1 cup sugar
1 teaspoon baking soda

Steps:

  • Preheat 350 degrees F.
  • Place the dry ingredients in a bowl. Make 3 small holes in the mixture. Pour the vanilla in one hole, the vinegar in another and vegetable oil in another. Pour water over the top and mix. Pour into a lightly greased 8 by 8 inch pan. Bake for 30 to 35 minutes.

1 1/2 cups (7 ounces) bleached all-purpose flour
1/4 cup (0.75 ounce) unsweetened, nonalkalized cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup (7.5 ounces) granulated sugar
1 teaspoon vanilla extract
1 tablespoon white or cider vinegar
6 tablespoons vegetable oil
1 cup water

Steps:

  • 1. Position a rack in the center of the oven and preheat to 375°F. Lightly grease an 8-inch square pan.
  • 2. Sift the flour, cocoa, baking soda, and salt directly into the baking pan, then add the sugar. With your finger, poke 2 small holes and 1 large one in the dry ingredients. Into one of the small holes pour the vanilla, into the other one the vinegar, and into the larger one the oil.
  • 3. Pour the water over all the ingredients and stir the ingredients together with a table fork, reaching into the corners, until you can't see any more flour and the batter looks fairly well homogenized.
  • 4. Bake for 35 to 40 minutes, or until the top is springy and a tester inserted in the center comes out dry. Cool the cake in the pan on a wire rack, then cut and serve it from the pan.

1 c white (granulated) sugar
1 tsp salt
1 tsp baking soda
3 Tbsp heaping cocoa powder (about a quarter cup)
6 Tbsp vegetable oil
1 tsp vanilla extract
1 Tbsp white vinegar (original author used raspberry vinegar and said it was good)
1 c cold water

  • 1. Preheat oven to 350 degrees.
  • 2. In a medium mixing bowl, mix all the dry ingredients together with a whisk.
  • 3. Add all the wet ingredients until well combined.
  • 4. Pour into an 8×8 pan which has been prepared with non-stick spray.
  • 5. Bake for 30 minutes or until a toothpick comes out clean.
  • 6. Serve warm or allow to cool and serve with a dusting of powdered sugar.
  • 7. Note: This would also be good served with whipped cream or vanilla ice cream. A light frosting might be good too but I wouldn't use anything heavy on this moist fluffy cake.

Every vegan has a Wacky Cake recipe up their sleeve. For those of you that don't know, WACKY CAKE is "wacky" becasue it's a chocolate cake, made without any milk or eggs. Recipes such as this one came to be during the Great Depression, where ingrediets such as milk and eggs were extremely had to come by, and often too expensive for the average family. The "lift" in this cake comes from the reaction between the baking soda and vinegar. I found this recipe burried in a random website, labled as the BEST CHOCOLATE CAKE EVER" and it just so happens to be vegan. The chocolate glaze totally makes this recipe, so do yourself a favor and try it at least once. Cake IS still amazing in its own, dusted with some powdered sugar. I added in the "optional" extracts that I use when making the cake too. They really add a great flavor.

  • In a mixing bowl, mix together flour, sugar, cocoa, baking soda, and salt with a wisk, making sure it is blended together well.
  • In a large measuring cup add the water, vanilla, oil, and vinegar, ans wisk to combine.
  • Add wet ingredients to the dry and mix batter until blended together well.
  • Use a spatula to scrape down the sides if necessary.
  • Pour batter into cake pan, place in oven and bake for about 25-30 minutes, or until a knife comes out clean.
  • Cool on a rack completely.
  • For the glaze: in a small saucepan, bring sugar, margarine, milk, and cocoa to a boil.
  • Stir frequently; then reduce heat to a simmer for 2 minutes, stirring constantly.
  • Remove from heat and stir for another 5 minutes.
  • Add vanilla and almond, if using, stir, and immediately pour onto cake.
  • The glaze will begin to dry really quickly, so if it doesn't cover the whole cake (mine usually does) spread the glaze to the edges quickly, before it dries.
  • If you like, top with sprinkles, and let cool for a hour.

I found this recipe on the net and what a find it was! This is an excellent cake with all the attributes of a wacky cake plus new attributes of its own. Like all wacky cakes, it can be made in the ungreased pan and has no eggs. It is moist and easy to make, has excellent flavor and it perfect for strawberry (or any berry) shortcake. It takes well to any flavored frosting and even better if the frosting has nuts! It even makes good cupcakes, though I haven't tried this. I've read that this cake is a variation of something called Patrushka Cake. I think you'll love it.

2 ¼ cups cake flour
1 ½ cups white sugar
4 ½ tablespoons unsweetened cocoa powder
1 ½ teaspoons baking soda
¾ teaspoon salt
1 ½ teaspoons distilled white vinegar
1 ½ teaspoons vanilla extract
½ cup vegetable oil
1 ½ cups water
¼ cup butter
⅓ cup unsweetened cocoa powder
4 cups confectioners' sugar
1 pinch salt
1 teaspoon vanilla extract
4 tablespoons milk

Steps:

  • Preheat oven to 350 degrees (175 degrees C). Spray one 13x9 inch cake pan with cooking oil spray.
  • Mix the flour, white sugar, 4 1/2 tablespoons cocoa, baking soda and salt together in a bowl. Pour dry ingredients into the prepared pan. Scoop out 3 holes in the dry mixture. Put the vegetable oil in one hole, vinegar in the second hole, and 1 1/2 teaspoons of the vanilla in the third hole. Pour the cold water over the top and stir until smooth.
  • Bake at 350 degrees F (175 degrees C) for about 20 minutes. Ice cake while it is still hot.
  • To Make Icing: In a saucepan over medium heat melt the butter or margarine. Add the cocoa and remove pan from the heat. Stir in the salt, milk and 1 teaspoon vanilla. Mix in the confectioners' sugar until desired consistency is attained. Spread icing over a still hot cake.

3 cups all-purpose flour
2 cups sugar
1/2 cup cocoa
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons vinegar
2 teaspoons vanilla
2/3 cup vegetable oil
2 cups cold water

Steps:

  • Preheat oven to 350 degrees.
  • In a 9-by-13-inch cake pan, mix all dry ingredients. Smooth them out and make three holes. Put the vinegar in one hole, the vanilla in another and the oil in the third. Then cover the whole thing with the water. Mix it all up with a fork until the lumps are gone.
  • Bake 40 or 50 minutes, or until a toothpick inserted in the middle comes out clean. When the cake is cool, frost with butter frosting (recipe below).

3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
6 tablespoons unsweetened cocoa powder
2 cups white sugar
10 tablespoons butter, melted
2 teaspoons distilled white vinegar
2 cups warm water
¼ cup peanut butter
1 cup packed brown sugar
¼ cup milk
¼ cup butter, softened

Steps:

  • In a large bowl, sift together the flour, baking soda, salt, cocoa, and white sugar.
  • To the sifted ingredients, add the 10 tablespoons butter or margarine, vinegar, and warm water. Mix thoroughly, but do not beat. Pour batter into ungreased 9 x 13 inch pan.
  • Bake at 350 degrees F (175 degrees C)for 30 to 35 minutes. Remove cake from oven, but keep it in the pan.
  • Cream together peanut butter, brown sugar, milk, and 1/4 cup butter or margarine. Spread icing onto cake. Place under broiler until brown and bubbly.

3 c flour
1 1/2 c sugar
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
4 ripe,mashed bananas
1 1/2 stick butter, melted
1/2 c cold water
2 Tbsp white vinegar
1 c mini chocolate chips
1/2 c toffee chips such as hershey's heath toffee chips

Steps:

  • 1. In an ungreased 9 X 13 pan stir together the flour, sugar, baking soda, salt and cinnamon.
  • 2. Add the bananas, melted butter, cold water and vinegar. Stir just until combined.
  • 3. Sprinkle the mini chocolate chips evenly over the top of the cake.
  • 4. Bake at 350 degrees for 30-35 minutes or until a toothpick insterted in the center comes out clean.
  • 5. Sprinkle the hot cake with the toffee chips. Cool on a wire rack. Cut into squares to serve.
