BAKED SHRIMP WITH FETA CHEESE image

Yield 4 Servings

Number Of Ingredients 12

1 tsp. olive oil
3/4 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. crushed red pepper
1 # medium shrimp, peeled & de-veined
3 garlic cloves, minced
Cooking spray
1/2 cup dry white wine
3 cups diced plum tomato (3/4#)
1/3 cup (3 oz.) finely crumbled feta cheese
4 cups hot cooked linquine (about 8oz uncooked)
1/4 cup minced fresh parsley

Steps:

  • 1. Preheat oven to 350 degrees. 2. Heat oil in a large non-stick skillet over medium-high heat. Add oregano and next 4 ingredients; saute 3 minutes. Spoon shrimp mixture into an 11x7-inch baking dish coated with cooking spray. 3. Add wine to pan; cook over low heat until reduced to 1/4 cup (about 3 minutes). Stirn in tomato; pour over shrimp mixture. Sprinkle with cheese; bake at 350 for 10 minutes. Serve mixture over pasta; sprinkle with parsley.
