If you like restaurant vanilla bean cheesecake, then try this! The cookies make this one much more special and far more yummy. Pure vanilla bean extract is a must. I use Tahitian vanilla beans and extract. This also makes more than enough batter for a 10 inch pan, so you can make cupcakes too.

1 (18 ounce) package vanilla sandwich cookies (such as Oreo Golden Original Sandwich Cookies®)
1 vanilla bean, split lengthwise and seeds scraped
¼ cup butter, melted
2 pounds cream cheese, softened
1 ½ cups white sugar
5 eggs
2 vanilla beans, split lengthwise and seeds scraped
1 tablespoon pure vanilla extract
¾ cup sour cream
½ cup heavy cream

Steps:

  • Preheat oven to 300 degrees F (150 degrees C), and lightly butter a 10 inch springform pan.
  • Place the sandwich cookies into a plastic bag, and crush with a rolling pin. Pour the crumbs into a bowl, and mix with the scraped seeds of 1 vanilla bean. Drizzle the crumbs with melted butter and stir to combine. Press the crumb mixture firmly into the bottom and up the sides of the springform pan, and set aside.
  • Place the softened cream cheese and sugar into the work bowl of an electric mixer, and beat for about 3 minutes on Medium speed, until the mixture is smooth. Beat in the eggs one at a time, incorporating each egg before adding the next one. Add the scraped seeds of 2 vanilla beans, the vanilla extract, sour cream, and heavy cream, and beat on Medium-High speed for about 1 minute, until the mixture is blended and smooth.
  • Pour the mixture into the cookie crumb crust, leaving about 2 inches of space from the top of the pan for the cake to expand as it bakes.
  • Place a baking dish onto the bottom rack of the preheated oven, and fill it halfway with boiling water. Place the cheesecake onto the middle rack, above the pan of boiling water, and bake until a small knife inserted into the middle of the cheesecake comes out clean, about 1 hour and 20 minutes.
  • Turn the oven off and let the cheesecake cool down inside the oven for 1 hour. Cover the cheesecake with plastic wrap, then aluminum foil, and refrigerate at least 4 hours or overnight before serving.

2 Madagascar vanilla beans
1 ¼ cups graham cracker crumbs (such as Keebler®)
⅓ cup butter, melted
¼ cup white sugar
2 (8 ounce) packages cream cheese, softened
1 (8 ounce) container sour cream
1 cup white sugar
2 tablespoons cornstarch
2 tablespoons butter, softened
1 teaspoon vanilla extract
2 cups heavy whipping cream
¼ cup confectioners' sugar
2 (4 ounce) bars white baking chocolate, chopped
1 (8 ounce) package cream cheese, softened
1 cup heavy whipping cream
1 ½ tablespoons confectioners' sugar

Steps:

  • Split 1 vanilla bean lengthwise with the tip of a sharp knife. Holding the pod open, scrape seeds from each half using the flat side of your knife; place in a bowl. Repeat with second vanilla bean, placing seeds in a separate bowl.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix graham cracker crumbs, melted butter, and 1/4 white sugar together in a bowl. Press over the bottom and up the sides of a 9-inch springform pan.
  • Combine 2 packages cream cheese, sour cream, 1 cup white sugar, and cornstarch in a large bowl; mix until sugar is dissolved. Add seeds from 1 vanilla bean, softened butter, and vanilla extract; blend until smooth. Pour over graham cracker crust.
  • Bake in the preheated oven until top is a light tan color, 30 to 35 minutes. Cool for 1 to 2 hours.

  • Melt white chocolate in top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Remove from heat and let cool, about 5 minutes.
  • Beat 1 package cream cheese with an electric mixer until fluffy. Beat in white chocolate until smooth. Fold in whipped cream. Spread over the cooled cheesecake. Chill for 1 to 2 hours.
  • Beat 1 cup heavy cream in a chilled bowl with an electric mixer until soft peaks form. Beat in seeds from the second vanilla bean and 1 1/2 tablespoon confectioners' sugar until stiff peaks form. Spread over cheesecake. Cover and refrigerate until firm, at least 1 day.

12 vanilla sandwich cookies (such as Vienna Fingers; 6 1/2 ounces), broken into pieces
5 tablespoons unsalted butter, cut into pieces, room temperature
1/4 cup sugar
Filling
2 vanilla beans, split lengthwise
1/2 cup whipping cream
1 1/2 pounds cream cheese, room temperature
1 cup sugar
Pinch of salt
4 large eggs
Topping
1 12-ounce bag fresh or frozen cranberries
3/4 cup sugar
1/2 cup frozen cranberry juice cocktail, thawed
1/4 cup water

Steps:

  • For Crust:
  • Position rack in center of oven and preheat to 350° F. Wrap outside of 9-inch-diameter springform pan with 2 3/4-inch-high sides with foil. Blend cookies, butter and sugar in processor until crumbs stick together. Press crumbs on bottom and halfway up sides of prepared pan. Bake crust 10 minutes. Set aside. Maintain oven temperature.
  • For Filling:
  • Using tip of small sharp knife, scrape seeds from vanilla beans into small saucepan; add beans. Add cream. Bring to simmer over medium heat. Set aside uncovered, and cool to room temperature. Discard beans.
  • Blend cheese, sugar and salt in processor until very smooth, stopping often to scrape down sides of work bowl. Add vanilla cream and blend. Add eggs; process 5 seconds. Scrape down sides of work bowl; process just until blended, about 5 seconds. Transfer filling to crust.
  • Bake cake until sides puff slightly and center is just set, about 50 minutes. Place uncovered hot cheesecake directly into refrigerator and chill thoroughly, at least 6 hours or overnight.
  • For Topping:
  • Stir all ingredients in heavy medium saucepan over medium heat until sugar dissolves. Increase heat; boil 3 minutes. Press mixture through sieve set over large bowl, pressing firmly on solids. Spoon warm topping over cold cake; spread evenly. Chill until topping is set, at least 2 hours. (Can be made 1 day ahead. Cover and keep chilled.)

This elegant cheesecake is based on Amanda Hesser's mother's simple recipe. The crust is made of Nabisco chocolate wafers and butter. The bottom layer is a fluffy pool of cream cheese, eggs and sugar. The top is a thin layer of sour cream and sugar. Her recipe called for vanilla extract, but this one uses the seeds of one whole vanilla bean, which has a way of elevating all the other subtle flavors - cinnamon, chocolate and the tang of the sour cream and cream cheese - in a magical way.

1/4 teaspoon cinnamon
1/4 cup butter, melted
1 pound cream cheese, room temperature

1 1/2 cups sour cream

Steps:

  • In a bowl stir together crushed wafers and cinnamon with a fork. Pour in butter, and stir until mixture is moist. Press mixture into a 9-inch springform pan, forming a crust just over 1 inch high around the sides. You might think you need more wafers, but you don't. Press patiently until a tight, thin layer forms. Chill until needed.
  • Heat oven to 350 degrees with baking sheet on center rack. In an electric mixer, beat cream cheese until creamy and fluffy. Add eggs, 2/3 cup sugar and seeds from vanilla bean, and beat until very smooth. Scrape bowl with a spatula to break up lumps. Pour into crust, and place on baking sheet. Bake 25 minutes.
  • Meanwhile, blend sour cream with 3 tablespoons sugar. After 25 minutes, remove cake from oven, and let sit 5 minutes. Increase oven heat to 450 degrees. Gently spoon sour cream mixture on top, and spread evenly. Return cake to oven, and bake 7 minutes. Cool on a wire rack.

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 9-inch square or 11x7-inch pan with shortening or cooking spray.

Steps:

  • CRUST:Crush the graham crackers. Mix in the sugar. Add the egg yolk and vanilla, then stir in the melted butter. Line a springform pan with non-stick foil. Press graham crackers into the pan. Bake at 375º for 8 minutes or until edges are slightly brown. Remove and let cool.

1 1/2 tablespoons flour
1/8 teaspoon salt
3 cups whole milk
2 cups heavy cream
3 eggs, beaten
4 ounces cream cheese or 4 ounces mascarpone
1 vanilla bean
10 ounces white chocolate

Steps:

  • Split bean, scrape out seeds.
  • Mix dry ingredients, add milk and cream. Add bean and seeds. Bring almost to a boil, stirring constantly.
  • Remove from heat. Pour 1/2 cup of hot mixture into eggs in a thin stream, beating well. Return egg mixture to hot mixture, stirring.
  • Replace on medium heat, add chocolate. Stir constantly until chocolate melts. Continue stirring while adding cheese.
  • It will take anywhere from 20 to 45 minutes for the cream cheese to melt. If the temperature is too high, the cheese will cook and become sweet cottage cheese.
  • When all is melted, remove from heat and let cool slightly. This is not a thick custard.
  • Pour 1 c heavy cream in large bowl. Strain milk/chocolate/cheese mixture into the cream. Stir well.
  • Cover with plastic wrap and refrigerate overnight.
  • Freeze according to ice cream maker's directions.
  • Temper the finished ice cream in a tightly covered container for several hours.

1 3/4 cups sugar

1/4 cup ground pecans
1/4 cup sugar
1 teaspoon cinnamon

2 vanilla beans
4 eggs
2 tablespoons heavy cream

Steps:

  • Preheat oven to 350°F

Crust:
1 1 1 recipe chocolate wafers from smitten kitchen
4 4 4 cups chocolate cookie crumbs
1/2 1/2 1/2 cup flour
4 4 4 oz melted butter
(instructions on making the crust below)
Filling:
2 2 2 lbs cream cheese, softened
1 1 1 cup white sugar
4 4 4 eggs
1 1 1 vanilla bean
1/4 1/4 1/4 cup milk
Topping:
1 1 1 cup sour cream
1 1 1 Tbsp white sugar
1/2 1/2 1/2 tsp vanilla
Salted Caramel:
1 1 1 cup white sugar
2 2 2 Tbsp water
1 1 1 cup cream
2 2 2 oz butter
1 1 2 tsp fleur de sel (plus 2 tsp more for optional garnish)

Steps:

  • Bake the cookies following Smitten Kitchen's recipe or buy them. If you choose to bake them, make sure you roll out the dough as thin and evenly as possible before baking. I divided the batch in half and then rolled the dough out to 1/4 inch thick onto a silpat with plastic wrap on top (this keeps the dough from sticking to the rolling pin). The cookies can be baked the day before. Break them into pieces and store covered. Put the cookies or cookie pieces into a food processor and pulse until they are fine crumbs. Remove the crumbs from the bowl, measure out 4 cups of crumbs, and put them back into the food processor. Add the flour and pulse to combine. Add the melted butter and pulse until the cookie crumbs have the consistency of wet sand. Press about 2 cups the crust into the bottom of the 9′" springform pan and then the rest up the sides of the pan to the top edge. You should use all of the crust mix. Preheat oven to 325 degrees Put the milk in a small pot. Split open the vanilla bean and scrape out the seeds inside. Put both into the pot with the milk. Heat the milk until it's hot, but not boiling. Turn off the heat and let the vanilla and milk steep for 15 minutes. Remove the vanilla pod and if it's softened more by being in the milk, you may be able to scrape out more seeds. If so, whisk them into the milk. For the filling, put the cream cheese into a mixing bowl (I use a KitchenAid stand mixer, but you can use a hand mixer if you have one). Add in the sugar and beat until combined with the cream cheese and very smooth. Crack the eggs into a separate bowl, and with the mixer on, slowly beat in the eggs one at a time. Stop the mixer and scrape down the sides with a spatula. Turn it on again and add in the milk with the vanilla beans, beat until it's all combined and there are no lumps. Pour the filling into the pan with the crust. Place the pan on a cookie sheet lined with foil (sometimes the butter in the crust melts and runs from the pan). Bake for 55 min-1 hour at 325 degrees until set but still soft and jiggly in the center. While the cheesecake is cooking, mix together the sour cream, sugar and vanilla. When the cheesecake is done, remove from the oven for 10 minutes, but leave the oven on. After 10 min, spread the sour cream topping on the cheesecake and return to the oven for 10 more minutes. Remove, place on a cooling rack and allow to cool for 1 hour. Refrigerate before serving for at least 4 hours. The cheesecake can be made up to two days in advance. Caramel topping: In a small, heavy bottomed pot, melt the sugar with water. Cook over high heat until deep amber in color. Remove from heat, and carefully whisk in the cream (it will bubble up). Whisk in the butter, and if the caramel has cooled too much to melt the butter, return to a low heat and whisk until it is all incorporated. Whisk in the 1 tsp fleur de sel. Allow the caramel to cool and pour over the top of the baked and cooled cheesecake. Garnish the top with flakes of fleur de sel. Note; If you are making the cheesecake in advance, I recommend you save the salt garnish until right before serving because if refrigerated, the moisture in the refrigerator will melt the salt.

4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened, divided

2 tsp. vanilla extract, divided

1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Steps:

  • Heat oven to 325ºF.
  • Combine wafer crumbs and butter; press onto bottom of 9-inch springform pan.
  • Beat 3 pkg. cream cheese, 3/4 cup sugar and 1 tsp. vanilla extract in large bowl with mixer until blended. Use sharp knife to gently split vanilla bean pod lengthwise in half; scrape seeds into cheesecake batter. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
  • Bake 50 to 55 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool completely in pan.
  • Beat remaining cream cheese, sugar and vanilla extract with mixer in large bowl until blended. Whisk in COOL WHIP; spread over cheesecake. Refrigerate 4 hours. Remove rim of pan before serving cheesecake.

2 cups chocolate graham cracker crumbs (about 16 graham crackers)
4 teaspoons grated orange zest

FILLING:
3 packages (8 ounces each) cream cheese, softened
1 cup sugar

1 vanilla bean or 1 teaspoon vanilla extract
3 large eggs, lightly beaten
TOPPING:
1 cup semisweet chocolate chips
2/3 cup heavy whipping cream
2 cups fresh raspberries

Steps:

  • Preheat oven to 325°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around pan., In a small bowl, mix cracker crumbs and orange zest; stir in butter. Press onto bottom and 2 in. up sides of prepared pan. Refrigerate 5 minutes., In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream. Split vanilla bean lengthwise; using the tip of a sharp knife, scrape seeds from the center into cream cheese mixture. Add eggs; beat on low speed just until blended. Pour into crust. Place springform pan in a larger baking pan; add 1 in. of hot water to larger pan., Bake 60-70 minutes or until center is just set and top appears dull. Remove springform pan from water bath. Refrigerate overnight, covering when completely cooled., For topping, place chocolate chips in a small bowl. In a small saucepan, bring cream just to a boil. 5 tb unsalted butter; cut into pieces; room temperature
3 tb fruit powdered sugar

2 vanilla beans; split -lengthwise
1/2 c whipping cream
1 1/2 lb cream cheese; room temperature
3/4 c fruit powdered sugar
1 pn salt
4 lg eggs
----------------------------TOPPING-----------------------------------
1 bag fresh or frozen cranberries; (12-ounce)
1/2 c plus 1 tb fruit powdered sugar
1/2 c frozen cranberry juice cocktail; thawed
1/4 c water

Steps:

  • For Crust: Position rack in center of oven and preheat to 350 F. Wrap outside of 9-inch-diameter springform pan with 2 3/4-inch-high sides with foil. Blend cookies, butter and fruit powdered sugar in processor until crumbs stick together. Press crumbs on bottom and halfway up sides of prepared pan. Bake crust 10 minutes. Set aside. Maintain oven temperature. For Filling: Using tip of small sharp knife, scrape seeds from vanilla beans into small saucepan; add beans. Add cream. Bring to simmer over medium heat. Set aside uncovered, and cool to room temperature. Discard beans. Blend cheese, fruit powdered sugar and salt in processor until very smooth, stopping often to scrape down sides of work bowl. Add vanilla cream and blend. Add eggs; process 5 seconds. Scrape down sides of work bowl; process just until blended, about 5 seconds. Transfer filling to crust. Bake cake until sides puff slightly and center is just set, about 50 minutes. Place uncovered hot cheesecake directly into refrigerator and chill thoroughly, at least 6 hours or overnight. For Topping: Stir all ingredients in heavy medium saucepan over medium heat until fruit powdered sugar dissolves. Increase heat; boil 3 minutes. Press mixture through sieve set over large bowl, pressing firmly on solids. Spoon warm topping over cold cake; spread evenly. Chill until topping is set, at least 2 hours. (Can be made 1 day ahead. Cover and keep chilled.)

4 TBSP melted butter

Vanilla Bean Cheesecake
3 (8 oz) pkgs. cream cheese, room temp.
1 & 1/2 c. sugar
1/4 tsp. coarse salt
4 eggs
3 TBSP freshly squeezed lemon juice
1 TBSP vanilla bean paste
1 c. sour cream, full fat
1/2 c. heavy cream
Raspberry Sauce
2 tsp cornstarch
3 TBSP sugar
1/3 c. water
12 ounces frozen raspberries, thawed (not thawed work, too...it just takes longer)

Steps:

  • Chocolate Cookie Crust Combine all ingredients. Press into the bottom of a 9" spring-form pan. Bake at 350 for 10 minutes. Let cool completely. Vanilla Bean Cheesecake Preheat the oven to 325. On low speed, beat the cream cheese until no lumps remain; scraping down the sides as needed. Add the sugar and salt and beat until combined. Add the eggs one at a time until the mixture is smooth before adding the next egg. Scrape the bottom of the bowl after each addition. Stir in the lemon juice, vanilla bean paste, sour cream and heavy cream until smooth. Pour onto the cooled crust and bake 50 minutes or so until the edges are set and the cheesecake is a light golden brown. The middle will still jiggle when the pan is shaken. Turn off the oven, crack the door and let the cheesecake cool in the oven for 1 hour. (This helps prevent cracking.) The center will finish setting in the oven. After 1 hour, remove the cheesecake from the oven and run a knife around the edge of the pan. {Doing this allows the cheesecake to contract as it cools without pulling off the side and cracking.} Refrigerate overnight and serve with raspberry sauce (or plain, or with chocolate sauce). Raspberry Sauce In a small saucepan, stir together the cornstarch, sugar and water. Add the raspberries and cook over medium heat. Stir constantly until the mixture boils. Continue stirring and boil one additional minute. Pour the sauce into a mesh sieve placed over a bowl to remove seeds. The sauce can be served warm or cold. Store in the refrigerator.

1/2 cup 2% milk (or other low-fat milk)
2/3 cup powdered sugar
1 teaspoon vanilla extract
1 vanilla bean (seeds scraped)

Steps:

  • Place all ingredients into a food processor. To scrape the seeds from the vanilla bean, cut through one layer vertically with a paring knife and then, using the back of the paring knife, scrape down the inside of the bean to remove the seeds. Add seeds to mixture and discard the rest of the bean). Pulse until ingredients are completely blended. Divide mixture between eight popsicle molds* and add sticks. Freeze for 3 - 4 hours, until solid.
  • To remove from molds, hold mold upside down under warm water and gently tug on the stick until the pop comes out.

4 eggs
1/2 vanilla bean or 2 tsp. vanilla extract
1 cup heavy whipping cream
1 cup orange sections, coarsely chopped
3/4 cup pomegranate seeds

Steps:

  • Heat oven to 325°F.
  • Line 13x9-inch pan with foil, with ends of foil hanging over sides of pan. Combine graham crumbs, 2 Tbsp. sugar and butter; press onto bottom of prepared pan. Bake 10 min.
  • Beat cream cheese and 1/2 cup of the remaining sugar in large bowl with mixer until blended. Add 1/2 cup maple syrup; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
  • Bake 45 to 50 min. or until center of cheesecake is almost set. Cool completely.
  • Refrigerate 4 hrs.
  • Use foil handles to transfer cheesecake from pan to cutting board. Cut vanilla bean piece lengthwise in half. Use tip of knife to scrape seeds from pod into medium bowl. Discard pod. Add whipping cream and remaining sugar to vanilla bean seeds; beat on medium speed until soft peaks form. Spread onto top of cheesecake.
  • Combine oranges and pomegranate seeds; spoon over cheesecake. Drizzle with remaining maple syrup.

1 cup (210g) granulated sugar
Seeds of 2 Cooking Classy Vanilla Beans
3 large eggs
3/4 cup (180g) sour cream
1/3 cup (80ml) heavy cream
Mousse
7 oz white chocolate, roughly chopped
1 1/2 cups (355ml) heavy cream
6 oz cream cheese, nearly at room temperature
1 1/2 Tbsp (22g) granulated sugar
Seeds of 1 Cooking Classy Vanilla Bean
Whipped cream topping
3/4 cup heavy cream
1 1/2 Tbsp (22g) granulated sugar
Seeds of 1/2 Cooking Classy Vanilla Bean (optional)

Steps:

  • For the crust: Preheat oven to 350 degrees. Line the outside of a 9-inch springform pan with a sheet of 18 by 18 heavy duty aluminum foil (make sure the foil has no holes, you don't want any water to leak in). Add graham crackers and sugar to a mixing bowl and stir to combine, then pour in butter and mix with a fork until evenly moistened. Pour into prepared springform pan and press evenly into bottom. Bake in preheated oven 10 minutes, then remove and cool on a wire rack. For the filling: Reduce oven temperature to 325 degrees. Have a large roasting pan ready and boil about 4 quarts of water (you may not need all of it). In a mixing bowl using an electric hand mixer blend together cream cheese, sugar and seeds of 2 vanilla beans just until smooth (scrape down side and bottom of bowl occasionally throughout entire mixing process). Mix in eggs one at a time, mixing just until combined after each addition. Add sour cream and heavy cream and mix just until combined. Tap bowl forcefully against countertop about 30 times to release any large air bubbles. Pour over cooled graham cracker crust and smooth into an even layer. Place cheesecake in roasting pan then place roasting pan in oven and carefully pour in enough boiling water to reach halfway up the side of the cheesecake pan. Bake in preheated oven until cheesecake is set but still jiggly in the center, about 65 minutes, then leave in oven and leaved door closed and let rest 10 minutes. Then remove from oven and cool on a wire rack for 30 minutes. Tent with foil and chill in refrigerator 8 hours or overnight. For the mousse: Melt white chocolate in a microwave safe bowl on 50% power in 30 second increments, stirring between intervals, until melted and smooth (or alternately melt in a double boiler). Set aside and let cool until just lukewarm. In a mixing bowl using an electric hand mixer whip heavy cream until soft peaks form then add sugar and whip until stiff peaks form (the cream should get to the point where it's starting to lose that wet sheen and it should become quite thick. Tap excess cream of beater blades), set aside. In a separate mixing bowl whip cream cheese with seeds of vanilla bean until smooth. Mix in white chocolate (it may appear slightly gritty, that's fine). Add in half of the whipped cream mixture and fold with a rubber spatula until nearly combined, then add remaining half of the whipped cream mixture and fold until combined and no streaks remain. Pour over cold cheesecake and spread into an even layer. Tent pan with foil then return to refrigerator and chill 1 1/2 hours. For the whipped topping: In a mixing bowl whip heavy cream with seeds of 1/2 a vanilla bean if using until soft peaks form. Add sugar and whip until stiff peaks form. Run a knife around edges of cheesecake then spread whipped cream over mousse layer within 2 hours of serving. To serve remove foil from pan, pull latch and remove springform pan ring. Garnish with raspberries and mint if desired, cut into slices.
