An easy Vodka and Watermelon Cooler drink recipe

3 pounds watermelon, rind and seedsdiscarded and the flesh cut into pieces,plus thin slices of watermelon for garnish
1/2 cup vodka
1/4 cup Triple Sec
3 tablespoons fresh lime juice

Steps:

  • In a blender purée the watermelon pieces and strain the purée through a very fine sieve set over a pitcher, discarding the solids. (There should be about 2-1/3 cups juice). Stir in the vodka, the Triple Sec, and the lime juice, pour the cooler into long-stemmed glasses filled with ice cubes, and garnish each drink with a watermelon slice.

1 10-ounce package frozen sweetened raspberries in syrup, thawed
1 10-ounce package frozen sweetened strawberries in syrup, thawed
1/4 cup fresh lemon juice
3 cups black cherry juice
2 cups currant-flavored vodka or plain vodka
2 cups sparkling water
3 cups ice cubes
Optional garnish: Fresh mint sprigs

Steps:

  • Combine thawed raspberries with syrup, strawberries with syrup, and lemon juice in processor. Purée until smooth. Strain liquid into pitcher; discard solids in strainer. Add cherry juice and vodka. Stir well. (Can be made 6 hours ahead. Chill.)
  • Stir sparkling water and ice cubes into pitcher. Pour cooler into cocktail glasses. Garnish with mint, if desired.

For simple syrup:
1/4 cup water
1/4 cup sugar
2 cups seeded watermelon chunks (about 1 1/2 pounds with rind)
2 ounces vodka, or to taste
1/4 cup fresh lime juice, or to taste
Garnish: two 5- to 6-inch- long thin slices watermelon rind with some flesh attached

Steps:

  • Make simple syrup:
  • In a saucepan boil water and sugar, stirring, until sugar is dissolved. Cool syrup and chill, covered, until cold.
  • In a blender purée watermelon chunks until smooth and stir in 1/4 cup syrup, vodka, and lime juice.
  • Serve coolers over ice in 2 tall glasses and garnish with watermelon rind.

ORANGE-VODKA HERBAL COOLER

1 cup sugar
1/2 cup packed fresh basil leaves
1/2 cup packed fresh mint leaves
2 tablespoons fresh tarragon leaves
Peel of 1 orange, plus more for garnish
3/4 cup fresh orange juice
4 to 6 shots cold vodka
2 to 3 cups cold orange club soda or seltzer
Fresh mint sprigs, for garnish

Steps:

  • Bring the sugar and 2 cups water to a boil in a medium saucepan over high heat, and cook until the sugar is dissolved. Remove from the heat, and stir in the basil, mint, tarragon and orange peel. Let cool to room temperature, then cover and refrigerate until cold, at least 4 hours and up to 24 hours.
  • Strain the syrup into a pitcher, discarding the solids.
  • Fill six tall glasses with crushed ice. Add a few tablespoons of the syrup to each, then stir in 2 tablespoons of the orange juice and a shot of vodka. Top off with club soda, and garnish with an orange twist and a mint sprig. Serve the remaining syrup to sweeten as desired; leftover syrup can be stored in the refrigerator for up to 2 weeks.

Two 2-inch pieces English cucumber, peeled
5 red or yellow grape tomatoes
5 fresh basil leaves
2 ounces vodka
1 tablespoon apple cider vinegar
1 tablespoon fresh lemon juice

Steps:

  • Using a small melon baller or spoon, scoop two-thirds of the way down into one of the 2-inch pieces of cucumber, forming a cucumber shot glass. Refrigerate until ready to use.
  • Muddle the grape tomatoes, 4 of the basil leaves and remaining cucumber piece in a cocktail shaker until well crushed. Add the vodka, vinegar, lemon juice and some ice to the cocktail shaker and shake until well mixed. Strain into the cucumber shot glass and garnish with the remaining basil leaf.
