This is a very simple cake. I made it for my Dad when he came to visit, and he said it smelled like pancakes. I got this out of the 1953 Better Homes And Gardens New Cookbook.

1/2 cup shortening
1 1/2 cups sugar
1 teaspoon vanilla
2 eggs
2 1/4 cups sifted cake flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 cup milk, plus
2 tablespoons milk

Steps:

  • Stir shortening to soften.
  • Gradually add sugar, and cream together until light and fluffy.
  • Add vanilla.
  • Add eggs, 1 at a time, beating well after each.
  • Sift flour, baking powder, salt together 3 times, add to creamed mixture alternately with milk, a little at a time.
  • Beat after each addition till smooth.
  • Bake in 2 paper-lined 9x1 1/2-inch round pans in moderate overn (375°) about 25 minutes.

1/2 c shortening
1 c sugar
2 eggs
2 1/4 c all purpose flour, sifted
1/2 tsp salt
3 tsp baking powder
3/4 c milk
1 tsp vanilla extract

Steps:

  • 1. Pre-heat oven to 350. Bake about 30 minutes or until tooth pick comes out clean.
  • 2. Cream shortenting (Crisco), sugar and vanilla until light and fluffy. Add eggs and beat thoroughly. Add ingredients ALTERNATLY with milk, mixing after each addition.
  • 3. Bake in prepared (greased and lightly floured) 8" round cake pans.

1 c shortening
1 1/2 c sugar
1 tsp vanilla extract
2 large eggs
2 1/4 c sifted flour
2 1/2 tsp baking powder
1 tsp salt
1 c plus 2 tablespoons of milk

Steps:

  • 1. Stir shortening to soften. Gradually add sugar and mix thoroughly at medium speed.
  • 2. Add vanilla, and then add the eggs one at a time mixing well after each. Sift flour with baking powder and salt.
  • 3. Add to shortening mixture alternately with the milk, mixing after each addition.
  • 4. Bake in 2 paper-lined 9x1 1/2-inch ROUND pie pans at 375 degrees for roughly 23-25 minutes
  • 5. Cool and add any frosting you wish and serve

Momma made great big smiles with this wonderfully moist and delicious cake! I believe it's originally a newspaper clipping, but she's used it for the past 45 years at least. Filled with your favorite fruits and icing, this cake lends itself to any special occassion. I hope you like it as much as I do! Enjoy!!

Number Of Ingredients 8

2 cups sifted cake flour
1/2 cup butter
1 1/3 cups sugar
2 1/2 teaspoons baking powder
2 large eggs
1 teaspoon salt
1 1/2 teaspoons pure vanilla extract
1 cup milk (less 2 tbsp)

Steps:

  • In a large bowl, sift together flour, sugar, salt& baking powder.
  • Set aside.
  • Drop in shortening, add 2/3 of milk, vanilla and mix for 2 minutes on low speed of electric mixer.
  • Add one egg at a time, beating continually, add the rest of milk and mix for 2 additional minutes.
  • Grease and flour two 8" round cake pans, and divide the batter evenly between the two pans.
  • Preheat oven to 375 and bake for 25 minutes or until golden brown in color.
  • Test the center of the cake with a toothpick; if it comes out clean the cake is done!
  • Allow cakes to cool before removing them from the pans.
  • Thoroughly cool before decorating.
  • Note: If you only have all-purpose flour on hand, reduce amount of flour by 2 tbsp.
  • and increase baking powder by 1 tsp.

1/3 cup butter
1 cup sugar
2 eggs, well beaten
1/2 cup milk
1 3/4 cups flour
1/2 tsp salt
1/2 tsp vanilla (generous)
2 tsp baking powder

Steps:

  • Measure all ingredients. Sift flour before measuring. Out of sugar called for in recipe, reserve 1 tablespoon for each egg white used. Have eggs at room temperature. Take butter from refrigerator long enough in advance so that it is easy to work but not melted. Work with wooden spoon until soft and creamy. Add remaining sugar gradually, beating until light. If eggs are to be added whole, beat thoroughly and add reserved sugar. If eggs are to be separated, beat whites until stiff but not dry and beat in sugar reserved for the purpose, and set aside; beat yolks thoroughly with same beater. Add beaten eggs or yolks to butter and sugar mixture. Add dry ingredients and liquid alternately. Beat thoroughly but do not stir. Fold in egg whites, if eggs were separated. Pour into buttered loaf or two 8" layer-cake pans and bake 20 to 30 minutes in moderately hot oven (375 F). *** Blueberry Cake: Reserve 1/4 cup flour. With it, dredge 1/2 cup blueberries and fold into cake last. Bake in sheet or in cup-cake tins. While hot, sprinkle with powdered sugar. Do not frost. Miranda's Spice Cake: Add about 2 tsp cinnamon, 1/2 tsp freshly ground allspice, 1/2 tsp nutmeg, and 1 tsp rum. Sprinkle with powdered sugar before cool.

  • Cream butter, add sugar gradually, mix together until light and fluffy. Then add eggs and vanilla and add dry ingredients alternately with milk, stirring only enough to blend thoroughly. Do not beat. Pour into 9x9 greased pan. Bake at 375 degrees for 20-25 minutes.

2 eggs, separated
1 1/2 C sugar
2 1/2 c sifted cake flour
3 tsp baking powder
1 tsp salt
1/3 c wesson oil
1 c milk
1 1/2 tsp vanilla

  • sift One cup sugar, flour and othe dry ingedients into bowl. add wesson oil, half of milk and vanilla. Beat one minute, medium speed in mixer. Add remaining milk and egg yolks, and beat one more minute. Beat egg shites separately until stiff, adding 1/2 C sugar gardually. fold into egg yolk mixture. Bake at 350 degrees. In two layer pans, bake 30-35 mins. In long oblong pan, bake 40 mins. For cupcakes, bake 18-20 mins at 400 degrees. Makes 24 cupcakes. Always grease pans generously and flour.
