Walnut and Brie Tartlets with Grape Salsa image

Number Of Ingredients 11

1 cup seedless red grapes, cut in half
1/4 teaspoon kosher salt
2 tablespoons finely chopped green onion, green part only
1 tablespoon balsamic vinegar
2 teaspoons walnut oil
1/4 teaspoon chopped fresh rosemary
1/4 teaspoon minced garlic
1/8 teaspoon pepper
48 (11/2- inch) round savory pastry shells
1/2 cup walnuts, toasted and chopped
8 ounces Brie, rind removed

Steps:

  • Preheat the oven to 300 degrees. Put the grapes and kosher salt in a food processor and pulse until the grapes are coarsely chopped. Transfer to a strainer; let sit for a least 10 minutes. Mix the green onion, vinegar, oil, rosemary, garlic and pepper together in a small bowl. Add the grapes and mix well. ASSEMBLY: Arrange the shells on a baking sheet and fill each with 1/2 teaspoon walnuts, 1/2 teaspoon Brie, and 1/2 teaspoon grape salsa (use a fork to transfer the salsa to the shells to avoid capturing too much liquid). Bake until cheese begins to melt, about 5 minutes; do not overbake.

Phyllo Tartlets with Smoke Salmon Rillettes image

100 phyllo tartlett shells
1 side smoked salmon, minced
1 small red onion, chopped fine
1 bunch chives, chopped very fine
1 cup capers, rough chopped
2 cups aioli
1 jar domestic osetra caviar
2 cups plain yogurt, drained
2 Tbs. fresh dill, chopped fine
fresh juice from 2 lemons
salt and pepper to taste
dill to garnish

Steps:

  • Preheat oven to 400 F. Place tartlett shells on a sheet tray and bake until golden brown. Let cool.
  • Mince salmon in a food processor. In a medium bowl, mix salmon, onion, chives, capers, aioli and a touch of lemon. Season with salt and pepper to taste. Refrigerate until use.
  • In a small bowl, mix yogurt, dill, lemon, salt and pepper. To serve, fill each shell with a spoon of salmon mixture. Top with a refined amount of caviar and tiny dollop of yogurt. Garnish with dainty dill sprig.

Another Bunco Group hit! I adapted this recipe from one of the cookbooks that you purchase in the grocery store while checking out. These are easy and simple to make with store bought miniature phyllo tartlets. In a pinch, you can make your own phyllo cups using phyllo sheets and a mini muffin pan.

24 frozen miniature phyllo tart shells
1/4 cup blueberries or 1/4 cup blackberry preserves
1/3 cup coarsely chopped walnuts, toasted
1 (8 ounce) package brie cheese, rind removed cut into 24 chunks
fresh blueberries (to garnish)

Steps:

  • Preheat oven to 350*.
  • Bake coarsely chopped walnuts in an ungreased shallow pan for 6 to 10 minutes, stirring occasionally, until golden brown.
  • Grease or spray 2 mini muffin pans and place the phyllo cups inside.
  • Spoon 1/2 teaspoon of preserves into the tartlets.
  • Top with rounded 1/2 teaspoon nuts and cheese.
  • Bake 8 - 10 min or until heated through.
  • Cool in pan on cooling racks for 5 minutes; remove from pan.
  • Garnish with fresh blueberries.

2 tubes (8 ounces each) refrigerated crescent rolls
6 ounces Brie cheese, rind removed
1 cup whole-berry cranberry sauce
1/2 cup chopped pecans

Steps:

  • Preheat oven to 375°. Unroll one tube of crescent dough into one long rectangle; press perforations to seal. Cut into 24 pieces; lightly press each piece onto the bottom and up sides of an ungreased mini-muffin cup. Repeat with remaining crescent dough., Place about 1 rounded teaspoon cheese in each cup; top with cranberry sauce and sprinkle with pecans. Bake 10-15 minutes or until golden brown. Serve warm.
