This cheesy broccoli rice casserole is a staple at our family holiday meals.

- Preheat oven to 350 degrees F. Prepare a 13 x 9-inch baking dish by spraying generously with nonstick cooking spray.
- In a mixing bowl, mix together Cheez Whiz, mushroom soup and melted butter. Mix together until a smooth cheese sauce forms.
- Add dry rice, onion (or dried minced onion can be used), and frozen broccoli to the cheese sauce. Stir until completely incorporated.
- Pour into prepared dish.
- Bake for 45 to 60 minutes or until cooked completely through.

- In large bowl, combine soups and Velveeta. Microwave til melted and creamy. About 5 minutes, stirring occasionally.
- Stir in broccoli and rice.
- Pour into greased 13x9-inch pan or glass baking dish.
- Stir cracker crumbs into melted butter and sprinkle evenly over top.
- Cover and bake at 350ºF for 30 minutes.
- Uncover and bake 10-15 minutes longer. Or til casserole is bubbly and crumbs are golden.

this recipe has Velveeta instead of cheez whiz and reg. rice instead of instant rice which I think gives it a much better flavor. My family LOVES it!!!

- 2. add cheese, cooked rice and soup.
- 3. add finely chopped onion and celery if you want them.
- 4. Mix well and pour into a casserole dish.
- 5. bake at 375 until bubbling on top.
BROCCOLI AND VELVEETA CASSEROLE
A friend gave me this recipe when I was looking for a vegetable dish to make with ham. My husband filled his plate three times during dinner and it is very hard for me to get him to eat his veggies! Everyone has loved making this dish because it is so easy and everyone goes back for seconds and thirds!

Steps:
- Cook broccoli and drain water.
- Add Velvetta and cook until melted.
- In a seperate pan melt butter, then remove from heat.
- Add crumbled Ritz crackers to the butter and stir until mixed well.(You can crumble the crackers by hand or by putting them in a storage bag and crush with a rolling pin).
- Spray a 1 3/4 quart cassarole dish with cooking spray.
- Spoon in half the crackers into the dish.
- Pour broccoli and cheese mixture in and cover with the rest of the crackers.
- Bake for 15-20 minutes uncovered at 350 degrees or until top browns.
