A delightful Shortbready type cookie with a lovely orange cream filling, I got this recipe out of one of my older cookbooks and thought I would share.

220 g butter
1/2 cup icing sugar
2 tablespoons grated orange rind
1 tablespoon cornflour
1 cup plain flour
1/2 cup self raising flour
icing sugar, extra
60 g butter
1 cup icing sugar
2 tablespoons orange juice
orange food coloring

Steps:

  • Cream butter, sifted icing sugar and rind till fluffy, Add cornflour mix well. Add sifted flours gradually, beat well till smooth.
  • Fill into a piping bag with star tube and pipe 2.5cm stars onto lightly greased oven trays, Bake in mod oven for 15 minutes until pale golden brown. Cool on racks.
  • Sandwich cookies together in pairs with orange cream filling, dust with icing sugar.
  • Orange Cream, beat soft butter with sifted icing sugar till smooth, add a few drops orange food colour and orange juice.

KYIV CAKE (UKRAINIAN CLASSIC)

Kiyv Cake is light and airy in the center, with a bit of a crunch, sandwiched by soft sponge layers. It's a true Ukrainian Classic cake. It takes an effort of love, but the outcome will have you come for seconds!

1 sponge cake (See link to a recipe above )
6 egg whites (at room temperature)
1 1/3 cup sugar
1 cup hazelnuts (chopped)
2 cup jam (strawberry, peach or apricot )
6 egg yolks
1/3 cup water
8 tbsp condensed milk
4 oz chocolate chips
400 g Unsalted Butter (room temperature)

Steps:

  • Prepare an 11 inch sponge cake. Refer to our famous Sponge Cake recipe.
  • Whip egg whites on high speed until they are doubled in volume.
  • Gradually add sugar until well combined.
  • Using a spatula, stir in a circular motion while gently mixing in the hazelnuts.
  • Spread the mixture onto 11 inch baking pan, lined with parchment paper or aluminum foil. Bake it at 250°F for 6 hours.
  • In a small pot, beat egg yolks. Add water and condensed milk, and stir until smooth.
  • Cook all ingredients on very low heat. Continue mixing the cream the entire time to prevent the cream from sticking to corners. Slowly increase the heat, but do not bring the mixture to a boil. Cook until the mixture attains the texture of condensed milk, about 5-10 minutes.
  • Remove the mixture from the heat and add chocolate chips. Allow a few minutes for the mixture to melt, before mixing it through. Let the mixture cool off to room temperature.
  • In a separate bowl, beat butter. Once the butter is fluffy, add the cream mixture to the butter, a few spoonfuls at a time, until fully blended.
  • Using a serrated knife, slice the sponge cake horizontally in half. Cover each layer with jam, excluding the top layer.
  • Place the first layer of sponge cake and cover it with cream, followed by meringue, then again, a layer of cream.
  • Once the cake is put together, frost the sides, then top with the remaining cream and your choice of decoration.

CAKE BATTER:
500 grams (2½ cups) granulated sugar
grated rind of 3 oranges (=4½ tablespoons)
juice of 3 oranges (=1 cup)
10 egg yolks
250 grams almonds (just under 2 cups whole nuts), ground with skins left on-(do not use packaged pre-prepared nuts, as they often have less taste or have a chemical under-taste)
30 grams (1/4 cup) fine breadcrumbs (commercial ones are okay)
10 egg whites (room temperature)
FILLING/ICING:
190 ml (3/4 cup) milk
2 egg yolks
15 grams ( 1½ tablespoons) all-purpose white flour
100 grams (7 tablespoons) unsalted butter
100 grams (5/6 cup) confectioner's (icing) sugar
30 grams almonds (just under 1/4 cup whole nuts), ground with skins left on
grated rind of 1 orange (=1½ tablespoons)
juice of 1 orange, freshly squeezed (=1/3 cup)
juice of ½ lemon (or less, to taste) (=2 tablespoons)

Steps:

  • CAKE BATTER: Mix sugar, orange rind, and orange juice. Cook over low heat for several minutes, until thick. Let cool. Preheat oven to 325-350F degrees (see below). Beat egg yolks until light and fluffy, and add ground almonds and the above orange syrup to yolks gradually; mix well. Add breadcrumbs and mix. Whip egg whites well (until soft peaks form), and fold them thoroughly into above mixture. Butter and lightly breadcrumb two 25 cm. (10") round cake pans. (Use the spring-form type with removable sides.) Pour half the batter into each pan. Bake in pre-heated 350F oven until done, perhaps 30 minutes (or use 325F oven for up to 45 minutes). Let cool to room temperature, and remove from pans. FILLING/ICING: Mix milk, egg yolks, and flour together. Cook over double boiler (or very carefully over low heat, stirring constantly for the first five minutes and frequently thereafter--it burns easily, so do not walk away and leave it!) until mixture is like very thick cream. (This may take 30 to 40 minutes.) Let cool to room temperature (to speed up cooling, you can stir it). Mix butter and icing sugar together until light and fluffy. Combine the two above mixtures together with remaining filling ingredients. Mix well. ASSEMBLY: Take one of the cake layers and spread with 1/3 to ½ of the filling/icing mixture. Place second cake layer on top. Ice the cake (top and sides) with the remaining filling. (If wish, can decorate top with whole almonds.) Refrigerate. Wait a day or two before serving, to let the taste develop fully. It will keep well for at least a week, but may get a bit soggier over time.

8 eggs, SEPARATED
1 1/2 cups confectioners' sugar (icing)
2 cups walnuts, grated
4 tablespoons fine breadcrumbs
4 eggs, SEPARATED
2/3 cup confectioners' sugar
1 1/2 teaspoons grated lemon rind
1 tablespoon lemon juice
2/3 cup grated almonds
2 tablespoons fine breadcrumbs
3 egg yolks
1 1/2 cups confectioners' sugar
1/2 cup butter
3 tablespoons strong cool coffee
1 teaspoon vanilla

Steps:

  • FOR THE WALNUT TORTE: Beat the egg yolks until light. Add the sugar gradually and beat until thick and fluffy. Stir in the nuts and bread crumbs.
  • Beat the egg whites until stiff and fold gently into the mixture.
  • Butter 2, (9 inch )deep layer pans (shallow pans may cause the batter to run over in the oven) with soft butter and sprinkle with fine bread crumbs.
  • Spoon the batter into the pans. Bake 350 degrees F.,for 30 to 35 minutes, or until done when tested.
  • Remove from the pans and place on a cake rack.
  • FOR THE ALMOND LAYER: Beat the egg yolks until light. Add the sugar gradually and continue beating until thick and fluffy. Beat in the lemon rind and juice. Stir in the almonds and bread crumbs.
  • Beat the egg whites until stiff and fold gently into the mixture. Spoon the batter into a deep, buttered layer cake pan sprinkled with bread crumbs.
  • Bake in a moderate oven (350 degrees F.) for 30 to 35 minutes or until done. Remove from the pan and place on a cake rack. Prepare the following filling.
  • FOR THE FILLING: BLEND the egg yolks with 1/2 cup of the sugar in a saucepan; cook this mixture OVER simmering water, stirring constantly, until it thickens.
  • Remove it from the heat and cool.
  • Cream the butter, add the remaining 1 cup of sugar gradually, and continue creaming until smooth.
  • Blend in the yolk-sugar mixture, coffee, and vanilla. Beat thoroughly.
  • Spread this filling between the 3 layers of the torte, on the sides, and over the top. Decorate with toasted, slivered almonds.

Great-Grandma used prunes and prune fillings in many goodies of her own creation. Prune torte is one of them. The filling is even more delicious when made with an equal quantity of dates and prunes.

1 cup butter
1 cup confectioners' sugar, divided
1 egg
½ teaspoon almond extract
1 pinch salt
¾ cup blanched almonds
2 cups sifted all-purpose flour
16 ounces pitted prunes
1 cup water
1 cup white sugar
1 teaspoon ground cinnamon
1 tablespoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour 5 (8 inch) round pans.
  • Grind the blanched almonds in a food processor with 1/4 cup confectioners' sugar. Cream the butter with the remaining 3/4 cup confectioners' sugar until light and fluffy. Beat in the egg. Stir in the almond extract, salt, and ground almond mixture. Add the flour and mix thoroughly. Divide the dough into 5 equal parts. Roll each piece between 2 sheets of waxed paper or parchment paper to fit the pans, or pat each piece of dough into the prepared pans.
  • Bake in the preheated oven until the edges begin to brown, about 20 minutes. Remove from the pans while still hot.
  • To make the Prune Filling: Place the prunes in a saucepan with the water. Bring to a boil, remove from heat and let stand for 10 minutes. Drain and reserve the liquid. Puree the prunes in a food processor.
  • Return the prune puree to the saucepan and add the white sugar, cinnamon, lemon juice and 4 tablespoons reserved prune liquid. Bring the mixture to a boil, then remove from heat. Assemble the torte layers, spreading them with warm prune filling. Let stand for 24 hours before slicing.

3 tablespoons rum
2 tablespoons strawberry preserves
2 tablespoons apricot preserves or 2 tablespoons pineapple preserves
1 cup frozen whipped topping
1/4 cup toasted sliced almonds

Steps:

  • Cut pound cake lengthwise ito 3 layers.
  • Sprinkle 1 cut side of each layer with 1 tbsp rum.
  • Place bottom cake layer on serving plate; spread with strawberry preserves; top with middle cake layer; spread with apricot preserves.
  • Replace top layer of cake.

Most tortes are compact and flat as compared to the modern high and fluffy cakes. Eggs add lightness to them and, in place of flour, ground nuts or bread crumbs are used as a thickening. Most of the Ukrainian tortes are rich, and the richer the better, since no one is calorie-conscious in Ukraine. The Kyivsky torte consists of layers of sponge cake containing ground hazelnuts or walnuts separated by buttercream filling.

3/4 lb ground walnuts or 3/4 lb hazelnuts (filberts, about 3 1/2 cups)
12 eggs, separated
3/4 cup granulated sugar
3 tablespoons fine breadcrumbs
1 1/2 cups extra strong coffee (rounded Tablespoons if using instant)
1 ounce unsweetened chocolate or 2 ounces semisweet chocolate
5 egg yolks
2 1/2 tablespoons flour
1 cup unsalted butter (room temperature)
1 cup sugar

Steps:

  • Beat the 12 egg Yolks until light and beat in the sugar gradually (a tablespoon at a time).
  • Beat until lemon colored, light and fluffy.
  • Fold in the bread crumbs and the nuts.
  • Beat the 12 egg whites until stiff.
  • Lighten the nut mixture with a bit of the egg whites and then genly fold into the mixture the rest of the whites.
  • Butter 2 deep layer pans 9 or 10 inch springform pans (shallow pans may cause the batter to run over in the oven) with soft butter and sprinkle with fine bread crumbs.
  • Regular pans can be used, in this case use parchment paper for the bottom of pan and grease the paper also.
  • Bake in a 325 F.
  • oven for about 30--35 minutes.
  • Test cake with a toothpick in the centre of the cake, if it comes out clean the cake is done.
  • Cool for 10 minutes and gently with a knife go around the cake to loosen and gently invert and place on a cake rack.
  • Fill and frost the cake with the filling.
  • If you wish more layers cut each cake in half and fill so that you will have 4 layers.
  • FOR THE BUTTERCREAM FILLING AND ICING: Over simmering water in a double boiler add 1 cup HOT strong coffee and add the chocolate, mixing well to melt.
  • In a separate bowl-- Beat the 5 egg yolks until light and set aside.
  • Blend 2 1/2 Tablespoons of the flour in the remaining 1/2 cup COLD coffee and blend well until smooth and free of any lumps.
  • Add the flour mixture to the whipped egg yolks and mix well.
  • Add this mixture whisking quickly to the melted chocolate (in the double boiler) and cook until thickens stirring frequently for about 10 minutes.
  • When mixture has thickened set it aside to COOL.
  • Beat 1 cup unsalted butter with the 1 cup of sugar until light and fluffy and gradually beat in the cold chocolate pudding mixture little at a time into the butter and beat until fluffy.

1/4 cup cocoa powder
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup butter or 3/4 cup margarine, softened
1 3/4 cups sugar, divided
6 eggs, separated
1 tablespoon vanilla
1/2 cup milk
1/2 cup sugar
1 tablespoon cornstarch
1/2 cup water
1/3 cup orange juice
1 tablespoon grated orange zest
4 egg yolks, beaten
2 teaspoons vanilla
whipped cream
sliced almonds

Steps:

  • Preheat oven to 350 degrees. Line three 9-inch round cake pans with waxed paper, then grease the waxed paper.
  • Sift flour with cocoa powder, baking powder and salt. Set aside.
  • In a small mixing bowl, combine 3/4 cup butter, 3/4 cup sugar and 6 egg yolks. On high speed of an electric mixer, beat until light and fluffy. Stir in 1 tablespoon vanilla.
  • Add flour mixture alternately with milk, beginning and ending with flour. Spread batter into the prepared pans, dividing evenly; set aside.
  • In a clean bowl with clean beaters, beat 6 egg whites until soft peaks form. Gradually beat in remaining 1 cup sugar; beat until stiff but not dry. Dividing evenly, spread meringue over the batter in each pan.
  • Bake for 30-35 minutes or until cake is done and meringue is lightly browned. Let cool in pans 10 minutes. Carefully remove from pans; peel off paper. Cool layers completely on wire racks, meringue side up.
  • Meanwhile, prepare orange curd: In the top of a double boiler, stir together 1/2 cup sugar and cornstarch. Stir in water, orange juice and orange zest. Blend in 4 beaten egg yolks.
  • Cook over hot (not boiling) water, stirring constantly, until mixture thickens, about 8 minutes. Remove from heat. Stir in 2 teaspoons vanilla. Cover with waxed paper; let cool completely.
  • To assemble: Place a cake layer, meringue side up, on a cake plate. Spread a third of the orange curd over the meringue. Repeat twice, using remaining layers and curd. Garnish with whipped cream and sliced almonds, if desired.
  • Note: If desired, replace 1 tablespoon of orange juice with 1 tablespoon orange liqueur.
