BAKED SQUASH AUNT FANNY'S CABIN image

Number Of Ingredients 8

3 lbs. yellow summer squash or zucchini (I use half of each)
3/4 cup bread crumbs, divided in half
1/2 cup minced onion
2 eggs, lightly beaten
1 stick butter, divided in half
1 Tbsp. sugar
1 tsp. salt
1/2 tsp. pepper

Steps:

  • Wash squash, trim ends, cut into 1" pieces. Cook squash until tender, drain & mash coarsely by hand or in food processor. Preheat oven to 375 degrees. In a bowl, combine squash, 1/2 cup bread crumbs, onions, eggs, 1/4 cup melted butter, sugar, salt & pepper. Transfer mixture to lightly buttered gratin dish and pour 1/4 cup melted butter over the top. Sprinkle top with 1/4 cup bread crumbs. Bake the squash in 375 degree oven for 1 hour, or until it is puffed and the crumbs are browned. *I got this recipe from Gourmet Magazine in the late 70's. Good for a crowd, everyone seems to like it.
