2 slices white sandwich bread, such as country white bread
4 teaspoons salted butter, at room temperature
4 slices American cheese

Steps:

  • Preheat a griddle or nonstick skillet to medium-low. Spread 2 teaspoons of the butter on one side of a bread slice. Repeat with the remaining butter and bread. Place one of the slices butter-side down and shingle the cheese on top, covering the entire surface. Top with the other slice of bread, butter-side up.
  • Place the sandwich on the griddle and cook until the bottom is golden brown and crisp, 3 to 4 minutes. If the bread is browning too quickly, shift the griddle off the heat. Flip the sandwich, then cover with a small metal bowl and cook until the bottom is golden brown and the cheese is melted, 3 to 4 minutes. Once golden brown on both sides, toast the edges of the sandwich, if desired. Transfer to a cutting board, cut in half on the bias and serve immediately.

Butter
4 slices country white sourdough bread, cut on deep diagonal into 1/3-inch-thick slices (each about 7x3 1/2 inches)
4 thin slices prosciutto
8 large fresh basil leaves
8 (1/4-inch-thick) slices young Asiago cheese or drained fresh mozzarella cheese
1/4 teaspoon dried crushed red pepper
2 tablespoons olive oil
6 (1/3-inch-thick) slices heirloom tomato (from about 1 large)

Steps:

  • Preheat oven to 400°F. Lightly butter 1 side of each bread slice. Place 2 bread slices, buttered side down, on work surface. Top each with 2 prosciutto slices, then 4 basil leaves, then 4 cheese slices. Sprinkle with salt and crushed red pepper. Top with remaining 2 bread slices, buttered side up. Heat olive oil in heavy large ovenproof skillet over medium-high heat. Add sandwiches to skillet and cook until golden on bottom, about 4 minutes. Turn sandwiches over; transfer skillet to oven and bake until golden and cheese melts, about 5 minutes. Remove from oven. Carefully lift off top bread slices from sandwiches and insert 3 tomato slices into each, then cover with bread tops and serve.

I always make this sandwich after the holidays when I can get get ham right off the bone. Any other time of the year, I get thick cuts from my local deli. This is my daughter's favorite sandwich and I usually reserve it for special occasions. Enjoy :)

¼ cup finely chopped Granny Smith apple
1 tablespoon finely chopped pecans
1 tablespoon creamy salad dressing (such as Miracle Whip®)
1 tablespoon sour cream
8 slices Colby cheese
8 slices sourdough bread
4 thick slices ham
¼ cup margarine

Steps:

  • Stir together the apple, pecans, salad dressing, and sour cream; set aside. Place a slice of Colby cheese onto 4 of the bread slices, the add the ham, followed by the remaining slice of cheese and bread. Spread the margarine on the outside of the sandwiches.
  • Place the sandwiches into a large skillet and cook over medium-high heat until the bread is golden brown on both sides and the cheese has melted, about 3 minutes per side. Spread the apple mixture into the middle of each sandwich before serving.

3 ounces cream cheese, softened
1/2 cup mayonnaise
2 cups cheddar cheese, shredded
2 cups mozzarella cheese, shredded
1/2 teaspoon garlic powder
1/2 teaspoon seasoning salt
1/4 teaspoon cracked black pepper
12 slices Texas toast thick bread
1/2 cup butter, softened, more if needed

Steps:

  • Blend all ingredients except bread and butter in a medium bowl.
  • Butter one side of each slice of bread.
  • Put sandwiches together using about 1/2 cup of filling each.
  • Place buttered side of bread on the outside of sandwich.
  • Toast on griddle or in skillet until a deep golden brown. Make sure you cook this slowly over low to med-low heat, so that the inside has a chance to melt before the outside gets too done. Kick up the heat when it gets going.

2 purchased cinnamon buns
4 slices aged Cheddar cheese, divided
4 slices Brie cheese, divided
4 slices deli ham, shredded (divided)
1 small apple - peeled, cored, and sliced (divided)
2 tablespoons butter
2 eggs
¼ cup milk

Steps:

  • Slice each bun in half, and place the slices on a work surface. To assemble a sandwich, place the toppings in this order: bottom of cinnamon bun, 1 slice Cheddar cheese, 1 slice of Brie cheese, apple slices, shredded ham, 1 slice of Brie cheese, 1 slice of Cheddar cheese, top of cinnamon bun. Repeat for 2nd sandwich, and gently press each sandwich together.
  • Melt butter in a skillet over medium heat. Whisk eggs and milk together in a bowl.

This recipe comes from Canadian House and Home. It is soooo good. It's baked so it's easy to make more than 1 at a time. The cheese oozes out of the sandwiches while baking and becomes a crunchy crust around the bread. Use a really good bread and slice it extra thick. You can use commercial mango chutney or try this home-made version: recipe#368738

1 loaf white bread or 1 loaf whole wheat bread, unsliced
unsalted butter, for spreading softened
1/2 cup mango chutney (store-bought or home made)
1 1/2 lbs old cheddar cheese, premium-quality

Steps:

  • Place empty baking sheet in oven and preheat to 450°F.
  • Slice bread into 3/4" slices.
  • Butter both sides of bread.
  • Spread half of slices with Mango Chutney.
  • Slice cheese 3/8" thick and place on other slices of bread.
  • Place chutney spread slices over slices with cheese.
  • Remove baking sheet from oven.
  • Place sandwiches on hot baking sheet.
  • Return to hot oven.
  • Bake for 8 minutes, until golden on bottom.
  • Flip over sandwiches and bake another 8 minutes.
  • Let stand 3 to 4 minutes so cheese cools off.
  • Cut into halves or quarters.
