ORIGINAL UGLY DUCKLING CAKE

From the early 70s, this cake is easy and moist. Made with a cake mix and canned fruit cocktail, it's really not ugly at all.

1 yellow cake mix
1 can(s) 16 ounces fruit cocktail in heavy syrup
2 1/2 c sweetened coconut
2 eggs
1/2 c light brown sugar
1/2 c butter
1/2 c sugar
1/2 c canned evaporated milk (not sweetened condensed milk)

Steps:

  • 1. Preheat the oven to 325 degrees and spray a 9x13 inch baking pan with nonstick cooking spray.
  • 2. In the bowl of an electric mixer, add cake mix, fruit cocktail with syrup, 1 cup of the coconut and the eggs. Mix on medium low for 2 minutes, or until well blended. Pour into prepared pan. Sprinkle with brown sugar. Bake 45 minutes, or until set but don't overbake.
  • 3. While cake is cooking, make topping by heating the butter, sugar and milk on medium low in a saucepan, stirring occasionally. Once it boils, boil for 2 minutes. Remove from heat and add remaining coconut. Pour over hot cake when removed from oven. Serve warm or cool.

1 (18 1/4 ounce) package yellow cake mix
1 (3 ounce) package instant lemon pudding mix (4 serving size)
1 (16 ounce) can fruit cocktail in heavy syrup
1 cup coconut, flaked
4 eggs
1/4 cup oil
1/2 cup brown sugar
1/2 cup nuts, chopped
1/2 cup butter
1/2 cup sugar
1 1/3 cups coconut
1/2 cup evaporated milk

Steps:

  • Blend all cake ingredients except for brown sugar and nuts and beat 4 minutes with electric mixer at med. speed.
  • Pour into a well greased 9 x 13 pan.
  • Sprinkle with the brown sugar and nuts.
  • Bake in a 325F oven about 45 minutes or tested done. Cool 15 minutes.
  • Meanwhile make glaze by combining glaze ingredients and boiling for 2 minutes.
  • Pour over warm cake.

This came from a friend in my Sunday school class several years ago. I've never tried it, but just now found it in my stack of saved recipes. I'm putting it here so that I don't lose it. I've found other similar recipes on here, but none that are exactly the same.

1 (18 1/4 ounce) box yellow cake mix
1 (3 ounce) box instant lemon pudding (you can also use vanilla)
1 (16 ounce) can fruit cocktail in heavy syrup (do not drain)
4 eggs
1/4 cup oil
1 cup coconut
1/2 cup butter
1/2 cup evaporated milk
1/2 cup sugar
1 1/2 cups coconut
1/2-1 cup chopped pecans

Steps:

  • Set ½ cup brown sugar aside to sprinkle on cake before you bake. (I have used both dark and light, either is yummy.).
  • Mix all ingredients except brown sugar and pour into a 9 x 13 greased and floured cake pan.
  • Sprinkle brown sugar on top of cake batter.
  • Bake at 350 degrees for about 40 minutes or until toothpick comes out clean.
  • Cool 15 minutes and pour glaze over top of warm cake.
  • Enjoy!
  • NOTES: My friend preferred brown sugar when making the glaze, and she said she used about 1/2 of a 12-oz. can of evaporated milk when making the glaze.

Clipped from the newspaper years ago. This is very, very sweet. I looked at several other recipes and almost everyone called for a small box of lemon pudding so I added it to mine.

1 (17 ounce) can fruit cocktail, including juice
2 eggs, large
2 cups coconut
1/2 cup brown sugar, packed
1/2 cup evaporated milk
1/2 cup sugar
1/2 cup butter

Steps:

  • Preheat oven to 325°F.
  • In large mixer bowl, combine cake mix, fruit cocktail and liquid, eggs and 3/4 cup coconut.
  • Blend well, beating at medium speed for 2 minutes. Pour into a greased 9x13x2-inch pan.
  • Sprinkle with brown sugar.
  • Bake for 45 minutes or until cake springs back when pressed gently with finger.

1 pkg yellow cake mix
1 pkg lemon instant pudding
16 oz can fruit cocktail
1 c coconut
4 eggs
1/4 c vegetable oil
1/2 c brown sugar
1/2 c chopped pecans
FROSTING
1/2 c butter
1/2 c granulated sugar
1/2 c evaporated milk

Steps:

  • 1. Blend cake mix and instant lemon filling together with mixer. Add fruit cocktail, coconut and oil, then beat eggs until foamy and add to cake mixture. Pour into 13 x 9 inch greased cake pan. Sprinkle 1/2 cup light brown sugar and 1/2 cup chopped pecans over batter. Bake at 350 degrees for 45 minutes.
  • 2. Mix oleo, granulated sugar and evaporated milk. Boil for 2 minutes. Stir in 1 1/2 cups coconut. Pour on top of cake (when cooled).

2 2/3 c flaked coconut
2 eggs
1/2 c brown sugar, firmly packed
1/2 c butter or margerine
1/2 c grabulated white sugar
1/2 c evaporated milk

Steps:

  • 1. Combine cake mix, fruit, 1 1/3 cups of coconut and eggs. Blend and beat at medium speed for 2 minutes. Pour into greased 9x13 pan. Sprinkle with brown sugar. Bake at 325 for 45 minutes or until cake springs back when lightly touched.
  • 2. Bring butter, sugar, and milk to boil and boil for 2 minutes. Remove from heat and stir in remaining coconut. Spoon over warm cake. When ready to serve, top with whipped cream.
  • 3. If you use cake mix with pudding adjust recipe to 3 eggs and 1/3 cup oil.

I orginally got this recipe from a Readers Digest, but I do not remember what year, probably late 70's. Very moist yellow cake with a moist coconut pecan topping. The kind you would use on a german chocolate cake. This cake is wonderful served with a dollop of cool whip or whipped cream on top.

4 eggs
1/4 c vegetable oil
2 1/3 c coconut, shredded divided
1 box instant lemon pudding mix
1/2 c brown sugar, firmly packed
1/2 c pecans chopped
1/2 c butter
1/2 c sugar
1/2 c evaporated milk

Steps:

  • 1. preheat oven to 325. grease and flour 9x13 inch pan.
  • 2. In mixer bowl, combine cake mix, fruit cocktail, eggs, oil, 1 cup of coconut and pudding. Beat well with mixer for 4 minutes and pour into prepared pan. Mix together pecans and brown sugar and sprinkle over batter.
  • 3. Bake in 325 degree oven for 45 minutes. While cake is baking, combine butter, sugar and evaporated milk in small pan. Cook until boiling and boil for 2 minutes. Remove from heat and add remaining 1 1/3 cup coconut.
  • 4. Remove cake from oven and spoon mixture over hot cake. Allow cake to cool some before serving. Cake can be served warm or cold.

BLUEBERRY JAM CAKE OR AS I CALL IT "THE UGLY DUCKLING CAKE"



Blueberry Jam Cake or as I call it

Ok so its not the prettiest cake in the bakery lol, the addition of the jam makes the cake a very dark color as does the addition of the blueberry juice to the glaze, but as my son says "its not how it looks but how it tastes that matters!" And let me tell you this turned out amazing! It is like a giant, super moist, super flavorful blueberry muffin! the glaze gave it that extra flavor, however this cake is so delicious it can stand on its own or you can dust it with a bit of powdered sugar. I was bored after work yesterday since my son was off with his daddy and i hit the kitchen. Groceries were slim pickens lol since i am back to work and have to wait till fridays to shop now. : ) So I pulled out a few things from the frig and cabinet and this is what i came up with!! Will definitely be trying this with other flavors of jam!! Dont let the funny color turn you off, if you make this cake you will absolutely love it!!

- 1 pillsbury moist supreme classic white cake mix
- 16 to 18 oz jar of blueberry preserves or jam (i used smuckers)
- 1/2 c milk
- 1/2 c oil
- 1 tablespoon vanilla
- 3 extra large eggs
GLAZE (AMOUNTS DEPEND ON HOW MUCH GLAZE YOU WANT (I DID JUST A DRIZZLE)
- confectioners sugar
- milk
- blueberry juice (to taste)

Steps:

  • Preheat oven to 350 and spray and lightly flour a bundt pan
  • In large bowl empty cake mix
  • Add Preserves to this.
  • Now add milk
  • Pour in oil
  • Add vanilla
  • Add eggs
  • Beat on low speed till blended
  • Now beat on medium speed for about 2 minutes till well mixed
  • pour into prepared pan and bake in preheated 350 oven for 50 to 60 min or until toothpick inserted in cake comes out clean.
  • Remove and allow to cool. Then invert cake pan onto plate and tap gently to release. (i use a very thin rubber spatula to loosen it around edges)
  • For Glaze : In small bowl mix confectioners sugar and milk to desired consistancy
  • Add blueberry juice till desired taste is reached. (you mak have to add a bit more sugar if it thins up too much)
  • Glaze cake and enjoy!! (It really isnt the prettiest cake lol but the taste and smell will oh so make up for that, after all remember the Ugly Duckling ; )

  • Blend together, cake mix, fruit cocktail, eggs, and coconut. Beat 2 minutes. Pour in a greased 13x9x2-inch pan. Top with crumbled brown sugar over cake mix. Bake at 325 for 45 minutes. Remove from oven and poke holes in cake and top with topping.
  • Topping: 1 stick of butter 1/2 c sugar 1 can evaporated milk 1 c coconut Combine all ingredients except coconut and heat until boiling, stirring occasionally. Boil 2 minutes. Remove saucepan from bunner. Stir in remaining 1 cup of coconut. Spoon mixture over done cake. Enjoy!
