Very Vanilla Cupcakes With Easy Cream Cheese Frosting image

Number Of Ingredients 14

1/2 cup cake-and-pastry flour
6 tablespoons all-purpose flour
1 teaspoon baking powder
1 dash fine salt
3 tablespoons 2% low-fat milk
2 tablespoons vegetable oil
1 teaspoon vanilla bean paste
4 extra large eggs, whites and yolks separated
12 tablespoons sugar
4 ounces cream cheese, at room temperature
1/2 cup unsalted butter, room temperature
3 cups icing sugar, sifted
1 teaspoon vanilla bean paste
1 -2 tablespoon milk

Steps:

  • Very Vanilla Cupcakes:. Preheat oven to 350 °F and line mini muffin tins with paper liners.
  • Sift flours, baking powder and salt and set aside. Whisk milk, oil and vanilla bean paste together and set aside.
  • Whip egg whites with 6 tbsp of sugar until they hold a soft peak when beaters are lifted. In a separate bowl, whip egg yolks with remaining 6 tbsp of sugar until doubled in volume and a pale, butter colour. Fold whipped whites into yolk mixture. Fold flour into whipped eggs in two additions. Stir a spoonful of batter into milk mixture then add all back to batter, folding quickly to incorporate.
  • Pipe or spoon batter into prepared muffin cups, 3/4-full. Bake for 13 to 15 minutes, until cupcake springs back when touched. Let cool.
  • Easy Icing:. Beat cream cheese and butter until fluffy and smooth. On low speed, add icing sugar, 1 cup at a time, until blended. Beat in vanilla bean paste and add milk, 1 tbsp at a time until desired consistency is achieved. Ice cupcakes as desired.

2 1/2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup butter, softened
1 3/4 cups sugar
4 eggs
1 tablespoon vanilla extract
1 cup milk

Steps:

  • Preheat oven to 350*F.
  • Grease and flour 24 standard-size muffin cups, or line with paper wrappers; set aside.
  • Whisk together the flour, baking powder, and salt; set aside.
  • In a large bowl, using an electric mixer on high speed, cream the butter until light and fluffy.
  • Gradually add the sugar; continue beating until very light and fluffy.
  • Reduce mixer speed to medium; beat in the eggs, 2 at a time, then the vanilla.
  • Reduce mixer speed to low; alternately beat in the flour mixture with the milk, just until blended.
  • Spoon the batter into the prepared cups; bake for 20-25 minutes, until the tops are soft but springy.
  • Cool 5-10 minutes in the tins on a wire rack; carefully invert and cool completely.
  • Frost as desired.

3/4 cup unsalted butter, softened
1-1/2 cups sugar
3 eggs
1-1/2 teaspoons vanilla extract
2-1/3 cups cake flour
2-1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup whole milk
FROSTING:
1 cup unsalted butter, softened
3 teaspoons clear vanilla extract
2-1/2 cups confectioners' sugar
Paste food coloring, optional
Colored sprinkles and nonpareils

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In another bowl, mix the flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition., Fill paper-lined muffin cups two-thirds full. Bake at 350° for 18-22 minutes or until a toothpick inserted in center comes out clean. Cool in pans for 10 minutes. 1 and 2/3 cup all ­purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup (1 stick) unsalted butter, melted
2 egg whites
1/4 cup vanilla greek yogurt (or plain; or regular yogurt; or even sour cream)
3/4 cup vanilla almond milk (or cow's milk; or soy milk; or plain almond milk)
2 teaspoons vanilla extract
seeds scraped from 1/2 split vanilla bean
VANILLA BEAN FROSTING
1 cup (2 sticks) unsalted butter, softened to room temperature
4-­5 cups powdered (confectioners') sugar
1/4 cup heavy cream*
1 teaspoon vanilla extract
seeds scraped from 1/2 split vanilla bean
salt, to taste

Steps:

  • 1. Preheat oven to 350F degrees. Line muffin tin with 12 cupcake liners. Set aside. 2. In a medium bowl, mix together flour, baking powder, baking soda, and salt. Set aside. In a large microwave­safe bowl, melt butter in the microwave. Whisk in sugar ­ mixture will be gritty. Whisk in egg whites, yogurt, milk, and vanilla extract until combined. Split 1 vanilla bean down the middle lengthwise. Scrape seeds from half of the vanilla bean into batter. Reserve other half. 3. Slowly mix dry ingredients into the wet ingredients until no lumps remain. Batter will be thick. 4. Divide batter among 12 cupcake liners (or 24 mini) and bake for 20 minutes or until a toothpick inserted in the center comes out clean. Bake for 8­-9 minutes if making mini cupcakes. Allow to cool. 5. To make the frosting, beat softened butter on medium speed with an electric or stand mixer. Beat for about 3 minutes until smooth and creamy. Add powdered sugar, cream, vanilla extract, and vanilla bean seeds with the mixer running. Increase to high speed and beat for 3 minutes. Add more powdered sugar if frosting is too thin or more cream if mixture is too thick. Add salt if frosting is too sweet (1/4 teaspoon). Frost cooled cupcakes (I used Wilton 1M piping tip). There may be leftover frosting depending how much you use on each cupcake.

1 3/4 c cake flour(not self-rising)
1 1/4 c unbleached all-purpose flour
2 c sugar
1 Tbsp baking powder
1 c salted butter, cut into cubes
4 large eggs
1 c heavy cream or half and half
3-4 tsp pure vanilla extract
1 vanilla bean
1 c salted butter, room temp
8 c powdered sugar
1/2 c cream or half and half
2 tsp pure vanilla extract

Steps:

  • 1. Very Vanilla Cupcake: Preheat oven to 325*. Line cupcake pans with paper liners. Combine in a bowl both flours, sugar and baking powder. Mix on low until combined..approx 3 minutes. Add in softened cubed butter, mixing til just coated with flour.
  • 2. Add eggs one at a time until combined. Slowly add cream,vanilla, and the inside of the vanilla bean( cut lenghtwise and run your knife along the inside to extract the yummy vanilla) to the batter, until completely combined.. scraping down sides of bowl as you mix. Scoop batter into baking cups about 2/3 full. Bake for approx. 17-20 minutes.. or until toothpick inserted comes out clean.
  • 3. Very Vanilla Frosting: Cream the 2 sticks of salted, softened butter and 4 cups of powdered sugar,cream, and vanilla. Beat with paddle attachment until smooth.. gradually add rest of powdered sugar to reach the consistency you prefer. From my heart to your home.. Enjoy!!
