Incredible Chicken Quesadillas are packed with juicy chicken, peppers, onions, garlic, and lots of melty cheese. They are an easy and healthy idea that is perfect for those hectic weeknights.

1 pound chicken breasts ((cut into bite sized pieces))
1 tablespoon oil
1/2 cup diced bell pepper ((any color))
1/2 cup diced onion
1 medium jalapeno, diced ((optional))
2 cloves garlic ((minced))
1 tablespoon taco seasoning
2 cups shredded melting cheese
4 medium flour tortillas

Steps:

  • Cut chicken breasts into small bite size pieces. Heat oil over medium-high heat in a large heavy duty pan. Add the chicken breasts and taco seasoning to the pan. Sautee 4-5 minutes then add the bell pepper, onion, and garlic, sautee another 5 minutes or until the chicken is cooked through. Remove mixture from the pan and set aside.
  • To the same pan, add ½ teaspoon oil and a tortilla, top with a handful of shredded cheese, and 1/4th the chicken mixture, then with more cheese. Fold the tortilla and cook on both sides until crispy and golden. Remove from the pan and repeat with remaining tortillas.
  • To serve: Slice tortillas in half or thirds and serve with sour-cream, salsa, guacamole or your favorite dipping sauce.

My son was at a party and he had came home raving about how good these were, so I called and got the recipe from another Mom. They are very good and pretty quick fix for super.

2 cups cooked chicken (chopped or shredded)
1 medium onion (diced)
1 (4 ounce) can diced green chilies
1 (10 ounce) can rotel (drained)
1/4 teaspoon cumin
1/4 teaspoon garlic salt
16 ounces sour cream
3 cups shredded cheddar cheese
6 inches flour tortillas
2 tablespoons vegetable oil

Steps:

  • Saute onion, rotel, spices and chicken in a bit of the oil until hot. (I use a rotisserie chicken from the supermarket and I like to slice fresh mushrooms in to this mixture also).
  • Spread some sour cream on 5 tortilla shells. I like it kind of thick.
  • Spread the chicken and vegetable mixture, I use quite a bit.
  • Sprinkle with cheese then top with another tortilla shell. Mash it down.
  • Fry them in a bit of vegetable oil in a nonstick skillet for a couple of minutes on each side.

An attempt to copy Rock Ola Grille's fabulous chicken quesadillas! After having many quesadillas in several restaurants this is absolutely the best! The flavor just can't be beat. Melt in your mouth! Easy!

Yield 1 quesadillas

Number Of Ingredients 10

2 flour tortillas (8-inch)
2 tablespoons butter
1 1/2 cups cooked chicken, diced small
4 slices cooked bacon, crumbled
1/2 cup fresh tomato, diced small
2 tablespoons red onions, finely chopped
1 cup cheddar cheese, shredded
4 tablespoons barbecue sauce
picante sauce
sour cream

Steps:

  • Butter one side of each tortilla. Place one tortilla (buttered side down) into a nonstick skillet.
  • Evenly sprinkle chicken, bacon, tomatoes, onion. Drizzle bar-b-que sauce over all. Sprinkle cheese over and top with remaining tortilla (buttered side up).
  • On medium heat, cook approximately 3 minutes, watching underside of tortilla for browning. Press with spatula while cooking. Carefully flip entire tortilla over using spatula. Cook approximately 3 minutes until light brown and cheese is melted.
  • Remove to a plate and cut into 6 triangle pieces. Serve with picante sauce and sour cream.
