TWO-MINUTE COOKIES
My mom used to pack these cookies into our school lunches. They're inexpensive and easy to prepare, so all seven of us children learned to make them. Now they're also a favorite of my two children's.

- In a large saucepan, heat butter, milk and sugar. Bring to a boil, stirring occasionally. Boil for 1 minute. , Remove from the heat. Stir in the oats, cocoa, raisins, nuts or coconut. Drop by tablespoonfuls onto waxed paper. Cool.

I got this recipe from a father of one of my Girl Scouts in Mississippi in 1973. It's a favorite at my house and the Girl Scout is now the mother of my four grandchildren. Enjoy!

Steps:
- Bring margarine, sugar, milk and cocoa to boil. Let boil for exactly 1 minute and 30 seconds.
- Remove from heat, stir in vanilla and peanut butter. Then stir in oats.
- Quickly drop by large tablespoon onto wax paper laid on top of newpaper. Let cool, peel from paper and turn over to finish drying.
- Store in closed container.

I love baking cookies, and this is a recipe I've used for many Christmases over the years. Raspberry jam makes these cookies flavorful and colorful.

- Preheat oven to 350°. Cream butter and sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk together flour, baking powder and salt; gradually beat into creamed mixture. , Divide dough into four portions; shape each into a 12x3/4-in. log. Place 4 in. apart on two greased baking sheets. Make a 1/2-in. depression down center of each log; fill with jam., Bake until lightly browned, 15-20 minutes. Cool 2 minutes. Cut diagonally into 3/4-in. slices. Remove from pans to wire racks to continue cooling.
