One of our favorite cookies to make, the kids love these! After the cookies are finished you can coat with sparkle gel and/or edible glitter to give them some sparkle and add some sprinkles to the still-wet gel for more texture. Let cookies dry completely before stacking.

½ cup butter, softened
½ cup shortening
3 ½ tablespoons cream cheese, softened
1 cup sugar
½ teaspoon salt
1 egg
½ teaspoon almond extract
2 cups all-purpose flour
24 drops assorted food coloring, or as desired
1 tablespoon silver candy decorating dragees, or as desired

Steps:

  • Combine butter, shortening, and cream cheese in a large bowl. Beat using an electric mixer until smooth. Add sugar and salt; beat until combined. Beat in egg and almond extract until well mixed. Gradually add flour, blending until dough is combined.
  • Form dough into a ball with your hands. Stretch into a log shape and divide into 6 portions, or 1 per each color you plan to use.
  • Center 1 portion of dough on a large piece of plastic wrap. Poke a well into the center with your thumb. Add 3 drops of food coloring into the well; fold dough over the coloring. Seal with the plastic wrap and knead the food coloring into the dough. Add more food coloring if needed. Tint each remaining dough ball with a different color.
  • Chill the tinted dough in the refrigerator, about 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a baking sheet.
  • Divide each tinted dough ball into 8 equal pieces. Refrigerating the rest while you work, roll 1 piece out into a 6-inch rope over a waxed paper-lined or lightly floured surface. Repeat with the remaining dough pieces, stacking 1 rope of each color into a pile to make 8 multicolored piles.
  • Gently press the ropes of 1 pile together and use your hands to roll the large multicolored 'rope' until round and smooth. Lengthen to 10 or 12 inches if desired. Cut in half. Use your hands to gently twist and roll both ends of each half in different directions. Use your imagination to coil rope pieces into the shape of unicorn poop. Repeat with remaining dough.
  • Press silver candy dragees into the dough pieces. Place cookies on the prepared baking sheet.
  • Bake in the preheated oven until cookies are set and bottoms are light brown, 8 to 10 minutes; they will not spread very far. Cool on a wire rack.

MAGICAL UNICORN POOP MERINGUES

This spin on classic meringues is fun and tasty! I have even turned off the heat and let them continue to sit in the oven overnight. They are not so much baking as they are drying out the moisture. Although humidity can affect them, I have made them on many a wet day day here in rainy Oregon. I hope you enjoy them!

3 egg whites, at room temperature
1 teaspoon vanilla extract
¼ teaspoon cream of tartar
¾ cup white sugar
6 drops pink food coloring, or as needed
6 drops blue food coloring, or as needed
6 drops purple food coloring, or as needed
1 ½ teaspoons edible rainbow glitter, or as needed

Steps:

  • Preheat the oven to 215 degrees F (102 degrees C). Cover 2 baking sheets with parchment paper.
  • Beat egg whites, vanilla extract, and cream of tartar in a glass, metal, or ceramic bowl with an electric mixer on high speed until soft peaks form. Gradually add sugar, continuing to beat until stiff peaks form. Test the mixture between 2 fingers to make sure all of the sugar has dissolved. If still gritty, continue to beat until smooth.
  • Spoon egg white mixture into a piping bag. Drop in food coloring, spacing the 3 colors evenly apart and pushing them down the sides of the bag with a butter knife.
  • Pipe mixture onto the prepared baking sheets into 1 1/2-inch 'poop'-shaped spirals. Space them close together, as the spirals will not expand. Add more color to the piping bag if meringues start to look too pale. Sprinkle edible glitter over meringues.
  • Bake in the preheated oven until dry and set, about 2 hours.

Sugar Cookie Mix (You can make your own, or just used store bought from a bag in the baking aisle)
Gel Dye Food Coloring (Try these natural food dyes)
Sprinkles (such as stars and silver sugar)

Steps:

  • Mix up the sugar cookie dough according to the package. Split the dough equally into bowls. (You need one bowl for each color, so if you use four dyes like we did, then you will need four bowls.) Stir the dye into the bowl and let it chill in the freezer for about 30 minutes. Take out your dough and split it up into cookie sized pieces. Now you can sort of mix the dough together so it looks like a rainbow swirl. (Don't overmix, or you will end up mixing all the pretty colors together. Roll it out into a snake and spin it around until it looks like a piece of poop. Cook according to package directions and add the sprinkles!

white cake mix (no generic labels, brand names only)
1 1/4 cups buttermilk (in place of the water on the box)
4 eggs
4-4 ounces white chocolate, pudding in dry powder form (the pudding gives it that "from scratch" texture)
1 1/2 teaspoons almond extract
1/2 cup vegetable oil

Steps:

  • Step 1: Combine all ingredients in stand mixer and whip together well using flat beater attachment.
  • Step 2: Take out 3 separate bowls and pour about 1 1/2 Cups of batter in each bowl.
  • Step 3:.
  • ♥For Sky Blue: Mix two small drops of Americolor Gel Paste in one Vanilla Batter Bowl.
  • ♥For Electric Pink: Mix three to four small drops of Americolor Gel Paste in a separate Vanilla Batter Bowl.
  • ♥For Electric Yellow: Mix three to four small drops of Americolor Gel Paste in a separate Vanilla Batter Bowl. (I use more drops of color for the yellow and the pink so that the colors are really vibrant).
  • Step 4: Stop and gaze at the beauty of your bright batter colors in each separate bowl.
  • Pour each color of batter into a separate disposable piping bag, and cut a small hole at the end of the piping bag.
  • Cover the bottom of your cupcake liner with electric yellow batter.
  • ♥Repeat by piping electric pink on top of your electric yellow batter.
  • ♥Repeat again by piping Sky blue on top of your electric pink batter.
  • ♥Now you can add little swirly swirls of extra color, until your cupcake liner is filled 1/2 full.
  • ♥Bake at 325 for appx 18-22 minutes, until a toothpick inserted in the center comes out clean.
