These days lobster is an expensive seafood, alternatives are welcome; such as this poor man's lobster recipe.

1 lb White Fish (cod or halibut)
½ cup Sugar
¼ cup Salt
6 oz Butter (melted)
12 cups Water
Paprika (optional garnish)
Pepper (optional garnish)

Steps:

  • Cut the white fish fillets widthwise into 2 inch widths.
  • Bring the water to the boil. Add the sugar, and the salt and stir until dissolved.
  • Using tongs lower fish pieces into the boiling water.
  • Cook for about 7 minutes or until the fish is just beginning to flake.
  • Using a skimmer, remove the fish and place in the bowl of melted butter.
  • Remove from the butter and squeeze lemon juice on the fillet pieces.
  • Serve hot.

1 1/2 tbsp extra virgin olive oil
1/4 tsp salt
1/8 tsp black pepper (, finely ground)
2 tbsp/ 30g unsalted butter (, cut into 1cm (1/2") cubes)
2 garlic cloves (, smashed (Note 2))
2 sprigs thyme
1/2 tsp parsley (, finely chopped)
1/2 tsp chives (, finely chopped)
1/2 tsp chervil (, finely chopped)

Steps:

  • Cut fillets: Cut each monkfish into 3 or 4 even size pieces. (Note 1)
  • Season: Sprinkle both sides of fish with salt and pepper.
  • Rack for resting: Place a rack over a tray (optional, for resting fish, Note 5)

½ cup soy sauce
¼ cup vegetable oil
1 teaspoon garlic salt
¼ teaspoon black pepper
1 tablespoon packed brown sugar
1 teaspoon dry mustard powder
2 teaspoons ground ginger
½ cup pineapple juice
6 skinless, boneless chicken breast halves

Steps:

  • In a saucepan, combine the soy sauce, oil, garlic salt, pepper, brown sugar, mustard powder, ginger and pineapple juice. Bring to a boil, stirring to dissolve the sugar. Boil for about 5 minutes, then remove from the heat and allow to cool completely. When cooled, place the chicken into a large resealable bag and pour the marinade over it. Press out as much air as you can, seal and refrigerate for at least 2 hours to marinate.
  • Preheat a grill for medium-low heat. When hot, lightly oil the grate.
  • Place the chicken on the grill and discard the marinade. Cook until chicken juices run clear, 20 to 25 minutes. Turn as needed to keep the chicken from burning.

This is one delicious,inexpensive meal of fish. It's kind of like the "generic" of haddock; I serve this with potato and cole slaw. Thawing of fish is not included in prep time.

1 lb pollock fillet, thawed
breadcrumbs, for topping
lemon juice, for topping
butter, for topping
paprika, for topping

Steps:

  • Make 3 slits with knife into fish fillet.
  • Place fish fillet in broil pan and sprinkle with the breadcrumbs, lemon juice, paprika and 3 pats of butter.
  • Broil fillet for 7-8 minutes.
  • Turn over, make 3 more slits and repeat with the bread crumbs, lemon juice, paprika and 3 more pats of butter; and broil another 7-8 minutes.
  • Serve with browned butter; french fries or rice, and cole slaw.

1 cup sugar
halibut, cut in about 1 inch cubes
butter, for dipping (not margarine)

Steps:

  • Fill a pot with water (about a gallon).
  • Add 1 cup sugar, and bring to a boil.
  • Do not ever stir the mixture.
  • Add chunks of halibut, do not over crowd.
  • They will sink to the bottom, and then rise to the top when they are done.
  • It should take just a few minutes.
  • Remove with slotted spoon.
  • Remember to not stir the mixture.
  • Continue until all the halibut is cooked.
  • Dip in melted butter and eat!
