6 ounces uncooked linguine
2 tablespoons butter
1 tablespoon olive oil
2 medium zucchini, thinly sliced
1/2 pound fresh mushrooms, sliced
1 large tomato, chopped
2 green onions, chopped
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded provolone cheese
3 tablespoons shredded Parmesan cheese
2 teaspoons minced fresh basil

Steps:

  • Cook linguine according to package directions. Meanwhile, in a large skillet, heat butter and oil over medium heat. Add zucchini and mushrooms; saute 3-5 minutes. Add tomato, onions, garlic and seasonings. Reduce heat; simmer, covered, about 3 minutes., Drain linguine; add to vegetable mixture. Sprinkle with cheeses and basil. Toss to coat.

2 Tablespoons olive oil
1 pound lean ground beef
1 small onion (diced)
2 cloves garlic (minced)
1 cup tomato sauce ((can also use condensed tomato soup))
1 cup diced celery
1 cup diced red bell pepper
1 cup yellow or orange bell pepper
2 cups chopped carrots
15 ounces canned kidney beans (drained and rinsed)
15 ounces canned Northern Beans (drained and rinsed)
1 Tablespoon Italian Seasoning
1 teaspoon salt
½ teaspoon ground black pepper
dash of red pepper flakes
1 cup ditalini pasta
6 cups beef broth (or stock)
fresh grated Parmesan cheese and fresh basil (optional topping)

Steps:

  • Press SAUTE on your Instant Pot.
  • Once it heats up, add the olive oil.
  • Place the ground beef and onion into the Instant Pot with the hot oil and brown until fully cooked.
  • Add in the garlic and saute for a minute more.
  • Dump in the rest of your ingredients, making sure that as much of the pasta as possible is covered by the beef broth.
  • Place the lid on top, press the PRESSURE COOK and set timer for 5 minutes.
  • When the timer is done, do a quick release of the pressure.
  • Stir everything together and serve. If desired, top with fresh grated Parmesan cheese and fresh basil.

1 small onion, finely chopped
1 medium sweet red pepper, finely chopped
1 medium zucchini, finely chopped

1 can (8 ounces) tomato sauce
2 teaspoons Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
8 ounces uncooked multigrain spaghetti
Grated Parmesan cheese, optional

Steps:

1 large head fennel, quartered, cored, and sliced into 1/2-inch pieces
2 mild chiles, such as Anaheim, sliced into 1/2-inch pieces
1 pound cherry tomatoes
2 small red onions, sliced into 1/2-inch wedges
6 tablespoons extra-virgin olive oil
Coarse salt
10 ounces whole-wheat linguine
1/2 cup grated Parmesan, plus more for serving
3/4 cup basil leaves

Steps:

  • Heat broiler. Arrange fennel and chiles on one rimmed baking sheet and tomatoes and onions on another. Toss each with 2 tablespoons oil and season with salt. Broil 3 minutes, then toss and continue broiling until vegetables are tender and charred in spots, about 2 minutes more. Transfer vegetables and pan juices to a bowl.
  • Cook pasta in salted boiling water according to package instructions. Reserve 1 cup cooking water, drain, and return to pot.
  • Add vegetables, Parmesan, and reserved water. Stir in basil and remaining oil and adjust seasoning. Sprinkle with additional Parmesan.
