This vegetarian meatloaf is hearty and pleases even the most passionate of meat eaters! It's a family favorite dinner party recipe.

1 1/2 cups cooked brown rice
1 1/2 cups walnuts
1/2 cup cashews
1 yellow onion
3 cloves garlic
3 ounces shiitake mushrooms
3 ounces baby bella mushrooms (aka cremini)
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons olive oil
1 teaspoon dried marjoram
1 teaspoon dried thyme
1 teaspoon dried sage
4 large eggs
1 cup cottage cheese
12 ounces Swiss cheese, grated
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Prepare the brown rice using Stovetop Brown Rice or Instant Pot Brown Rice. (You'll need 1/2 cup dry rice to yield 1 1/2 cups cooked; or you cook 1 cup dry rice and save the leftovers.)
  • Preheat oven to 375°F.
  • Place 1 1/2 cup walnuts and 1/2 cup cashews on a baking sheet and toast for 8-10 minutes, until lightly browned. Allow to cool.
  • Meanwhile, finely chop 1 onion and mince 3 cloves garlic. Clean and finely chop the mushrooms. Finely chop the 2 tablespoons fresh parsley. When the nuts have cooled, finely chop them with a knife or in a food processor.
  • In a large skillet, heat about 2 tablespoons olive oil. Add the onion and garlic and cook until translucent, about 3 minutes. Add the mushrooms, 1 teaspoon marjoram, 1 teaspoon thyme, and 1 teaspoon sage. Cook about 5 minutes, until the mushrooms are golden. Transfer to a large bowl.
  • In a small bowl, lightly beat together 4 eggs.
  • In the large bowl, combine the onion and mushroom mixture with the toasted walnuts and cashews, parsley, 1 1/2 cups cooked rice, 1 cup cottage cheese, 12 ounces Swiss cheese, beaten eggs, 1 teaspoon kosher salt, and 1/2 teaspoon freshly ground black pepper.
  • Butter a 9-inch loaf pan, line the bottom with parchment paper, and butter it again. Pour the mixture from the bowl into the pan.
  • Bake 1 hour until golden brown. Let cool in pan for 20 minutes, then invert loaf and remove from pan. Slice into pieces and serve warm. Leftovers can be stored for a few day in the refrigerator or a few months in the freezer (cut into pieces). Reheat in a 375F oven.

1 package Impossible burger (3/4 pound)
1/4 cup breadcrumbs
2 tablespoons ketchup (or tomato sauce)
1 teaspoon garlic powder
1 teaspoon vegan Worcestershire sauce
1 teaspoon onion powder
1/2 teaspoon parsley
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400°F. Line a baking sheet with parchment paper or a silicone baking mat.
  • In a bowl, mix all ingredients together (Impossible burger, breadcrumbs, ketchup, garlic powder, Worcestershire sauce, onion powder, parsley, salt, and pepper.
  • Form into a loaf shape on the baking sheet.
  • Bake for 25-30 minutes, or until browned.
  • Brush some ketchup or BBQ on top if desired, or serve with gravy.

1 (12 ounce) bottle barbeque sauce
1 (12 ounce) package vegetarian burger crumbles
1 green bell pepper, chopped
⅓ cup minced onion
1 clove garlic, minced
½ cup soft bread crumbs
3 tablespoons Parmesan cheese
1 egg, beaten
¼ teaspoon dried thyme
¼ teaspoon dried basil
¼ teaspoon parsley flakes
salt and pepper to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 5x9 inch loaf pan.
  • In a bowl, mix 1/2 the barbeque sauce with the vegetarian burger crumbles, green bell pepper, onion, garlic, bread crumbs, Parmesan cheese, and egg. Season with thyme, basil, parsley, salt, and pepper. Transfer to the loaf pan.
  • Bake 45 minutes in the preheated oven. Pour remaining barbeque sauce over the loaf, and continue baking 15 minutes, or until loaf is set.

This is an awesome vegetarian meatloaf! My daughter made it first, and gave me the recipe, and I cant get enough of it. (Im not even a vegetarian) You can buy Veggieburger at Kroger stores.

1 onion (diced)
1 (8 ounce) container veggie burgers
2 tablespoons real butter
4 slices whole wheat bread (torn into pieces) or 4 slices nut bread (torn into pieces)
2 eggs
2 -3 cups of shredded cheddar cheese
brown sugar (no specified amount)
ketchup (No specified amount)
additional butter
1 -2 dash garlic powder (sprinkle in a dash or 2)
1 dash sage (sprinkle in a dash)

Steps:

  • In frying pan, brown onions in butter.
  • Mix veggieburger, onions & butter that you have browned, eggs, bread, sage, garlic powder and cheese.
  • Before putting mixture in 9" X 13" pan, butter the bottom & sides of pan. Then layer the bottom with brown sugar. Drizzle ketchup on top -- then you are ready to put mixture in pan.
  • Bake at 350 degrees covered with foil for 45 minutes. Take off foil for the last 15 minutes to brown the top.
  • Then eat! =o).
  • Total bake time = 1 hour.

This is a great alternative to meatloaf or burgers. You may need to play with the volume of bread crumb/oat/wheat germ to get desired consistency for forming into burgers. Only thing to remember is this timely to make from dried beans. It tastes great and I am not vegetarian.

1 onion, finely chopped
3 garlic cloves, finely minced
2 medium carrots
1/4 cup dry chickpeas
1/4 cup dry green lentils
1/4 cup dried red kidney beans
1/4 cup mushroom, chopped (optional)
1 small summer squash, shredded
2 teaspoons olive oil
1/2 cup rolled oats
1/4 cup wheat germ
1/4 cup brown rice
1/2 cup breadcrumbs
1/4 cup fresh cilantro or 1/4 cup fresh parsley, chopped
2 eggs, slightly beaten dependent on mixture thickness
salt & freshly ground black pepper
2 tablespoons soy sauce
all-purpose flour, for burger not needed for loaf

Steps:

  • In a skillet heat olive oil over medium heat; add onion and garlic and cook until onion has softened, about 2 minutes. Add squash carrots and toss until tender. Boil rice until tender.
  • Add rice and chick pea, lentil mushroom to the skillet. Stir and cook for 2 minutes. Remove pan from heat.
  • Blend lightly in a food processor add cilantro soy sauce and egg.
  • Add wheat germ, bread crumb and rolled oats, salt and pepper pulse in blender and refrigerate for 1 hour; or blend well by hand.
  • Put a little flour on a large plate. Make desired size round diameter patties with cooled veggie mixture. Dip both sides of patties in the flour. Refrigerate patties for 15 to 20 minutes.
  • Place patties on a greased broiling pan. Broil for 5 minutes on each side. Or lightly fry in a pan.
  • Serve on a toasted hamburger bun with all the fixings, if desired.
  • Adjust amount of bread - oats - wheat germ to your tastes or for desired consistency for either burger or loaf.
  • I like to add an additional 2 cloves of garlic fresh after the cooking while blending the bread crumbs.
  • Beans, lentil and chick peas can be of the canned variety this cuts down the preparation time but dried taste better. You need to soak and boil for a while 2-3 hours if you use dried beans boil in order chick peas ½ hour later add red beans and in the last half hour add the lentil.
  • For the loaf cook at 350 degrees for 1 hour and 15 minutes after the first ½ hour of cooking you add a small can of stewed tomatoes on top of the loaf. A ½ teaspoon of hot pepper flakes blended on in the stewed tomatoes if you like a little spice.
