on hand and is fast and easy...and of course taste gooood! This low calorie rice pudding has been family tested and approved and can be whipped up in no time.

- 1. Combine eggs, milk, sugar, vanilla and cinnamon in a mixing bowl. Beat until well combined (but not foamy).Stir in rice, raisins and walnuts. Pour into a 1 1/2 quart ovenproof dish. Place dish in a larger baking dish or pan. Pour boiling water into the backing dish (being careful not to get water in the pudding mixture) to a depth of approx. 1 inch.
- 2. Bake in preheated 350 degree oven for 45 to 55 minutes, until a knife inserted near center comes out clean.Serve warm or at room temperature. Garnish with whipped topping or ice cream.
- 3. Note: You can, also use dried cherries or craisins. Pecans or Almonds for a change or whatever you happen to have on hand.

Steps:
- Combine rice, water and salt in 3-quart saucepan.
- Bring to a vigorous boil. Reduce heat, cover and simmer until all water is absorbed, about 3 minutes.
- Combine sugar and cornstarch.
- Add milk, sugar mixture and raisins to rice.
- Heat to boiling; boil 1 minute, stirring constantly.
- Remove from heat. Stir in butter and vanilla.
- Slowly stir about 1 cup of the hot rice mixture into egg yolks in bowl.
- Stir into remaining mixture in saucepan.
- Cook over medium heat, stirring frequently, just until mixture starts to bubble.
- Serve warm or chilled. Garnish with cinnamon and nutmeg.
