DUCK BREASTS IN BLUEBERRY MADEIRA SAUCE image

MARINADE:
1/3 cup blueberries
1 cup dry red wine
1/4 cup red wine vinegar
1/4 cup diced carrot
1/4 cup celery
1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh rosemary
1/3 cup diced onion
1/4 teaspoon cracked black pepper
4 duck breasts, skin on
BLUEBERRY MADEIRA SAUCE
1 1/2 cups fat-free duck or chicken stock
1/4 teaspoon extra virgin olive oil
1 tablespoon chopped shallot
1 minced garlic clove
2 tablespoon madeira wine
1/4 cup blueberries
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper

Steps:

  • Combine all marinade ingredients in a bowl. Put the duck in the marinade, turning to coat. Cover and marinate overnight or all day in refrigerator. Make Sauce: pour stock into saucepan, add shallots and garlic and cook until golden. Add the madeira and simmer until reduced by half. Add blueberries and stock and simmer for 5 minutes. Add salt and pepper, spoon into a blender and blend until smooth. Pour through strainer and set aside. Preheat oven to 375. Spray an oven-proof skillet with non-stick cooking spray and place over medium heat. Remove duck breasts from marinade, discard marinade and place meat in hot skillet. Brown on both sides, then transfer pan to oven and cook additional 5 to 6 minutes for medium rare or until desired doneness. To serve, remove skin from duck and spoon 2 tablespoons of sauce over each breast.
