A delicious and refreshing summertime salad! A lime Jell-o salad, made creamy by lemon pudding. Can use one can of lemon pudding instead of the prepared lemon instant pudding. Posted in response to a request. Servings and times are estimates.

1 (6 ounce) box lime Jell-O gelatin (or 2 3-oz boxes)
2 cups boiling water
1 1/4 cups cold water
1 (3 ounce) box instant lemon pudding
2 cups milk
2 cups diced apples, unpeeled for color
1/2 cup chopped walnuts

Steps:

  • Dissolve lime Jell-O in the 2 cups boiling water.
  • Stir in the 1 1/4 cups cold water; Chill until almost set; 1 to 1 1/2 hours.
  • In large bowl, prepare the lemon pudding with the milk, according to package directions; Let set in refrigerator for 5 minutes.
  • Combine the prepared pudding and the partially set Jell-O and blend; Beat with electric mixer on medium speed for 2 minutes.
  • Fold in the diced apples and walnuts; Pour into a 9x13-inch glass baking dish or large serving bowl or mold; Chill until set.
  • Serve as is, or with a dollop of Cool Whip or mayonnaise on top of each serving.

2 (3 ounce) boxes red Jell-O (raspberry and black cherry work well)
2 cups boiling water
1 1/2 cups cold water
2 teaspoons fresh lemon juice
1 1/2 cups diced unpeeled red apples
1/2 cup diced celery
1/2 cup chopped walnuts

Steps:

  • Mix dry Jello with boiling water with a whisk to dissolved and stir in cold water.
  • Let set in fridge till syrupy (can speed this up by setting bowl in another bowl filled with ice water for about 20 minutes).
  • Add the diced apples, celery, and nuts.
  • Pour into a glass dish (can be a bowl, 7x11, oval dish- a 9x13 is makes the squares too thin).

My absolute favorite salad at any restaurant. Unlike a typical Waldorf in that they serve it with Dijon Balsamic Vinaigrette rather than a creamy dressing. So easy to throw together, too - grill the chicken a day before or even while putting together the salad ingredients! Makes 2 dinner-sized salads - adjust the amounts accordingly if you prefer less greens. The dressing recipe makes more like 8 servings as I like to keep extra on hand. I hope you enjoy it!

2 grilled chicken breasts, chilled (may use pre-packaged, pre-sliced if in time crunch, although home-grilled is always best)
6 cups mixed baby greens
1/2 cup red seedless grapes, halved
1 granny smith apple, chopped in bite-sized pieces
1/2 cup celery, diced (I omit this due to personal preference)
1/2 cup candied walnuts (don't skip, the best part!)
crumbled gorgonzola
1/2 cup balsamic vinegar
2 tablespoons Dijon mustard
1 tablespoon garlic, minced
1/2 teaspoon fresh ground black pepper
1/4 teaspoon salt
1 cup olive oil (I tend to decrease the oil and it's still tasty)

Steps:

  • For dressing:.
  • Whisk together all ingredients well.
  • Chill until serving.
  • Store in refrigerator for up to 2 weeks, shake or whisk prior to serving. (It may store longer than this, but it never stays around long enough without being eaten for me to know!).
  • For the salad:.
  • Toss field greens, fruits and celery, if included, in desired amount of dressing.
  • Place evenly divided portions on two large, chilled plates.
  • Top with sliced, chilled chicken breast, candied walnuts, and Gorgonzola.
  • Voila! Enjoy!

FROZEN WALDORF SALAD

While I was growing up on a farm in western Kansas, we always had lots of hungry men around during harvesttime. This salad is one we served often since it was easy to increase and we could prepare it ahead of time.

1 can (20 ounces) crushed pineapple
1 cup sugar
2 large eggs, beaten
Dash salt
1 cup chopped celery
2 medium red apples, chopped
1 cup chopped pecans
1 cup heavy whipping cream, whipped
Lettuce leaves, optional

Steps:

  • Drain pineapple, reserving the juice. Set pineapple aside. In a saucepan, combine juice with sugar, eggs and salt. Cook, stirring constantly, over medium-low heat until slightly thickened. Remove from the heat; cool. Stir in pineapple, celery, apples and pecans. Fold in whipped cream. , Pour into a 9-in. square pan. Cover and freeze until firm. Let stand at room temperature for about 15 minutes before cutting. Serve on lettuce-lined plates if desired.
