2 tablespoons olive oil
1 onion, chopped
2 teaspoons chopped garlic
4 skinless, boneless chicken breast, chopped
2 (14.5 ounce) cans great Northern beans
20 ounces chicken broth
1 (4 ounce) can chopped green chiles (such as Old El Paso®)
12 sprigs cilantro, chopped
2 teaspoons salt
½ teaspoon cayenne pepper

Steps:

  • Heat olive oil in a large pot over medium-high heat. Saute onion and garlic in hot oil until softened, about 5 minutes. Remove onion and garlic to a small bowl.
  • Stir chicken into any remaining oil in the pot; cook and stir until completely browned, 5 to 7 minutes. Return onion mixture to the pot; add beans, broth, chiles, cilantro, salt, and cayenne pepper.
  • Bring the soup to a boil, reduce heat to medium-low, and cook until the beans are very tender and the chicken cooked through, about 20 minutes.

1 tablespoon dried minced onion
1 package (16 ounces) frozen mixed vegetables
2 cups cubed cooked chicken breast
2 cans (10-3/4 ounces each) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted

Steps:

  • In a large saucepan, bring broth and onion to a boil. Reduce heat. Add the vegetables; cover and cook for 6-8 minutes or until crisp-tender. Stir in chicken and soup; heat through.

SOUP-A-SIMPLE CHICKEN AND MUSHROOM PIE

This is the quickest method I can think of for creating a great tasting pie. No sauce making skills required. The use of short crust pastry really adds to the flavour. Serve with creamy mash and greens.

3 tbsp vegetable oil
500g diced or strips chicken breast (boneless/skinless)
1 medium/large onion chopped
150g button mushrooms, chopped or halved
2 tbsp fresh Thyme chopped (1 tbsp if dried)
294g tin condensed cream of mushroom soup
500g pack fresh short crust pastry or frozen and defrosted
1 egg, beaten for glaze
1 tbsp dried Italian herbs or Thyme
Fresh ground sea salt and black pepper seasoning

Steps:

  • Tip: Remember to get pastry out of fridge 45 mins prior to use. Using a large non-stick frying pan, heat 2 tbsp of the oil. Gently fry the diced or cubed chicken for approx 7-8 mins until golden brown all over, add a little seasoning as you prefer, if using dried thyme add it to this stage of the cooking to allow time for the herb to release its flavour. Do this in batches, if using a smaller pan. Place a sieve or colander over a bowl, pop the chicken into this to drain liquids and aid cooling. Into the same frying pan, heat 1 tbsp of vegetable oil, add the onion, after 1-2 minutes, add the mushrooms and fresh thyme, then fry on a high heat for another 3 mins until the onions start to colour. Once cooked add this to the pre-cooked chicken to drain liquids and cool. Add a handful of frozen petit pois for sweetness and colour. No need to thaw.
  • Empty the can of condensed soup into a medium pan. Tip. Keep can! Use the cream of mushroom one rather than chicken as this will enhance these flavours to balance those of the chicken. Using the empty soup can, add the juices of the drained pie filling top up with water to half a tin. This provides additional liquid necessary to turn the condensed soup into a ready-made mushroom sauce. Gently heat the soup and stir the liquid together until smooth. Add additional water to suit your personal consistency preference. Leave to cool.
  • Add the cooked and cooled pie filling to the sauce and gently stir coating all the meat. Spoon the filling into a large pie or baking dish (approx 20 cm.) with a lip. Pre-heat oven to 220C/fan 200C/gas 7.
  • Using a floured surface, roll out the pastry to 3-4mm thick and at least 30mm larger on all sides of the dish shape you intend to use. Cut a long strip the width of the pie dish rim approx 1cm, brush with the egg, and fix pastry strip to the edge of the pie dish. Brush the strip again with egg, then using a rolling pin to lift the remaining pastry over the pie. Gently crimp around the edges with a fork and trim with a sharp knife. Brush lightly with egg to glaze. If you would like to decorate the top, you can use any of the pasty off-cuts to create leaves or shapes, press them onto the glazed top, and re-glaze these, finally, a gentle sprinkle of dried thyme or italian herbs, freshly ground sea salt and black pepper on top. Last, but not least, put a small knife incision or hole in the centre of the crust to allow the steam to escape.
  • You are now ready to bake. Tip. If you are placing dish directly on rails pop a tray underneath in case the sauce decides to make an early exit. Place towards top of oven, 30 mins or until the pastry is slightly risen and dark golden brown.

Steps:

  • Heat olive oil in a large pot over medium heat. Cook whole chicken breast until browned, about 4 minutes per side. Transfer to a plate. 1 pound carrots, sliced 1/2 inch thick
1 pound parsnips, sliced 1/2 inch thick

Cooked wide egg noodles, for serving

Steps:

  • In a large pot, combine chicken, carrots, parsnips, and onions. Add water to just cover. Stir in salt. Bring to a boil; reduce to a simmer, and cook, partially covered, until chicken is cooked through, about 35 minutes (skim off foam). Transfer chicken to a plate to cool; refrigerate (see note, below). To serve soup, add noodles to broth, and season with salt, if desired.

3 skinless chicken pieces (2 leg quarters & 1 breast)
3 cups water
1 tablespoon olive oil
2 tablespoons tomato paste
2 medium garlic cloves, cut in half

1/2 teaspoon ginger
1/4 teaspoon turmeric

Steps:

  • Sprinkle a small amount of salt, pepper, cumin, & paprika on the chicken. (About 1/2 teaspoon of each spice for all 3 pieces of chicken).
  • Pour 1 1/2 cups of water into the pressure cooker. Add the olive oil, tomato paste, garlic, & the rest of the spices into the pot. (Don't forget 1/2 teaspoon of salt, pepper, cumin, & paprika).
  • Note: If you are using a regular pot instead of a pressure cooker the cook times are tripled & you may need more water.
  • Place the chicken into the cooker & add the onions & carrot. Cook for 10 minutes, after it begins to hiss. (Regular pot, roughly 30 minutes).
  • Remove chicken & place on a plate. Put the potatoes & 1 1/2 cups of water into the pot & cook for 4 more minutes, after it begins to hiss. (Regular pot, 12-15 minutes).
  • While the potatoes are cooking break the chicken into small pieces (disregard the bones).
  • Once the potatoes are done add the chicken back into the pan & stir. Pour into a serving dish & serve with warm bread.

  • Add chicken, stir.
  • Combine hot water and base then add to your pot.
  • Cook (medium boil) for 15 minutes or until carrots are done enough for you.

  • Your soup will thicken and be ready to serve.
  • *You can add more cornstarch mixture if you would like it thicker. I like mine somewhere between a soup and a stew consistency.*.

Carcass and bones from one 4- to 5-pound roast chicken (or a mild-flavored rotisserie chicken)
4 cups low-sodium chicken broth
2 medium carrots, sliced into 1/4-inch-thick rounds
2 celery stalks, sliced into 1/4-inch-thick slices
1 medium onion, chopped
1 bay leaf
1/2 cup white rice
2 tablespoons chopped parsley
Kosher salt

Steps:

  • Put the bones and carcass from a leftover chicken (they can be in pieces) in a large pot. Cover with the broth and 4 cups water. Bring to a boil over medium-high heat, reduce to a simmer and cook for 20 minutes. Skim any foam or fat from the broth with a ladle as necessary.
  • Remove the bones and carcass with tongs or a slotted spoon; set aside to cool. Add the carrots, celery, onion and bay leaf to the broth, bring back to a simmer and cook until the vegetables are about half cooked (they will still have resistance when tested with a knife but be somewhat pliable when bent), about 10 minutes. 32 oz low-sodium chicken broth
1 small onion, chopped
4 medium carrots, peeled and sliced
3 bay leaves (dried)
2-3 sprig(s) rosemary (fresh)
2 chicken breast fillets (boneless, skinless)
8 oz wide egg noodles
salt & pepper to taste

Steps:

  • 1. In a medium-large pot, heat broth, bay, rosemary, onions and carrots to boiling. Add chicken and reduce to simmer. Simmer 10 minutes, then cover and remove from heat. Let stand 15-20 minutes or until chicken is just cooked through. Remove chicken from pot and set aside. Remove bay and rosemary and discard. Taste broth for seasoning. Add salt and pepper as needed. Taste for seasoning, adjust and serve.

1/2 medium onion-chopped
2 Tbsp butter or margarine
3 to 5 large russet potatoes-cubed or red potatoes cubed.
6 1/4 c water
2 tsp salt

1 can(s) (12 ounce) can evaporate milk
1 can(s) whole kernel corn

  • 1. Saute Chicken... In a 4-quart soup pan. Saute onion and butter until onion becomes transparent. Add potatoes,water,salt, and pepper and bring to a boil. 3 X Chicken Breasts
Udon / Ramen Noodles
3 x Pak Choi
3 Gloves of Garlic
1 Whole Red Chili - deseaded and Chopped
Bunch of Spring Onions
600ml Chicken Stock

Steps:

  • Cut the chicken into strips and pan fry in a oil with a little salt and pepper untill brown. Take the chicken out of the pan leaving the juice behind.
  • Cut the Pak Choi bunches length ways to create long strips. Mince the garlic (or finely chop). Finely slice and de-seed a Red Chilli.
  • Fry the Pak Choi, Garlic and Chilli over a low heat untill the Pak Choi starts to wilt, be careful not to burn the Garlic.
  • Once cooked add the chicken and add the 600ml of Chicken stock. In a seperate pan cook the Udon / Ramen noodles in boiling water for approx 4 minutes (untill soft)
  • Drain the noodles and divide into the bowls. Use a slotted spoon to place the Chicken, Pak Choi over the noodle and then ladle the broth over the top. Serve with finely chopped spring onions.

1 (3 to 4-pound) whole chicken
1 quart chicken stock or low-sodium chicken broth
2 quart s water
2 medium onions, quartered
2 carrots, roughly chopped
2 celery stalks, roughly chopped
2 sprigs fresh thyme
5 or 6 parsley stems
1 bay leaf
2 tablespoons unsalted butter
4 ounces whole button mushrooms, quartered
1/2 cup diced onions
1/2 cup sliced carrots
1/2 cup small-diced celery
2 1/4 teaspoon s salt
1/2 teaspoon freshly ground black pepper
1/4 pound dried vermicelli noodles
2 tablespoons chopped fresh parsley leaves

Steps:

  • Place the chicken in a large stockpot or Dutch oven and cover with the chicken stock and 2 quarts water. Add the onion quarters, roughly chopped carrots and celery, thyme, parsley stems, and the bay leaf. Bring mixture to a boil, partially cover and reduce heat to a simmer. Simmer for 1 hour. The chicken should easily pull away from the bones.
  • Using tongs, remove the chicken from the broth and set aside until cool enough to handle. Strain the cooking liquid through a fine-meshed sieve, lined with cheesecloth, discarding the vegetables and reserving the stock. Pull the chicken meat off the bones, discarding the bones, skin, and any fat. Shred and reserve meat.

1 (3 to 4-pound) whole chicken
1 quart chicken stock or low-sodium chicken broth
2 quarts water
2 medium onions, quartered
2 carrots, roughly chopped
2 celery stalks, roughly chopped
2 sprigs fresh thyme
5 or 6 parsley stems
1 bay leaf
2 tablespoons unsalted butter
4 ounces whole button mushrooms, quartered
1/2 cup diced onions
1/2 cup sliced carrots
1/2 cup small-diced celery
2 1/4 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/4 pound dried vermicelli noodles
2 tablespoons chopped fresh parsley leaves

Steps:

  • Place the chicken in a large stockpot or Dutch oven and cover with the chicken stock and 2 quarts water. Add the onion quarters, roughly chopped carrots and celery, thyme, parsley stems, and the bay leaf. Bring mixture to a boil, partially cover and reduce heat to a simmer. Simmer for 1 hour. The chicken should easily pull away from the bones.
  • Using tongs, remove the chicken from the broth and set aside until cool enough to handle. Strain the cooking liquid through a fine-meshed sieve, lined with cheesecloth, discarding the vegetables and reserving the stock. Pull the chicken meat off the bones, discarding the bones, skin, and any fat. Shred and reserve meat.

6 cups fat-free chicken broth
1 lb boneless skinless chicken thighs
1 cup chopped celery
1 cup chopped onion
8 oz (1/2 of 16 oz. bag) frozen carrot coins
8 oz (1/2 of 16 oz. bag) frozen mixed veggies, (peas, carrots, corn, green beans)
1 large parsnip, peeled and chopped
1 cup frozen peas
1 tsp minced garlic, or more to taste
1 bay leaf
1/4 tsp pepper
2 cups uncooked no yolk egg noodles
1/4 cup snipped fresh dill

Steps:

  • Put broth, chicken, celery, onion, carrots, mixed veggies, parsnip, peas, garlic, bay leaf and pepper in large pot. Cover, bring to a boil. Reduce heat, simmer for 25 min, or until chicken is cooked and veggies are tender.
  • Discard bay leaf. Remove chicken to platter to cool. Add noodles to soup, Cover, simmer 10 min or until noodles are tender.
  • Shred chicken with two forks, add to soup along with dill.
