3 1/2 cups all-purpose flour (spooned and leveled)
1 1/4 teaspoons baking soda
1 1/4 teaspoons baking powder
2 teaspoons coarse salt
1 1/4 cups (2 1/2 sticks) unsalted butter, room temperature
1 1/2 cups packed light-brown sugar
1 cup granulated sugar
2 large eggs
1 1/2 teaspoons pure vanilla extract
1 1/4 cups milk chocolate chips
8 ounces semisweet chocolate, chopped

Steps:

  • In a bowl, whisk together flour, baking soda, baking powder, and salt.
  • In a large bowl, using an electric mixer, beat butter and sugars on medium-high until light and fluffy, 6 minutes. Reduce speed to medium-low and beat in eggs, one at a time. Beat in vanilla. Mix in flour mixture just until incorporated; fold in chocolate chips and chunks.
  • Using a 1/4-cup ice-cream scoop or a large spoon, drop dough onto a parchment-lined baking sheet (you should have 24) and refrigerate 1 hour. Preheat oven to 350 degrees, with racks in upper and lower thirds. Arrange 6 unbaked cookies, 3 inches apart, on each of two parchment-lined baking sheets. Bake until edges are light golden brown, 17 to 18 minutes, rotating sheets halfway through. Transfer cookies to a wire rack and let cool. Bake remaining dough using new parchment.

1 1/4 cups cake flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 cup (2 sticks) really cold butter, cut into cubes
1 cup granulated sugar
2/3 cup packed brown sugar
2 large eggs, lightly beaten
2 cups dark chocolate chips, such as Ghirardelli
1/2 cup semi-sweet chocolate chunks

Steps:

  • Whisk together the all-purpose flour, cake flour, baking powder, baking soda and salt in a medium bowl.
  • Use a stand mixer or an electric hand mixer to beat the butter, granulated sugar and brown sugar on low speed, about 30 seconds. Add in the eggs one at a time. Add the dry ingredients a little at time and beat to combine. Set aside about 1/4 cup of the dark chocolate chips for the topping, then mix in the remaining dark chocolate chips and semi-sweet chocolate chunks.
  • Portion extra-large balls of dough with a 1-cup ice cream scoop on two baking sheets lined with parchment paper. With the reserved dark chocolate chips, press a few chips right on top of each ball. This will help to get little pools of chocolate. Place 4 to 5 balls of dough on each prepared baking sheet and place in the freezer for at least an hour and up to overnight.
  • When ready to bake, preheat the oven to 375 degrees F. Bake one sheet of cookies at a time, until the edges and spots on top are golden but the insides are still slightly doughy, 15 to 18 minutes.

3/4 c crisco all-vegetable shortening
1 1/4 c brown sugar, firmly packed
2 Tbsp milk
1 Tbsp vanilla extract
1 large egg
1 3/4 c all purpose flour
1 tsp salt
3/4 tsp baking soda
1 c semi-sweet chocolate chips
1 c coarsely chopped pecans (optional)

Steps:

  • 1. Heat oven to 375 degrees. Beat shortening and brown sugar in large bowl with an electric mixer at medium speed until light and fluffy. (When I made this I just mixed with a sturdy plastic spoon).
  • 2. Beat in milk, vanilla and egg. Stir in flour, salt and baking soda.
  • 3. Mix in chocolate chips and nuts. (TIP- If nuts are omitted, add an additional 1/2 cup semi-sweet chocolate chips). Drop by rounded measuring tablespoonfuls 2" apart onto ungreased cookie sheets.
  • 4. Bake 8-10 minutes for chewy cookies or 11-13 minutes for crisp cookies. Cool 2 minutes on cookie sheet. Transfer cookies to cooling rack.

1 1/4 cups firmly packed light brown sugar
2 tablespoons milk

1 extra large egg

3/4 teaspoon baking soda
1 cup real semi-sweet chocolate chips
1 cup similar nuts (optional) or 1/2 cup chocolate chips (optional)

Steps:

  • Preheat oven to 375°F.
  • Combine shortening, sugar, milk and vanilla in large bowl.
  • Beat at medium speed of electric mixer until well blended.
  • Beat in egg.
  • Combine flour, salt and baking soda in small bowl.
  • Mix into creamed mixture at low speed until just blended.
  • Fold in chocolate chips and nuts.
  • Drop rounded tablespoonfuls of dough 3-inches apart onto ungreased cookie sheet (I prefer air-bake cookie sheets).

1 cup packed brown sugar
1/2 cup granulated sugar

1 cup brown sugar

2 eggs
1 tsp salt

150g hazel nuts
2.25 cups plain flour

  • Roast or grill the hazel nuts. Cool. Grind to a rough powder. (If you're using salted hazelnuts, reduce the added salt to half a teaspoon.) Break chocolate into chunks. Cream the butter and 2 sugars. Add the eggs - and cream again. Mix in the salt and vanilla. Mix in flour, oats and powdered nuts. Mix in chocolate chunks. Put cookie dough in the fridge to get cold - about 2 hours at least. Set oven too 200 celcius. Form dough into egg-shaped balls - and place on a greased baking tray. Steps:

  • In double boiler over hot water, melt the bittersweet chips with butter. In mixer, beat eggs and sugar until thick; stir in chocolate mixture. Mix in flour/powder. Gently mix in semi-sweet chips and walnuts. With plastic wrap, roll 2 logs of dough (2x8) Wrap tightly and refrigerate for at least 1 hour. Preheat oven to 375* F. 4 cups (24oz) semisweet chocolate chips (divide into 2, 2 cup portions)

Steps:

  • PREHEAT the oven to 375˚ SET OUT the butter and allow it to get to room temp. MELT 2 cups semi-sweet chocolate in heavy duty saucepan over low heat, stirring constantly until smooth. Remove from heat. COMBINE: Sift flour, baking soda, and salt in a medium bowl; set aside. In a large mixing bowl, beat room temp butter, brown sugar, granulated sugar, and vanilla extract until well blended. Beat in egg on low speed until combined, then add milk until combined. Beat in approximately 3/4 of the melted chocolate to butter/sugar mix until well blended. Add a little of the remaining melted chocolate a little bit at a time to taste (I usually have about 2-3 tablespoons of the melted chocolate left over). Gradually beat in flour mixture, dough will be fluffy. Stir in remaining 2 cups of chocolate chips. Drop spoonfulls of dough onto ungreased cookie sheets. (*For a thinner cookie, slightly flatten the balls of dough on the sheet. You can also refrigerate the dough for 20 mins for a crunchier consistency.) BAKE 8-10 minutes or until cookies are puffed. Cool on baking sheet for a few minutes and then transfer to wire racks to cool completely. Enjoy!

2 cups all-purpose flour
2 teaspoons kosher salt
3/4 teaspoon baking soda
1 cup unsalted butter, softened
3/4 cup light brown sugar
2/3 cup granulated sugar
2 eggs
2 teaspoons vanilla extract
2 cups milk chocolate chips
one 3-ounce bar dark chocolate, finely chopped

Steps:

  • In a medium bowl, whisk together the flour, salt and baking soda.
  • In a stand mixer fitted with the paddle attachment, cream the butter with the sugars until light and fluffy, 2 minutes. With the motor running, add the eggs, one at a time and scraping the sides of the bowl as needed. Add the vanilla and mix to incorporate.
  • Add the dry ingredients and mix slowly until a smooth dough forms. Remove the bowl from the mixer and fold in both chocolates with a spatula. Cover with plastic wrap and refrigerate for at least 2 hours and preferably overnight.
  • Preheat the oven to 350° and line 2 sheet pans with parchment paper. Scoop the cookie dough into twenty 1/4-cup balls. Working in 2 batches, bake the cookies, placing 5 cookies on each tray 2 inches apart from each other, until golden brown, about 16 minutes. Let cool slightly, then serve warm.

85g butter
1 tbsp cocoa powder
1 tsp instant coffee granules
85g light muscovado sugar
25g golden granulated sugar
85g dark chocolate , about 70% cocoa solids (we used Lindt as it keeps its shape when baked)
1 medium egg , beaten
½ tsp vanilla extract
140g plain flour
½ tsp bicarbonate of soda

Steps:

  • Line a couple of baking sheets with baking parchment. Put the butter, cocoa and coffee in a medium saucepan then heat gently until the butter has melted. Remove from the heat, stir in both the sugars, then leave to cool.
  • Chop the chocolate into small pieces. Beat the egg and vanilla into the cooled butter mix to make a smooth batter. Stir the flour and bicarbarbonate of soda together. Tip it into the batter mixture with two-thirds of the chocolate, then gently stir together to combine. Don't overmix. Leave for 10-15 mins to firm up slightly, ready for shaping. Heat oven to 180C/160C fan/gas 4.
  • Using your hands, shape the mixture into 22 small balls. Lay them on the lined sheets, well apart so they have room to spread (you may have to bake in batches). Press the rest of the chocolate pieces on top of each cookie. Can be frozen on sheets and then transferred to bags at this stage for up to 1 month. Bake for 12 mins. Leave on the sheets for a couple of mins, then transfer to a cooling rack.
