EASY VEGETARIAN PASTA BAKE WITH TOMATOES AND CREAM SAUCE
This is my family's favorite vegetarian pasta bake with lots of tomatoes, cheese, and cream that we make regularly in my house. Kids, hubby, everyone loves it.

Steps:
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Preheat oven to 400 degrees F (200 degrees C). Grease a large baking dish.
- Heat 1 tablespoon olive oil in a skillet over medium heat and cook garlic until fragrant, about 1 minute.
- Combine chopped tomatoes, 3/4 cup mozzarella cheese, heavy cream, tomato paste, sour cream, remaining 3 tablespoons olive oil, and cooked garlic in a large bowl and season with Italian herbs, salt, and pepper. Mix in penne pasta and spread into the prepared baking dish. Cover with sliced tomatoes and sprinkle with remaining 1 cup mozzarella cheese, and Parmesan cheese.
- Bake in the preheated oven until cheese is melted, about 30 minutes.

VEGETARIAN MEXICAN PASTA BAKE
I got this off of MSN and have modified it a little to our tastes. The recipe calls for making them in individual servings but I usually just make it as a casserole. Very rich and not for the fat conscious - we don't have this very often. It also makes for a few dishes.

- Preheat oven to 350 degrees. Butter six 12-1 6 ounce individual casserole dishes (or one 3 quart baking dish); set aside.
- Cook pasta according to package directions. Drain and return to pan.
- In a large saucepan, cook onion and sweet pepper in butter over medium heat about 5 minutes or until tender. Stir in flour, cilantro and cumin. Add milk all at once. Cook and stir until the mixture and thickened and bubbly. Reduce heat to low. Stir in Colby cheese and 1 cup of the Monterey Jack cheese; stir until melted.
- Pour mixture over drained pasta; stir to combine.
- Layer half the pasta mixture, all of the salsa and the remaining pasta mixture in the prepared casserole(s). Sprinkle with remaining 1/2 cup of Monterey Jack cheese and olives. Sprinkle lightly with chili powder on top.
- Bake, uncovered, 15-20 minutes or until bubbly around the edges and heated through (if useing a large casserole, bake in 400 degree oven for about 20 minutes). Let stand for 5 minutes before serving.

Celebrate meatless Mondays by making our Cheesy Vegetarian Pasta Bake. With mushrooms, kale, shredded mozzarella and an Italian vinaigrette dressing, this Cheesy Vegetarian Pasta Bake is sure to please!

Steps:
- Cook pasta in large saucepan as directed on package, omitting salt and adding kale to the boiling water for the last 3 min.
- Meanwhile, heat dressing in large nonstick skillet on medium heat. Add mushrooms, onions and garlic; cook 8 min. or until mushrooms are tender and release most their liquid, stirring occasionally.
- Drain pasta mixture, reserving 1/2 cup of the cooking water. Add reserved water to vegetable mixture in skillet; stir. Bring to boil, stirring frequently. Remove from heat; stir in pasta mixture, pasta sauce and half the cheese.
- Spoon into 8-inch square baking dish sprayed with cooking spray; top with remaining cheese.
- Bake 15 min. or until pasta mixture is heated through and cheese is melted.

VEGETARIAN PASTA BAKE
This pasta is quick and easy to cook. Plus, if you don't like Quorn; you need not worry! It contains only vegetables and you can add/remove any that you wish!

- 1. Put the pasta in a saucepan of boiling water.
- 2. Chop the vegetables and place in a frying pan.
- 3. Fry the vegetables for a few minutes. Then add the pasta sauce with the herbs.
- 4. Once finished, mix the pasta with the sauce and place in an ovenproof dish. Top with cheese and grill for a couple of minutes until melted.
